1 pound salmon, cooked and flaked
2 large carrots, peeled, diced and roasted until golden brown
1/2 cup ground matzoh meal (or grind your own matzoh)
1/4 cup chopped parsley or dill
2 tbsp mustard (use your favorite: grainy, spicy, honey, etc.)*
2 eggs
1/2 cup diced onion
2 garlic cloves, minced
Salt and pepper to taste
Olive oil for brushing baking sheet and croquettes
Red pepper flakes (optional)

Steps:

  • 1. Preheat oven to 425 degrees and place baking sheet inside to pre-heat with the oven 2. Sauté onions and garlic over medium heat until translucent and cooked through 3. In a large bowl mix to combine salmon, roasted carrots, egg, matzoh meal, herbs, onion and garlic mixture, and mustard 4. Sprinkle with a pinch of salt and pepper 5. Remove baking sheet from oven and grease with olive oil 6. Form salmon mixture into small patties or croquette shapes and place on greased baking sheet 7. Brush croquettes with olive oil 8. Bake for 4-6 minutes or until a brown crust forms on one side, flip and cook another 2 minutes 9. Serve with a dollop of horseradish, just like traditional gefilte fish This recipe can also be made by pan-frying the croquettes. But roasting is faster with less hands-on time. And we all need time savers during the holidays! *For Passover you can use the kosher for Passover mustard or leave it out.

2 ½ cups flaked salmon (or 14.75 ounce can pink salmon, bones removed)
1 large egg (whisked)
1 clove garlic (minced)
1 cup panko bread crumbs
2 tablespoons fresh chives (minced)
2 tablespoons red bell pepper (minced)
2 tablespoons mayonnaise
1 tablespoon fresh parsley (minced)
1 tablespoon creamy Dijon mustard
1 tablespoon fresh lemon juice
2 teaspoons fresh lemon zest
¼ teaspoon kosher salt
¼ teaspoon black pepper
3 tablespoons olive oil (divided)

Steps:

  • Preheat oven to 425°F and line a pan with parchment paper.
  • In a large bowl add all ingredients, reserving 2 tablespoons of olive oil.
  • Mix to combine and form into 9 patties. I use a slightly heaping ¼ cup measuring cup to form the patties. Press them well (but gently) so they do not fall apart.
  • Bake salmon croquettes for 13-15 minutes or until browned.

SALMON
1 can salmon, drained
1 onion, diced
2 eggs
2 tablespoons mayonnaise
1 tablespoon chopped parsley
2 medium potatoes, cooked and mashed
1 tablespoon water
2 cups dried breadcrumbs
1 tablespoon grated Parmesan cheese
QUICK TOMATO SAUCE
4 tablespoons tomato sauce
1 onion, diced
1/2 chicken stock cube
1 tablespoon water

Steps:

  • Remove the bones from the salmon and flake into a bowl. Mix in onion, 1 egg, beaten, mayonnaise, parsley and the mashed potatoes. Take spoonfuls and mold into croquette shapes (oval). Refrigerate for 1 hour. Mix the other egg with water and, in another bowl mix the breadcrumbs with the cheese. Dip croquettes into the egg and water mix then toss into breadcrumb mixture. Refrigerate a further hour. Arrange croquettes in a greased baking dish and bake at 375 degrees F for 15-20 minutes. Mix the sauce ingredients together in a pan and bring to the boil. Stir well and pour into a sauce boat.

¼ cup finely chopped celery
¼ cup sliced green onion
1 tablespoon chopped fresh dill weed
½ teaspoon garlic powder
⅓ cup wheat germ
3 tablespoons olive oil

Steps:

  • In a medium bowl, mix together the salmon, egg, celery, green onion, dill, and garlic powder. Form the mixture into golf ball sized balls, and roll in wheat germ to coat.
  • Heat oil in a large skillet over medium heat. Flatten the balls slightly, and fry for about 10 minutes, turning as needed, until golden brown.

1 cup cornmeal
Nonstick cooking spray

Steps:

  • Preheat the oven to 350 degrees F.
  • Mix all of the ingredients, except cornmeal, in a large bowl. Using your hands, form the salmon mixture into small balls, and then roll the balls in cornmeal. Spray a cookie sheet with nonstick spray, arrange the balls on the cookie sheet, and flatten each ball on the surface.
  • Bake for 25 minutes or until browned. Serve hot.

1 (16 ounce) can salmon, drained and bones removed
2 cups cornflake crumbs, or more as needed
1 tablespoon lemon juice

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Melt butter in a saucepan over medium heat. Add minced onion; cook and stir until translucent, 3 to 5 minutes. Stir in flour and salt until combined. Add milk and stir until mixture is thickened, 2 to 3 minutes.
  • Remove saucepan from heat. Add salmon, 1 cup cornflake crumbs, and lemon juice. Stir until evenly mixed. Form mixture into crescents, pyramids, or any other shape you like. Roll patties in the remaining cornflake crumbs to coat. Transfer onto baking sheets.
  • Bake in the preheated oven until golden brown, 20 to 25 minutes.

1/4 cup minced fresh cilantro

4 large eggs
1 large cups seasoned bread crumbs
1/2 large onion, chopped
1 teaspoon lemon juice
pepper & season salt (optional)

Steps:

  • Pre-heat oven to 350'. Drain juice out of canned salmon. Make sure all off the bones are removed. Go ahead & crumble the salmon up. Add eggs, bread crumbs, onions * lemon juice. Add seasoning to taste. I like to use pepper & season salt. I sometimes use garlic salt & garlic pepper since I love garlic so much. Then just make your patties & place on pan. Place in oven for about 45 minute or until golden brown. Enjoy.
  • Note: You can flip salmon patties to brown on both sides.
