HERB-BAKED FISH FILLETS



Herb-Baked Fish Fillets image

These herb-baked fish fillets are topped with garlic, butter, and seasoned corn flake crumbs, making for a flavorful and delicious crispy fish.

1 pound frozen fish fillets (partially thawed)
1/4 cup chopped onion
1 clove garlic (minced)
2 tablespoons butter
1/2 teaspoon dried tarragon (crushed)
1/4 teaspoon dried thyme (crushed)
1/4 cup corn flakes (crushed)
1 tablespoon melted butter
1 teaspoon chopped fresh parsley
Kosher salt and freshly ground black pepper

Steps:

  • Heat the oven to 450 F. Grease a shallow baking dish big enough to place the fish in a single layer.
  • Place the fish fillets in the prepared baking dish.
  • In a skillet or saute pan over medium-low heat, cook the onion and garlic in 2 tablespoons of butter until tender. Stir in the thyme and tarragon and cook for 1 minute longer.
  • Spread the herb and butter mixture over the fish fillets.
  • In a small bowl, combine the crushed corn flakes with the melted butter and parsley.
  • Top with the seasoned cornflake crumbs and sprinkle with kosher salt and freshly ground black pepper.
  • Bake in the preheated oven for 12 to 15 minutes, or until fish flakes easily with a fork. Very thin fillets might take less time to check the center of the fish with a fork-flakes should separate freely.
  • Serve the fish with lemon wedges.

Wrap the fish in fig leaves and bake. Have the slaves serve it on silver platters." I'm posting this for ZWT 6. Greece

Number Of Ingredients 7

1 lb white fish (cod, sole, flounder)
1/2 teaspoon marjoram
salt and pepper
1 lemon, juice of
4 green onions, sliced the long way into 2-inch pieces
12 fig leaves (canned, from a small jar) or 12 grape leaves, drained and rinsed (canned, from a small jar)
1 cup dry white wine

Steps:

  • Cut fish into 1-inch-square pieces. Sprinkle with marjoram, salt and pepper, and lemon juice. Pour hot water over the fig leaves to soften, or rinse the canned grape leaves in cold water.
  • Spread leaves out one by one. Place a piece of fish and a bit of green onion on a leaf and wrap it up, tucking in the sides as you roll. Place the rolls side by side in an oblong baking pan and pour the wine over all.
  • Bake in a preheated oven at 350* for 20 minutes, uncovered.

1 -1 1/2 lb tilapia fillet (or cod, haddock, or any other mild fish)
4 tablespoons butter, melted
2 teaspoons lemon juice
1 -2 garlic clove, minced
1 teaspoon sugar
1/2 teaspoon pepper
1/2 teaspoon thyme
1 tablespoon chopped parsley
1/3 cup breadcrumbs

Steps:

  • Preheat oven to 425. Lightly grease or spray a 13" x 9" (or larger) baking dish.
  • Rinse fish filets and pat dry. Set them in a single layer in the prepared baking dish.
  • In a small bowl, combine melted butter, lemon juice, garlic, sugar, pepper, thyme and parsley. Stir well. Pour evenly over fish filets.
  • Sprinkle with the breadcrumbs.
  • Bake at 425 for about 20 minutes or until filets are opaque and flakey.

1 teaspoon seasoned salt
Pepper to taste
Paprika, optional
3 tablespoons butter, melted

Steps:

  • Preheat oven to 400°. Place fish in a greased 11x7-in. baking dish. Sprinkle with seasoned salt, pepper and paprika if desired. Drizzle with butter. , Cover and bake until fish just begins to flake easily with a fork, 15-20 minutes.
