BAKED HONEY CHICKEN TENDERS
Golden baked chicken tenders made using honey and bread crumbs for a crispy coating. Using only 1-2 tablespoons of honey adds flavor and locks in moisture. Toss chicken in the flavorful coating and add some Italian Seasoning to give them more flavor if you wish. Moist and delicious.

Steps:
- Mix the mayo and honey together - add to a bowl containing the chicken pieces and stir well - coating the tenders with mixture.
- Place the bread crumbs in a plastic bag.
- Toss coated tenders 2 or 3 at a time in the bread crumb bag.
- Place chicken strips in a single layer on a baking sheet or sheet pan that has been sprayed with cooking spray. You can use a foil lining instead for easier cleanup.
- Sprinkle Parmesan cheese over all of the tenders.
- Place in a preheated 425° F oven.
- Cook for 8 minutes - carefully turn tenders over.
- Cook for an additional 8 minutes - remove from oven. Enjoy

- Cooking Day Instructions: In large freezer bag, combine marinade ingredients (oil, garlic, lemon juice, rosemary, thyme, salt, pepper, bay leaf). Add chicken, toss to coat, and marinade at room temp one hour.

- Spray a 9 x 13 inch baking pan with non-stick cooking spray.
- Arrange chicken tenders in single layer in pan.
- In a medium-sized bowl, mix together honey, soy sauce, ginger, garlic, and dried onions. Pour mixture over chicken. Cover pan with plastic wrap and let marinate in fridge for about an hour (I let mine marinate for about 3 hours), turning chicken once, about half way through marinating time.
- Preheat oven to 425 degrees.
- Remove chicken from fridge, discard plastic wrap, and bake chicken for about 20 minutes.
- Remove chicken from oven, turn chicken pieces over, top with sliced green onions, and return to oven and bake for 10 more minutes (or until chicken is no longer pink and juices run clear).
