SAUSAGE DIP
I love dips and quesos so I combined all of my favorite recipes into one and this is what I came up with!

- Preheat the oven to 350 degrees F (175 degrees C).
- Combine Cheddar cheese, sour cream, tomatoes, mayonnaise, and jalapeno peppers in a medium bowl and mix until well blended. Pour into an 8x8-inch baking dish.
- Bake in the preheated oven until melted, about 30 minutes.
- Meanwhile, cook and stir sausage in a hot skillet until browned and crumbly, 5 to 7 minutes. Drain excess grease.
- Mix cooked sausage, lime juice, and taco seasoning into the hot cheese mixture. Serve immediately or keep warm in a small slow cooker.

- Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch casserole dish with cooking spray.
- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Stir bell pepper and taco seasoning into ground beef. Spread ground beef mixture into prepared casserole dish.
- Sprinkle tomato and green onions over ground beef mixture; top with taco sauce. Spread sour cream over taco sauce layer and top with Cheddar cheese.
- Bake in the preheated oven until cheese is melted and bubbling, 10 to 20 minutes. Serve with tortilla chips.

- Spread cream cheese in an even layer in the bottom of an 8x8-inch baking dish.

- Preheat the oven to 425 degrees F (220 degrees C).
- Place sausages in a dry pan over medium heat until they start to sizzle. Use a spoon or flat wooden spatula to break them up as they cook. Continue to cook until browned and crumbly, 10 to 12 minutes. Remove from the heat. Drain grease if desired.
- Combine cream cheese, sour cream, 4 ounces grated Cheddar, thawed corn, cooked sausage, fire-roasted tomatoes with chiles, Hatch chiles, jalapeño peppers, green onions, salt, pepper, and cayenne in a large bowl; mix until thoroughly combined. - First, you want to cook the onion and the beef. Heat the olive oil in a skillet over medium heat. Once hot, add the onion saute for 2 minutes, then add the ground beef and half of the taco seasoning. (Save the rest of the taco seasoning, you will need it). Stir the meat to break it up and to evenly distribute the taco seasoning. Once the beef has browned, set it aside.
- Pour the refried beans into an 8 inch square baking dish (or similar). Spread into an even layer.
- In a small bowl, mix the cream cheese and the remaining taco seasoning together. Then spread over the refried beans.
