BADEMIYA'S JUSTLY FAMOUS CHILE-CORIANDER CHICKEN



Bademiya's Justly Famous Chile-Coriander Chicken image

Number Of Ingredients 14

4 chicken, whole chicken legs or 1 whole chicken (3 1/2 to 4 pounds), cut into 8 pieces
1 1/2 tablespoons coriander seeds
2 teaspoons peppercorns, whole, black
1 teaspoon cumin seeds
6 cloves garlic, peeled
1 piece ginger, fresh (2 inches), thinly sliced
3 tablespoons vegetable oil
1/4 cup water, or as needed
2 tablespoons lemon juice, fresh
1 tablespoon cayenne pepper or hot paprika, or to taste
1 1/2 teaspoons salt
1/2 cup cilantro, chopped fresh
red onion, thinly sliced, for garnish
limes, or lemons, wedged, for garnish

Steps:

  • 1. Remove and discard the skin from the chicken legs, then rinse under cold running water. Drain and blot dry with paper towels. Place the legs in a baking dish large enough to hold them in one layer and set aside while you prepare the seasoning paste.2. Heat a dry skillet over medium heat and add the coriander seeds, peppercorns, and cumin seeds. Toast the spices until fragrant, 2 to 3 minutes, shaking the skillet occasionally. Let cool, then transfer to a spice mill and grind to a fine powder. Combine the ground spices in a blender or mini chopper with the garlic, ginger, oil, 1/4 cup water, lemon juice, cayenne, and salt. Process to a smooth paste, adding more water if necessary to obtain a pourable consistency. Add the cilantro and process just to mix.3. Using your fingers, spread the seasoning paste over the chicken legs to coat on both sides, then cover and let marinate, in the refrigerator, for 4 to 6 hours.4. Preheat the grill to high.5. When ready to cook, oil the grill grate. Remove the chicken legs from the baking dish and arrange on the hot grate. Grill, turning with tongs, until the juices run clear when the tip of the skewer or sharp knife is inserted in the thickest part of a thigh, 6 to 10 minutes per side (12 to 20 minutes in all).6. Transfer the chicken legs to serving plates or a platter and serve immediately garnished with sliced red onion and lime or lemon wedges.Serves 4

FOR THE CHICKEN AND MARINADE:
3 cups plain yogurt, whole-milk
6 cloves garlic, minced
2 tablespoons ginger, fresh, grated
1 onion, small, minced
3 tablespoons lemon juice, fresh
1/2 to 1 tablespoon cayenne pepper
2 teaspoons salt
1 teaspoon black pepper, freshly ground
1 teaspoon cumin seeds, toasted
6 chicken legs (2 to 2 1/2 pounds total) cut into drumsticks and thigh sections
FOR THE GARNISH:
red onion, sliced
tomato, sliced
cucumber, sliced
radish, sliced
lemon wedges

Steps:

  • 1. Set a yogurt strainer, or regular strainer lined with a double layer of dampened cheesecloth, over a bowl. Add the yogurt to the strainer and let drain, in the refrigerator, for 4 to 6 hours.2. Remove the drained yogurt from the refrigerator (it will be quite thick) and discard the liquid. Transfer the yogurt to a large nonreactive bowl. Add the garlic, ginger, onion, lemon juice, cayenne, salt, black pepper, and cumin seeds and whisk to blend. Set aside while you prepare the chicken.3. Remove and discard the skin from the chicken pieces, then rinse the pieces under cold running water. Drain and blot dry with paper towels. Make 2 or 3 deep slashes, to the bone, in each piece. Add the chicken to the marinade in the bowl and turn the pieces to coat. Cover and let marinate, in the refrigerator, for 4 to 6 hours.4. Preheat the grill to high (see Note).5. When ready to grill, oil the grill grate. Remove the chicken from the marinade and arrange on the hot grate. Grill, turning with tongs, until nicely browned on the outside and the juices run clear when the tip of a skewer or sharp knife is inserted in the thickest part of a drumstick or thigh, 8 to 10 minutes per side (16 to 20 minutes in all).6. Transfer the chicken to serving plates or a platter and serve immediately, garnished with onion, tomato, cucumber, and radish slices and lemon wedges.Serves 6Note: For best results, use charcoal.

