BAKED HAM AND CHEESE SANDWICHES
I COLLECT cookbooks and enjoy reading them much like a novel. But when I start cooking, I create my own recipes to suit my taste. I used to cater parties and found I often had to be resourceful. - Place two slices of bread in a greased 11x7-in. baking dish or two individual baking dishes. Top each with a slice of ham and cheese; top with remaining bread. , In a small bowl, beat the eggs, milk, mustard and parsley. Pour over sandwiches. Let stand for 5 minutes; carefully turn sandwiches over and let stand 5 minutes longer. , Bake, uncovered, at 350° for 30-35 minutes. Top with asparagus and cheese if desired. Bake 5 minutes more or until cheese is melted and a knife inserted into the egg mixture comes out clean. Serve immediately.

- Spread 1 tablespoon cheese spread on bottom half of each tortilla. In medium bowl, mix ham, mayonnaise, pickle relish and mustard.
- For each wrap, spoon heaping 1/3 cup ham mixture across tortilla about 2 inches from bottom. Top with 1/4 cup coleslaw. Begin rolling tortilla around filling from bottom edge. About 1/3 of the way up, fold in right edge; roll until halfway up. Spoon about 1/4 cup shoestring potatoes along fold; continue to roll. Wrap securely in microwave-safe waxed paper.

- 1.Preheat oven to 350 degrees F. Coat a 9×13-inch baking dish with cooking spray. 2.Unroll the pizza dough onto a cutting board and press into approximately a 13×18-inch rectangle. Top with ham and cheese slices. Starting on the longer side of the rectangle, roll up the edge tightly. When you reach the end, pinch the seam together and flip the roll so that the seam is face down. Cut into 12 slices, approximately 1-inch wide. - Lay out the tortillas on a flat surface. Place 1-2 slices of ham in the middle of each one. Sprinkle over some chopped pepper and cheese, leaving a 2cm edge at one end. Starting at the other end, roll up as tightly as you can. Wrap each tortilla in kitchen foil and twist the ends to seal. Will keep in the fridge for up to 3 days.
- Heat oven to 180C/fan 160C/gas 3. Place the wraps in the oven (directly onto the oven rack is fine) and cook for 10-15 mins until the cheese starts to melt. Unwrap for the last 5 mins if you want the outside to be crisp. Peel off the foil before eating.

- Preheat oven to 350 degrees. Cut aluminum foil into pieces large enough to hold each sandwich.
- Whisk or beat the butter with the mayonnaise, mustard, onion powder and poppy seeds.
- Spread sauce on both sides of each bun, if desired, sauce quantity may be doubled, and more can be used, although not all of it will be required.
- Place ham slices on the bottom side of each bun. Put cheese slices evenly on top of ham.

This recipe is adapted from a Pampered Chef recipe out of their 2004 Spring / Summer "Season's Best" cookbook. The original recipe calls for iceburg lettuce, tomatoes and green bell peppers, but I have made some changes to adapt for our family's taste. This is a great base start and the combination possabilities are endless.

- Combine cream cheese, honey and mustard in a small bowl.
- Spread cream cheese mixture onto one side of each flat bread wrap.
- Add layer of spinach over cream cheese mixture, then layer of ham (2 slices per wrap). Press down firmly.
- Add layer of sliced swiss cheese (1 slice per wrap), then layer with bacon (2 slices per wrap).
- Add pepperochini's as an option.

- Preheat oven to 400 degrees. Heat butter in a medium saucepan over medium heat until foamy. Add flour; cook, whisking constantly, until smooth, 1 to 2 minutes (do not let color).
- Add milk and nutmeg to saucepan. Whisking constantly, bring to a simmer; continue cooking until thickened, 2 to 3 minutes. Season with salt and pepper. Transfer to a shallow dish; cover with plastic wrap, pressing it directly on the surface of the sauce. Refrigerate at least 10 minutes.
