CHEESY MUSHROOM CRESCENT PUFFS

Steps:
- Heat oven to 375°F. Line two 15x10x1-inch pans with cooking parchment paper; spray with cooking spray.
- Spray 10-inch skillet with cooking spray. Add mushrooms; cook over medium-high heat 5 to 7 minutes, stirring occasionally, until tender and most of moisture is released. Stir in thyme and salt. Remove from heat. Cool 5 minutes.
- In large bowl, stir mushrooms and cheese until well blended.
- Unroll dough on work surface. If using crescent roll dough, firmly press perforations to seal. Sprinkle each side with 1 1/2 teaspoons flour. With pizza cutter or sharp knife, cut dough into about 1/4-inch pieces. Mix dough pieces into mushroom mixture in small amounts until well blended.
- Shape mushroom mixture into 32 (1 1/4-inch) balls. Place in pan. Bake 16 to 18 minutes or until golden brown.

- In a blender, combine the cream cheese, mushrooms, onion and hot pepper sauce; cover and process until blended. Unroll crescent dough; separate into four rectangles. Press perforations to seal. Spread mushroom mixture over dough. , Roll up jelly-roll style, starting with a long side. Cut each roll into five slices; place on an ungreased baking sheet. Bake at 425° for 8-10 minutes or until puffed and golden brown.

- Preheat oven to 400°. For filling, in a large skillet, heat butter over medium heat. Add mushrooms and onion; cook and stir until tender, 3-5 minutes. Add garlic and pepper; cook 1 minute longer. Stir in cream cheese until melted; remove from heat., Unfold one pastry sheet; cut into 9 squares. Cut each square diagonally in half. Place a scant teaspoon of filling on one half of each triangle. Brush edges of pastry with water; fold over to form a triangle. Seal edges with a fork; place 1 in. apart on parchment-lined baking sheets. Repeat with second pastry sheet and remaining filling., Bake until golden brown, 12-15 minutes. Remove from pans to wire racks. Serve warm. Freeze option: Cover and freeze unbaked triangles on parchment-lined baking sheets until firm. Transfer to a freezer conatiner; return to freezer. To use, bake as directed.

CHEESE PUFFS (GOUGERES)

- Preheat the oven to 425 degrees F. Line 2 baking sheets with parchment. Set aside.
- In a saucepan, combine 1/2 cup water with the milk, butter, sugar and salt and stir over low heat until the sugar, butter and salt have melted. Raise the heat to medium and bring to a healthy simmer.
- Take from the heat and immediately add the flour. Stir with a wooden spoon until the mixture thickens, is smooth and no flour lumps remain. Return to the heat and cook, stirring, until a film forms on the bottom of the pan. Continue stirring, careful not to scrape up the film, for a minute or two more.
- Transfer the mixture (panade) to a food processor. Mix for a minute to dissipate the heat. Add the eggs one at a time with the processor running. Pay attention to the consistency of the paste. It should be smooth and shiny, so you may only need 3 of the eggs. Stir in the cheese.
- Using a small cookie scoop, scoop generous mounds onto the parchment-lined baking sheets, spacing them an inch apart. Place in the oven, immediately reduce the heat to 375 degrees F and bake for 20 to 25 minutes, or until the cheese puffs are golden brown.

- In a skillet, saute the mushrooms and onions in 1 tablespoon butter until tender. In a large bowl, combine the flour, baking powder and salt. , In another bowl, combine eggs and cheeses. Melt remaining butter; add to egg mixture. Stir into dry ingredients along with mushroom mixture., Fill greased muffin cups three-fourths full. - 1. Process first five ingredients in food processor til blended and chopped. I just pulse til it's the consistency I want. Don't puree. Unroll crescent roll dough and separate into four rectangles. Press perforations together. Spread each rectangle with cream cheese mixture. Roll each up jelly-roll style starting with long sides. Cut each roll into 5 slices. Place on ungreased cookie sheet. Bake in 425º oven for 8-11 minutes. Makes 20 appetizers. Serve warm. Feel free to play with this recipe. Sometimes I like to add roasted red bell peppers, or sun-dried tomatoes, or a little extra sharp cheese such as grated asiago! Just have fun! :D
