- Preheat oven to 350f (180c). Cut one end off and use a melon baller to scoop out the flesh of the squash. If you don't have a melon baller, use a teaspoon to gently remove the flesh. In a small bowl mix the remaining ingredients. To make it easier to stuff, shape some of the meat into a long cylinder about the length of the squash, and feed it into the hollowed out area. Gently push with your fingers so that the meat fills up the space. Grab an oven-proof dish and pour a bit of the juice from the canned tomatoes - just enough to cover. Place stuffed squash on top of juice. Take 1 or 2 plum tomatoes and tear apart over the top of the summer squash. Cover and bake 45 minutes. Remove from oven and uncover. Add a sprinkling of grated Parmesan cheese. The Culinary Chase's Note: If you have any sausage meat leftover, break into chunks and pan fry in olive oil until cooked. Then add melon ball scoops of the squash with a sprinkle of chili flakes. Cook until slightly soft and tear apart 4 or 5 plum tomatoes over the mixture, stir. Season and allow to simmer 10 to 15 minutes or when the sauce thickens a bit. Serve this with a slice or two of country bread to mop up the juices. Enjoy!

- Pre-heat oven to 400 degrees.
- Cut yellow squash in half lengthwise.
- With a spoon, scrape flesh and seeds of squash into a large bowl, making boats.
- In a pan sauté onion and garlic over medium heat with a dash of olive oil.
- Add the squash that was removed from the boats and season with kosher salt and pepper.
- Cook until almost soft (around 7 minutes).
- When squash is almost soft, remove from heat and mix in bowl with 1 egg, breadcrumbs, herbs and parmesan cheese.
- Scoop stuffing mixture into boats and fill evenly.
- Sprinkle the top of the stuffed boats with extra parmesan cheese.
- Cook in pre-heated oven (400 degrees) until boats are crisp tender and golden brown on top (around 10 minutes).

- Boil or steam until tender.
- Drain, then mash the squash.
- Preheat oven to 375º.

- Fill a bowl with ice water. Bring a pot of salted water to a boil. Cut squash and zucchini in half lengthwise; place in boiling water. Bring back to a boil; cook until slightly softened, 5 minutes. Transfer squash to ice water. Cool for 2 minutes. Remove; pat dry.
- Scrape out seeds and stringy pulp from each squash half, leaving a large cavity for stuffing. Arrange snugly in a large, lightly oiled ovenproof baking dish.
- Warm 1 Tbsp. oil in a large skillet over medium-high heat. Add onions and cook, stirring often, until softened, about 3 minutes. Add turkey and cook, stirring to break up until crumbly, 2 to 3 minutes. Stir in tomatoes, broth and thyme. Increase heat to high and cook, stirring often, until turkey is thoroughly cooked and some of liquid has evaporated, 5 to 7 minutes. Season with salt and pepper.
- Preheat oven to 425°F. Place equal amounts of filling in each squash half, piling it high in center. Mix bread crumbs with Parmesan, then sprinkle mixture over squash and drizzle with 2 Tbsp. olive oil. Bake until golden brown on top, about 20 minutes.