2 tablespoons vegetable oil
2 cloves garlic, minced

1/2 teaspoon black pepper, freshly ground
1 chicken (3 1/2 to 4 pounds), quartered, or 4 bone-in chicken breast havles with skin
FOR THE SAUCE:
2 tablespoons vegetable oil
2 shallots, minced
2 cloves garlic, minced
1 to 2 hot chilies, fresh, minced (for a milder sauce, seed the chiles)
1 tablespoon ginger, minced fresh
1/2 teaspoon turmeric, ground
5 macadamia nuts, coarsely chopped
1 apple, large Granny Smith, peeled, cored, and finely chopped
1 cup chicken broth, homemade or canned low-sodium
2 teaspoons asain fish sauce, or soy sauce, or to taste
1 teaspoon lime juice, fresh, or more to taste
salt and freshly ground black pepper, to taste

Steps:

  • 1. Combine the Tamarind Water, oil, garlic, salt, and pepper in a large nonreactive bowl and whisk to mix. Rinse the chicken pieces under cold running water, then drain and blot dry with paper towels. Add the pieces to the mixture in the bowl and turn to coat. Cover and let marinate, in the refrigerator, for 4 to 12 hours (the longer the better).2. Preheat the grill, using the two-tiered method.3. Meanwhile, prepare the sauce. Heat the oil in a medium-size nonreactive saucepan over medium heat. Add the shallots, garlic, chile, and ginger and sauté until lightly browned, about 4 minutes. Stir in the turmeric, macadamia nuts, and apple and sauté until the apple is soft, 3 to 5 minutes. Add the broth, 2 teaspoons fish sauce, and the teaspoon of lime juice and bring to a boil. Boil, uncovered, for 3 minutes, stirring occasionally. Remove from the heat and transfer the mixture to a blender. Process to a smooth purée, then return to the pan and simmer, uncovered, over low heat until thick and richly flavored, 3 to 5 minutes longer. Remove from the heat and taste for seasoning, adding fish sauce, lime juice, and salt and pepper as necessary the sauce should be highly seasoned. Keep warm, covered (see Note).4. When ready to cook, oil the grill grate. Remove the chicken pieces from the marinade discard the marinade. Arrange the pieces, skin side down, on the grate over the hotter section of the grill and cook for 3 to 5 minutes.5. Transfer the chicken pieces to serving plates or a platter and spoon the sauce on top, to serve.Serves 4Note: The sauce can be prepared up to 48 hours ahead of time. Refrigerate, covered, and reheat before serving.

  • Combine garlic, chilies, shallots, lemongrass, turmeric, soy sauce, the juice of two limes, kaffir lime leaves only if using fresh (if using dry add to chicken, whole as part of the marinade, as you see above) and1/2 cup of coconut (or vegetable) oil in robot coupe. Pulse until chunks are broken down somewhat and then blend until a smooth paste is formed (about 3 minutes). Add salt, blend to combine.
  • Reserve two tablespoons of curry paste for sauce and refrigerate separately. Rub chicken with remaining paste, cover and refrigerate. Marinade for a minimum of 4 hours, preferably overnight.
  • Preheat oven to 450°F (230°C). Prep pan with a light coat of coconut or vegetable oil, remove chicken from fridge, plaster as much of the marinade on the bird as you can. Roast at 450°F (230°C) for 25 minutes. Reduce heat to 375°F (190°C), cut remaining limes in half and add to pan, flesh down and roast for another 30 minutes.
  • Coconut Curry Sauce: Combine remaining curry paste with coconut milk. Remove dish from the oven, remove both chicken and limes from pan and reserve, warm. Drain pan of excess oil. Mix coconut-curry mixture with the drippings in the bottom of the pan. Return chicken to the pan and return to the oven to finish. Cook until juices of the thigh run clear (approximately 20 minutes) or or until internal temperature reaches 170°F (77°C)
