Balinese Lamb Chops image

Number Of Ingredients 10

1 Tbsp peanut oil
12 lamb loin chops trimmed
2 small brown onions sliced thinly
1/2 c peanut butter, crunchy
1/4 c sweet chile sauce
2 Tbsp lemon juice
2/3 c coconut milk, unsweetened
3/4 c water
2 Tbsp fresh coriander (cilantro)
cooked rice

Steps:

  • 1. Heat oil in large frying pan; cook lamb until browned and cooked as desired.
  • 2. Remove lamb from pan; drain excess fat from pan. Add onion to pan; cook stirring until browned.
  • 3. Add peanut butter, chile sauce, lemon juice, and combined coconut milk and water, cook, stirring, until sauce thickens slightly. Return lamb to pan, coat with sauce. Serve sprinkled with coriander.

Oven-Roasted Lamb Chops image

Never having lamb before I didn't "think" I liked lamb. When your MIL is 100% Greek you know you will have to fix it for her son! I asked her to show me one night and wrote it down. These oven lamb chops are so easy and tender, perfect for when you don't have a crowd to feed!

Yield 4

Number Of Ingredients 6

4 (4 ounce) lamb chops
1 tablespoon olive oil, or as needed
1 clove garlic, minced
½ tablespoon crushed fresh rosemary leaves
sea salt and freshly ground black pepper to taste
¼ cup mint jelly

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Cut away excess fat from the lamb chops (some fat does add flavor). Coat each chop lightly in olive oil. Dust lamb chops with garlic, rosemary, salt, and pepper. Place lamb chops in a cast iron skillet.
  • Bake uncovered in the preheated oven until cooked through, 8 to 10 minutes. An instant-read thermometer inserted into the center should read at least 140 degrees F (60 degrees C) for medium-well doneness.
  • Remove from the oven and cover tightly with foil; let rest for 8 to 10 minutes. Serve with mint jelly on the side,

  • Mix spices together in a small bowl. Pour the spice mix onto a plate. Press all meaty surfaces of each lamb chop into the spice mix and lightly brush off the excess with your fingers so only a thin coating remains.
  • Grill the chops for a few minutes per side. Timing depends on the thickness of the chops and your desired degree of doneness. They cook quickly so I suggest flipping them over after 3 minutes and checking them for doneness after another 3 minutes by making a small slice in the thickest part.
