HOW TO MAKE THE BEST BAKED OATMEAL
Warm from the oven, this mildly sweet baked delight will be sure to satisfy your morning cravings.

Steps:
- Preheat oven to 350°F. Grease a 10-inch pan with butter or coat with cooking spray. Combine the oats, brown sugar, baking powder, salt, and cinnamon in a large mixing bowl. Stir to combine. Add the oil, eggs, and milk and stir to combine. Add the craisins and stir once more.
- Scoop the oat mixture into the greased pan and bake for 30 minutes. The oatmeal should be lightly browned, slightly crisp on top and around the edges. A knife inserted will come out mostly clean with wet crumbs. Remove from the oven and let cool for 10 minutes before serving. Slice into servings or scoop servings with a spoon. Enjoy!

- Preheat the oven to 350 degrees F. Grease a 9-by-12-inch baking pan with butter.
- Combine the oats and sugar in a medium bowl, then pour in the milk.
- Add the vanilla seeds, cinnamon, nutmeg, salt and baking powder.
- Next comes the melted butter and the egg.
- Then just stir it all together into a big delicious oaty mess of wonder.
- Plop the mixture into the prepared pan and spread it out.
- Bake for 30 minutes, until set.
- Cut into squares while still warm. Serve with cream, brown sugar and berries.

- Butter 1 1/2 quart casserole.
- In medium saucepan, bring water to boiling.
- Slowly stir in oats.
- Return to boiling; reduce heat.
- Simmer, uncovered, 2 to 3 minutes for quick cooking oats or 5 to 7 minutes for regular oats, or until most water is absorbed and the oats are tender, stirring occasionally.
- In a small bowl, whisk milk and eggs.
- In another small bowl, combine brown sugar, baking powder, cinnamon and 1/4 tsp salt; stir into oatmeal.
- Fold egg mixture into oatmeal mixture.
- Pour oatmeal mixture into prepared casserole.
- Bake, uncovered, in 350 degree oven 30 to 40 minutes, or until center is just set and sugar crust forms on top.
- Cool 30 minutes.
- Serve warm with fresh fruit, if you like.

- Adjust the oven rack to the lower third position and preheat the oven to 350°F (177°C). Spray a 9×9 inch or 11×7 inch baking pan with nonstick spray. Any similar size or shape pan works, though 8×8 inch would be too small. See recipe note for 9×13 inch pan.
- Whisk all of the ingredients together in 1 large bowl. Pour into prepared baking pan. Top with nuts, if desired. (Or stir into the oatmeal.) Bake for 35 minutes or until the center appears *almost* set, which gives us a soft oatmeal as pictured above. For drier and more solid baked oatmeal, bake until center has set.
- Cool for 5 minutes before serving. Spoon or slice and serve with yogurt, if desired. Cover leftovers tightly and refrigerate for up to 1 week.
