Baked Turkey Meatballs. Easy to make, tender, and absolutely delicious! Serve with spaghetti, buns, or over zucchini noodles.

1/3 cup grated Parmesan cheese (plus additional for serving)
1/3 cup Italian-seasoned breadcrumbs (whole wheat if possible)
3 tablespoons finely chopped fresh herbs (basil, parsley, or chives a combo, plus additional for serving)
1 teaspoon kosher salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried oregano
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
1 pound 93% lean ground turkey (keep in your refrigerator until the last possible second)
1 large egg
1 1/2 tablespoons extra-virgin olive oil (plus more as needed)
Prepared pasta sauce
Cooked whole wheat pasta or zucchini noodles
Creamy Polenta
Split and toasted hoagie buns
Prepared brown rice

Steps:

  • Preheat your oven to 375 degrees F. Line a rimmed baking sheet with aluminum foil and coat with nonstick spray.
  • In a large mixing bowl, add the cheese, bread crumbs, herbs, salt, garlic powder, onion powder, oregano, pepper, and red pepper flakes and stir well to combine. Add the turkey.
  • In a small bowl, beat the egg, then add it to the meat mixture. With a fork or your fingers, mix just until combined, being careful not to compact the meat.
  • With a scoop or spoon, scoop the meat and shape into 1 1/2-inch meatballs. Arrange on the prepared baking sheet. You will have about 20 meatballs total.
  • Brush the tops of the meatballs with the olive oil.
  • Bake for 15 minutes, or until the meatballs reach an internal temperature of 165 degrees F on an instant-read thermometer. As an alternate way to check, a meatball in the center of the baking sheet should be fully cooked through when cut in half.
  • While the meatballs cook, warm the sauce and any other items you'd like to serve them with (pasta, hoagie buns, rice, etc.). Serve the meatballs hot, topped with the sauce, cheese, herbs, and any other additions.

½ cup Italian bread crumbs
¼ cup thinly sliced baby spinach
1 egg
2 tablespoons onion powder
2 tablespoons garlic powder

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Combine turkey, bread crumbs, spinach, egg, onion powder, and garlic powder together in a bowl. Roll mixture into palm-size meatballs and place 2 inches apart on a baking sheet.
  • Bake in the preheated oven until no longer pink in the center and outside is browned, 15 to 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

This is one of my favorite meals. We make it at least once a month. I love to serve it with cream cheese corn and green beans. The original recipe for Porcupine Meatballs calls for ground beef, but after we tried ground turkey, we never went back.

1 lb lean ground turkey
1/2 cup Minute Rice
1/2 cup water
1/2 onion, minced
1 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic powder
1 teaspoon celery salt
1 (15 ounce) can tomato sauce (large can)
1 (8 ounce) can tomato sauce (small can)
1 tablespoon Worcestershire sauce
1 cup water

Steps:

  • Preheat oven to 375.
  • In a large bowl, mix the ground turkey, rice, 1/2 cup water, onion, garlic powder, pepper and salts.
  • Form into golf ball size meatballs and place in a 2 quart casserole dish.
  • In a bowl, mix the tomatoes sauce, worchesterchire and 1 cup water.
  • Pour over the meatballs. Cover and bake for 1 hour.

This is, by far, the best recipe for porcupine meatballs I have ever had. This is a recipe that was given to my mom when she married back in 1970. The recipe also includes cooking directions for stovetop cooking or cooking in the oven. Hope you enjoy as much as our family does.

½ cup uncooked white rice
½ cup water
⅓ cup chopped onion
1 teaspoon salt
½ teaspoon celery salt
⅛ teaspoon garlic powder

1 cup water, or more as needed
2 teaspoons Worcestershire sauce

Steps:

  • Mix the ground beef, rice, 1/2 cup water, onion, salt, celery salt, garlic powder, and black pepper in a bowl. Roll the mixture into 12 meatballs.
  • Heat a large skillet over medium-high heat and add the meatballs. Cook meatballs, turning occasionally, until evenly browned. Drain and discard any excess grease. Meatballs that wind up looking like little pokey porcupines! I decided to post our version of these great meatballs since none of the others were "quite" right. UPDATE: I have frozen these with the sauce and uncooked meatballs together, then placed frozen in the crockpot on low for 5-6 hours and it worked great!

1 lb ground turkey or 1 lb ground beef
1/2 cup brown rice, uncooked
1 tablespoon onion, minced
1 teaspoon salt
1 (10 1/2 ounce) can tomato soup
10 ounces water (one soup can)
1 tablespoon Worcestershire sauce

Steps:

  • Combine meat, rice, onion and salt. Form into 1-2 inch meatballs.
  • Place in a single layer in a deep baking dish.
  • Combine soup, water, and Worcestershire sauce.
  • Pour over meatballs (meatballs should be mostly covered).
  • Bake covered for 1 1/2 hours at 350 degrees, or until rice is tender. (Takes about an hour if using white long grain rice, takes up to 2 hours if using brown rice). *You may want to stir partway through if meatballs aren't completely covered, to allow all of the rice to absorb some liquid*.
  • Note for freezer cooking: Flash freeze raw meatballs. Place in ziploc bag when frozen. Freeze soup mixture separately in another ziploc bag. When ready to cook, thaw both meat and soup (will need to re-stir soup because it separates), then combine into baking pan to bake.
