Hawaiian Baked Chicken marinated in a garlicky-pineapple juice mixture is the most flavorful chicken you will ever make! It's an easy and healthy recipe the whole family will love!

4 chicken breast halves
1 can ((20-oz) pineapple chunks, juice reserved)
3 garlic cloves (, minced)
salt and fresh ground pepper (, to taste)
1 tablespoon lemon juice
1 teaspoon lemon zest
1/8 teaspoon paprika
2 tablespoons butter
1 tablespoon dijon mustard
1 tablespoon honey
1 can ((20-oz.) pineapple chunks)

Steps:

  • Lightly pound chicken just enough to even it out; do not pound it thin.
  • In a large plastic ziploc bag, combine chicken breasts, pineapple juice, minced garlic, salt, pepper, lemon juice, lemon zest, and paprika.
  • Seal bag and place in fridge for 3 to 4 hours.
  • Preheat oven to 400˚F.
  • Lightly grease a baking pan with cooking spray.
  • Remove chicken from bag and shake off any excess; discard marinade mixture.
  • Transfer chicken to prepared baking pan; set aside.
  • In a frying pan, melt butter over medium-high heat.
  • Add mustard, honey, and pineapple chunks; stirring occasionally, cook for 2 minutes, or until bubbly and fragrant.
  • Remove from heat.
  • Spoon pineapple mixture over chicken.
  • Bake for 35 to 40 minutes, or until chicken is tender.
  • Remove from oven.
  • Serve.

2 cans (8 ounces each) unsweetened crushed pineapple, undrained
1/4 cup sherry or chicken broth
1/4 cup spicy brown mustard
1/4 cup honey
2 tablespoons butter, melted
1/2 teaspoon paprika

Steps:

  • Arrange chicken in a shallow baking dish coated with cooking spray. In a small bowl, combine the pineapple, sherry or broth, mustard, honey and butter; mix well. Spoon over chicken; sprinkle with paprika. , Bake, uncovered, at 400° for 35-45 minutes or until a thermometer reads 180°.

1/2 cup soy sauce
1/4 cup melted butter, melted
1/4 cup water (The water can be substituted for Pineapple juice or other fruit juices that will give it a kick.)
2 cloves garlic, minced (Add more if you are a garlic lover)
1/2 cup onion, minced
3 tablespoons brown sugar
1 teaspoon dry mustard
1 tablespoon ginger, minced

Steps:

  • Combine all ingredients, minus the chicken wings.
  • Marinate chicken wings overnight.
  • Bake at 350 degrees for 45 minutes.

¼ cup butter
⅓ cup ketchup
¼ cup brown sugar
2 teaspoons cornstarch
¼ cup vinegar
1 teaspoon salt
1 teaspoon soy sauce
½ teaspoon Worcestershire sauce
1 (9 ounce) can crushed pineapple
3 pounds assorted chicken pieces such as breasts, thighs, wings, and drumsticks

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Melt butter in a saucepan over medium heat; stir ketchup and brown sugar into melted butter, stirring to dissolve brown sugar. Whisk cornstarch into vinegar until smooth; pour into pan. Whisk constantly and add salt, soy sauce, and Worcestershire sauce to mixture; bring to a simmer. Cook until thickened, about 2 minutes. Stir pineapple into sauce.
  • Arrange chicken pieces in a 9x13-inch baking dish; pour pineapple sauce over chicken.
  • Bake until sauce is bubbling, chicken is browned, and the juices run clear, about 45 minutes. An instant-read meat thermometer inserted into the thickest part of a thigh should read at least 160 degrees F (70 degrees C).

Number Of Ingredients 9

1 lb boneless chicken breast half
1 teaspoon salt
1 (20 ounce) can pineapple slices
1 garlic clove, pressed
1 tablespoon cornstarch
2 teaspoons Worcestershire sauce
2 teaspoons Dijon mustard
1 teaspoon rosemary, crumbled
1 (10 ounce) jar maraschino cherries, halves

Steps:

  • Preheat oven to 400°F.
  • Rinse chicken and place in a shallow casserole dish or 9X13 pan. Sprinkle chicken with salt.
  • Drain pineapple, reserving juice.
  • Mix pineapple juice, garlic, cornstarch, Worcestershire sauce, Dijon mustard and rosemary until cornstarch is smooth.
  • Pour sauce over chicken.
  • Arrange pineapple slices over the chicken and place a cherry inside of each pineapple center.
  • Cover the pan and bake for 30 minutes.
  • Remove the cover and bake for 5 minutes longer.
  • Spoon sauce over the chicken (and rice) when serving.
