COD BAKED IN BANANA LEAVES
This is such a fantastic way of cooking cod - you are baking it on a bed of wonderful flavours and sealing them all in with the banana leaves so the fish is really moist and tasty. You can use any fish you fancy, and if you can't get hold of any banana leaves you can use greaseproof paper instead.

- Pre-heat the oven to 220C/425 degrees F/ Gas Mark 7.
- First you need to line a large roasting tray with the banana leaves. You do this by holding them over the hob so the whole leaf is warmed and softened (this makes it more pliable) and placing them in the tray so there is a large piece overlapping on all sides. You need to make sure there are no gaps. Sprinkle over the chili, coconut, ginger and coriander, then place the cod, skin side up, on top.
- Drizzle with olive oil, season with sea salt and squeeze the lime juice over the top. Place the squeezed limes in the tray.
- Fold the banana leaves over the fish to seal, and place something heavy and ovenproof on top to keep in place.
- Place in the middle of the oven and cook for about 25 minutes.
- When the fish is ready, remove the skin from each fillet and serve on warmed small squares of banana leaf, spooning over all the delicious juices, with a little cooked rice and a sprinkling of fresh coriander leaves.

- 1. Heat oven to 375 and season fish on both sides with salt, pepper, paprika and red pepper.
- 2. in a 9x13 baking pan line with aluminum foil and spray with Olive oil. Spread 1/2 of bread crumbs on the bottom of the dish and arrange fish on top of bread crumbs.
- 3. Slice banana to cover each fillet with a thin layer of banana. use remaining breadcrumbs to cover bananas. sprinkle nuts on top of that, spray a little more olive oil on top so the breadcrumbs brown slightly. Bake in oven until thickest part of fish is opaque, about 20 minutes.
- 4. Serve with salsa on the top or the side. I usually serve a nice green salad or green beans on the side.
- 5. To Make salsa: finely dice 1c tomato, 1/2c red onion, 1/4c green pepper, 1/2c mango, 1/2 to 1 finely diced jalapeno, 1tsp calentio, 1/4c lime juice, and salt and pepper to taste.

- Preheat oven to 375 degrees F (190 degrees C). Spray a baking dish with cooking spray.
- Arrange banana halves in the prepared baking dish. Drizzle maple syrup over bananas and top with cinnamon, ginger, and nutmeg. Cover dish with aluminum foil.

- Split the fish, put in a greased ovenproof dish and brush over with a little oil, then sprinkle with seasonings and herbs.
- Mix the tomato puree with 2 Tblsp. oil, then add the sugar and water.
- Pour this around the fish and trickle a little down the center of the fish itself.
- Split the peeled bananas lengthwise and put around the fish.

- Heat oven to 200C/180C fan/gas 6 (or a BBQ). Make a slit through the skin of the bananas along one side - making sure you don't cut all the way through to the other side. Poke in the chocolate buttons along the cut. Put each banana onto a sheet of foil and crimp the edges together to seal into a parcel. Transfer to a baking sheet and cook for 25 mins until the bananas have turned black (or pop straight into the BBQ embers for 15 mins).
- Serve with a scoop of ice cream and any melted chocolate that has escaped!

- Cut fish into large pieces, wash and pat dry. Salt and set aside.
- Mix the garlic, chillies, coriander leaves, coconut, lime or lemon juice, tamarind, sugar, cumin and salt into a paste and smear over fish. Let marinate 1 hour.
- Grease foil (if using) with ghee. Place a piece of fish on a banana leaf or foil piece and fold so fish is encased.

BOOZY BAKED CARAMELISED BANANAS

- Heat the oven to 220C/200C fan/gas 8. Toss the banana halves in an ovenproof dish with the sugar, maple syrup and rum or whisky. Sprinkle with a small pinch of salt, if you like.
- Bake for 15 mins, then remove from the oven. Heat the grill to high and grill the bananas for 3-5 mins, or until bubbling and caramelised. Spoon the bananas into bowls and scatter over the pecans. Serve with ice cream, and any of the caramelised syrup from the dish drizzled over the top.

PEANUT-CRUSTED FISH FILLETS WITH FRIED BANANAS
Steps:
- Peel the bananas and cut them lengthwise into 1/4-inch-thick slices. In a large ovenproof skillet heat 1 tablespoon of the butter and the oil over moderately high heat until the foam subsides, in the fat sauté the banana slices for 1 minute on each side, or until they are golden, and transfer them with a spatula to a plate. Pat the fish dry and sprinkle it with the cumin and salt and pepper to taste. Have ready in separate shallow dishes the egg beaten with the salt and the peanuts. Dip each fillet in the egg mixture, letting the excess drip off, and dredge it in the peanuts. To the skillet add the remaining 1 tablespoon butter, heat it over moderately high heat until the foam subsides, and in it sauté the fillets for 3 minutes. Turn the fillets, top them with the banana slices, and sauté them for 2 minutes more. Drizzle the fish with the lime juice, transfer the skillet to the middle of a preheated 450°F. oven, and bake the fish for 5 minutes. Transfer the fillets with a spatula to 2 heated plates and serve them with the lime wedges.
