Like baking any fruit, the trick is to balance a little bit of sweetness with lots of flavour. This recipe uses thyme to do that, so there's another element to the dessert. You can also serve it with something that will add another flavour dimension, like Greek yoghurt or crème fraîche.

3 semi-ripe nectarines
1/2 tbsp brown sugar
a few sprigs of thyme
Greek yoghurt to serve

Steps:

  • Heat the oven to 175C.
  • Slice your nectarines in half and take out the stones.
  • Lay them out in a dish and scatter with the brown sugar. Take some of the leaves off the thyme and scatter across the peaches, lay the rest of the stalks on top.
  • Bake for 20-25 minutes, until golden brown and caramelised.
  • Take off the thyme stalks and serve immediately with Greek yoghurt.

4 nectarines, pitted and cut into 8ths
4 tablespoon honey, plus more for drizzling
1 cup Greek yogurt

Steps:

  • Preheat oven to 375 degrees F.
  • Core the nectarines and cut into 8ths. Take 4 (12-inch) pieces of foil and divide the nectarines in the middle of each foil sheet. Drizzle the nectarines with the honey and fold foil over creating a packet. Place packets on a baking sheet and in the oven for 10 minutes. Once nectarines are soft remove the nectarines from the packet. Serve on a 4 plates and top with 1/4 cup Greek yogurt. Drizzle with honey and serve.

125ml white wine
2 tbsp clear honey
4 ripe yellow-fleshed nectarines
100g crunchy amaretti biscuits
1 large egg yolk
1 tbsp toasted flaked almonds
1 tbsp golden caster sugar
1 tbsp butter
1 vanilla pod , split and seeds loosened
175g raspberries
clotted cream or thick Jersey cream, to serve

Steps:

  • Mix the wine and honey, and stir to dissolve. Halve and stone the nectarines, and place them, flesh-side up, in a medium ceramic baking dish. Crush the biscuits well, then add the yolk, 2 tbsp of the wine mixture and the flaked almonds. Mix together, then spoon into the nectarines where the stones were. Use all of the mixture.
  • Scatter the sugar over the nectarines, then top each mound of biscuit mixture with a little knob of butter. Pour the remaining wine and honey around - but not over - the fruit, add 1 tbsp water, then tuck in the vanilla pod. Can now be chilled for up to 4 hrs.
  • Heat oven to 180C/160C fan/gas 4. Bake the nectarines for 30 mins until the fruit is soft and the biscuit filling is crisp and golden. Carefully stir the raspberries through the pan juices, then leave to cool for 15 mins before serving with cream.

4 tablespoons shelled pistachios
2 tablespoons unsalted butter
1/2 cup confectioners' sugar
2 drops (less than 1/8 teaspoon) almond extract (optional)
1/8 teaspoon salt
2 nectarines, halved and pitted
1/2 lemon
1/2 cup creme fraiche
1 tablespoon granulated sugar

Steps:

  • Preheat oven to 400 degrees. Chop 3 tablespoons pistachios in a food processor until finely ground. Add butter, confectioners' sugar, almond extract, and salt. Process until combined.
  • Place nectarines, cut side up, on a baking sheet, and squeeze lemon over top. Place a generous tablespoon of pistachio mixture on each nectarine half. Chop remaining tablespoon pistachios, and sprinkle on top. Bake until fruit is tender and topping is crisp, 10 to 15 minutes. Let cool for 5 minutes. Transfer to 4 plates.
  • Whisk together creme fraiche and granulated sugar. Spoon over nectarines, and serve.

9 nectarines

2 ounces brown sugar
8 ounces raspberries
1 ounce sliced almonds

Steps:

  • Pree heat oven to 400°F.
  • Cut nectarines in half and remove pit.

1 lb nectarine
1/2 cup light brown sugar, packed
2 teaspoons cinnamon
4 tablespoons butter
1 cup honey graham crackers, crushed (if you use cinnamon graham crackers, just leave out the cinnamon)
3 cups vanilla ice cream

Steps:

  • Cut up nectarines into bite sized pieces. (Figure about 1-1/2 nectarines per person.).
  • Place in bottom of baking dish.
  • Sprinkle with brown sugar (I usually use no more than a tablespoon per nectarine) and cinnamon (as much as you want).
  • Then crush graham crackers over the top, about one whole graham cracker per nectarine.
  • Then, randomly place small pads of butter over the top -- you don't need much, but it keeps the top moist.
  • Then, bake at 400 for 15 minutes or until desired softness.
  • Let it cool for a little bit, then scoop over ice cream.
  • You can use peaches instead of nectarines if you can't find them, but I have found that nectarines turn out sweeter and juicier.

Create a delicious Italian-style topping for peaches and nectarines for a simple summer dessert

6 nectarines , halved, stones removed
100g amaretti biscuits
100g butter , softened
85g ground almonds
85g golden caster sugar
1 egg
1-2 tbsp toasted, flaked almonds
250ml marsala
Greek yogurt or crème fraîche , to serve

Steps:

  • Heat oven to 180C/160C fan/gas 4. Sit the nectarine halves snugly in a baking dish, cut-side up. Put the amaretti biscuits into a large bowl and use the end of a rolling pin to bash into crumbs. Add the softened butter, ground almonds, caster sugar and egg, and stir together.
  • Push spoonfuls of the mixture into the cavities of the nectarines, piling more on top until the mixture is evenly divided among them. Scatter with almonds, then carefully pour the Marsala into the dish through a gap between the fruit so the topping doesn't get soggy. Bake for 40-50 mins until golden and crisp, and the fruit is soft. Eat warm with the juices spooned over, and a dollop of Greek yogurt or crème fraîche alongside.

1-1/3 cups mayonnaise
1/2 cup shredded Parmesan cheese
2 tablespoons lemon juice
1 teaspoon salt
1 teaspoon onion powder
4 cups cubed cooked chicken
8 celery ribs, thinly sliced
4 medium nectarines, coarsely chopped
8 green onions, sliced
2 cans (3 ounces each) crispy chow mein noodles

Steps:

  • Preheat oven to 375°. In a small bowl, mix the first 5 ingredients. In a large bowl, combine chicken, celery, nectarines and onions. Add mayonnaise mixture; toss gently to coat., Transfer to a greased 13x9-in. baking dish. Sprinkle with noodles. Bake, uncovered, until heated through, 20-25 minutes.
