BAKED POTATOES WITH ONION SOUR CREAM
These hearty baked potatoes are the perfect accompaniment to Marinated Flank Steak.

Steps:
- Preheat oven to 400 degrees. Prick potatoes in several places with a fork. Place on a baking sheet, and bake until easily pierced with the tip of a knife, 50 to 60 minutes.
- Meanwhile, make onion sour cream: In a 10-inch skillet, heat oil over medium-low heat. Add onion and cook, stirring occasionally, until translucent, 8 to 10 minutes. Transfer to a medium bowl; cool to room temperature.
- Add sour cream to onion; mix to combine. Season with salt and pepper.
- Cut a deep cross in the top of each potato; push ends together to open. Season with salt and pepper. Spoon some onion sour cream over each potato, and sprinkle with chives. Serve.
TRIPLE-ONION BAKED POTATOES

- Bake potatoes at 400° for 1 hour or until tender. Meanwhile, in a large skillet, cook the bacon over medium heat until crisp; remove to paper towels. Drain, reserving 1 tablespoon drippings. In the drippings, saute red and yellow onions until tender; set aside. , When potatoes are cool enough to handle, cut in half lengthwise. Scoop out pulp, leaving an 1/8-in. shell. In a bowl, beat the pulp, sour cream and milk until creamy. Stir in sauteed onions, American cheese and 1 cup of bacon. Spoon into potato shells., Place on a baking sheet. Bake at 400° for 25 minutes. Sprinkle with cheddar cheese, green onions and remaining bacon. Bake 5-10 minutes longer or until cheese is melted.

BAKED POTATOES WITH ROASTED ONIONS AND SOUR CREAM
I don't know what it is about these potatoes, from the cookbook Second Helpings from Union Square Cafe, that is so good. Roasting them in sea salt in a cast iron skillet just does....something. I love preparing this recipe; it's almost like a ritual! :) Preparation and cooking times are close guesstimates. I hope you enjoy these as much as I do!

- Preheat oven to 400 degrees Farenheit.
- Place the salt in an even layer over the bottom of a 12-inch cast-iron skillet.
- Pour the olive oil into a medium bowl.
- Dip onion in oil to coat all over.
- Place onion on salt in the center of the skillet, and roast in oven for 10 minutes.
- Coat the potatoes with the remaining oil and set them around the onion in the skillet.
- Roast until the onion is tender and potatoes are cooked through, about an hour and 10 minutes.
- Using tongs or a kitchen spoon, transfer the onion to a cutting board.
- Measure 1/4 teaspoon of salt from the skillet and set aside.
- Turn off the oven, and return the skillet with the potatoes to the oven, leaving door slightly ajar.
- Peel and coursely chop the onion.
- Transfer to a small bowl and season with the reserved salt.
- Place the potatoes on a serving platter, split and open each.
- Spoon one-quarter of the salted onion into each potato.
- Top with sour cream, serve hot.

This makes a savory, fluffy potato that a great side for beef. My family loves with grilled steak or chicken. I make them ahead and warm them on the grill.

- Preheat oven to 350 degrees. Scrub potatoes, prick all over with fork and place directly on oven rack in center of oven. Bake until tender, about 1 hour and 10 minutes. Cool potatoes for 15 minutes.
- Slice small portion of skin off one side of potatoes and carefully scoop out flesh. Side potato shells aside. Transfer flesh to mixing bowl. Rice or mash potato flesh.
- Add sour cream and whipping cream and stir util incorporated into potatoes. Add butter and blend well. Add salt, pepper and green onions and stir. Adjust seasoning as necessary.
- Spoon potato mixture into reserved potato shells. Top each with a few bits of butter. Can be made ahead and refrigerated. Allow to come to room temperature before baking.
- Heat oven to 400 degrees. Place potatoes on baking sheet. Bake until heated through and beginning to brown on top, about 30 minutes. Can also place on grill, over indirect heat, for 20-30 minutes or until heated through.

Try to make sure you don't use onions smaller than 3 1/2 inches, or else when you cut off the stems and remove the skin the onion is apt to fall apart on you, would still taste great, but the general appearance wouldn't be the same

- Preheat oven to 375'. Place unpeeled onions in a foil lined shallow pan. Bake uncovered for 1 1/2 hours. Meanwhile just before onions are done, combine remaining ingredients except parsley in a small saucepan. Heat on low, stirring occasionally-do not boil. Remove and keep warm. When onions are tender remove from oven. Spear each with a fork and place on a cutting board. Remove foil from pan. Carefully cut off both ends and remove skin. Place back into the baking pan.
