Number Of Ingredients 6

1 vanilla bean
1/4 cup plus 2 tablespoons sugar
3/4 cup water
3 firm Bartlett pears
2 tablespoons butter
2 dried black mission figs

Steps:

  • Heat oven to 400 degrees. Split vanilla bean lengthwise and set one half aside. Scrape seeds from other half into a small saucepan, and add the pod, 1/4 cup sugar, and the water. Bring to a boil, then simmer 10 minutes to infuse vanilla flavor into syrup. Strain and set aside.
  • Peel pears, and cut in half lengthwise, leaving stems on. Cut out core, scooping out a little extra flesh. Trim off a little flesh on round side so that halves will lie nicely on a plate.
  • In a large saute pan over medium heat, melt butter. Add remaining 2 tablespoons sugar, and stir until melted. Add pears, cut side down, and cook until brown, shaking pan occasionally. Turn over and cook a few minutes more. Transfer to a baking dish, and pour vanilla syrup over pears. Add other half of vanilla bean. Slice figs lengthwise and put 1 or 2 slices in center of each pear. Spoon a little syrup over figs and bake until soft and tender, about 30 minutes, depending on ripeness of pears. Serve hot or warm.

Categories     dessert

Time 55m

Yield 6 servings

Number Of Ingredients 5

1/3 cup apple juice
1/3 cup firmly packed dark brown sugar
3 tablespoons unsalted butter
3 firm Bosc pears, peeled, halved, cored (about 1 pound)
Vanilla ice cream, for serving

Steps:

  • Preheat the oven to 400 degrees F.
  • Arrange the pears cut side up in an 8-inch square glass baking dish. Whisk the apple juice and sugar in a small heavy saucepan over medium-high heat until the sugar dissolves. Whisk in the butter. Pour the sauce over the pears. Bake until the pears are crisp-tender and beginning to brown, basting occasionally with the juices, about 35 minutes.
  • Spoon the pears onto plates. Top with ice cream. Drizzle with any juices and serve.
  • The pears can also be served frozen. To do so, cool the pears, then place them in the freezer until frozen solid, about 8 hours.

1/4 teaspoon ground allspice
Accompaniment: sour cream

BAKED PEARS WITH BROWN SUGAR AND BUTTER

Baked Pears with Brown Sugar and Butter image

The easiest baked pears recipe that makes the most delicious pears that you can drizzle with the caramel that's made from pear juices and sugar and serve them with ice cream, yogurt or oatmeal.

Provided by Marina | Let the Baking Begin

Categories     Dessert

Time 1h30m

Number Of Ingredients 8

4 medium or large pears (Bosc, Anjou or any other firmer variety suited for baking)
1/4 cup light brown sugar
1/4 teaspoon cinnamon ((optional))
1/8 teaspoon nutmeg ((optional))
1/2 lemon, juice only
2 teaspoons unsalted butter, (cut into 1/4" cubes)
1/8 teaspoon kosher salt
1/2 teaspoon vanilla extract

Steps:

  • Prep: Preheat oven to 400F. Line a 10"x7" or a 9"x9" baking dish with parchment paper if you prefer easier cleanup, or spray it with nonstick spray. If doubling the recipe use a 9"x13" baking dish or any other rimmed baking dish that will fit pears snugly to each other (see Note 1 at the bottom).
  • Peel & Core: If using a firm pear variety like Bosc, peel them. Remove the core with a melon baller or a small spoon. Leave the stems on for better visual appeal. If you're using softer pears like Anjou, keep the skin on to help them keep the shape as they bake.
  • Add toppings: Set the pears cut side up inside the pan. Drizzle with lemon juice to prevent browning. Sprinkle with brown sugar mixed with nutmeg and cinnamon (if using). Arrange the cubed pieces of butter on top of the pears. Drizzle with vanilla extract.
  • Bake for 30 minutes cut side up. Turn the pears cut side down. Spoon the caramel over the tops to prevent browning. Bake for another 20-50 minutes or until the pears are soft, and the caramel is thickened. The pears will shrink consierably if baked until the caramel is very thick.Bosc pears will take the longest to achieve the candied translucent look and caramelized taste. Other more delicate pear varieties will take less time to soften (Note 2 & 3).
  • Serve warm with vanilla ice cream, yogurt, sour cream, or a sprinkle of roasted walnuts or sliced almonds. Spoon the caramel over the pears.

  • Halve the pears and scoop out the seeds (a melon baller works great for this). Cut off a tiny bit off the bottom of each pear so that they sit flat. Place the pears cut side up in a baking dish (I use a 9x13).
  • In a small bowl stir together butter, honey and vanilla. If necessary you can heat the honey for a few seconds in the microwave to make it easier to stir.
  • Spoon the honey butter over the pears. Pour apple juice into the bottom of the baking dish (there should be a thin layer of juice at the bottom, add a little more juice or water, if needed). Cover the dish with foil and bake for 20 minutes. Remove the foil and carefully spoon some of the juices from the bottom of the pan over the pears. Continue cooking, uncovered, until the pears are tender, about 10 more minutes.

  • Halve pears and remove and core with a small spoon or measuring spoon. Leave stem on for a more elegant presentation (optional). Place cut-side up in your baking dish.
  • Top evenly with oil, coconut sugar, maple syrup, cinnamon, nutmeg, ginger, apple cider vinegar, and lemon juice.
  • Flip pears cut-side down and bake for 20-30 minutes (uncovered) or until tender (a knife inserted should easily slide out – bake longer as needed for larger / firmer pears). Then carefully remove from oven, flip cut-side up, and bake for an additional 5 minutes to slightly caramelized the tops.
