THE BEST BREAKFAST EGG BAKE

The Best Breakfast Egg Bake image

Ingredients like frozen hash browns, canned crescent rolls and bulk breakfast sausage make this easy egg bake a classic morning meal. Layering rich sour cream, heavy cream and two types of cheese with bright bell pepper and scallion makes this The Best Breakfast Egg Bake. Slow-baking it keeps it soft and creamy with a browned crescent bottom. It's the perfect dish for a holiday or a plain old Sunday morning.

Time 2h35m

Yield 8 to 10 servings

Number Of Ingredients 15

Nonstick cooking spray
1 pound bulk breakfast sausage
1/2 cup sour cream
1/2 cup heavy cream
1 teaspoon ground mustard seed
1 teaspoon garlic salt
1/2 teaspoon kosher salt
12 large eggs
1/2 teaspoon freshly cracked black pepper
2 cups frozen shredded hash browns, thawed
4 ounces mild Cheddar, grated (about 1 cup)
4 ounces Colby Jack, grated (about 1 cup)
1/2 medium red bell pepper, finely diced (about 1/2 cup)
4 scallions, thinly sliced (about 1/2 cup)
One 8-ounce tube crescent rolls

Steps:

  • Preheat the oven to 325 degrees F. Spray a 9-by-13-inch baking dish with cooking spray.
  • Heat a large skillet over medium-high heat. Add the sausage and cook, breaking it up and stirring with a wooden spoon, until the sausage is no longer pink and is crispy and brown in spots, about 5 minutes. Remove from the heat.
  • Whisk the sour cream, heavy cream, ground mustard, garlic salt, kosher salt, black pepper and eggs together in a large bowl. Add the sausage, hash browns, both cheeses, bell pepper and scallions (reserving 2 tablespoons of scallions for serving) to the egg mixture. Fold to combine.
  • Unroll the crescent dough and press it into the bottom of the prepared baking dish. Dock or pierce the dough with a fork, making sure the entire sheet of dough is evenly docked with holes. Pour the egg mixture over the dough and spread it evenly into the dish. Cover with aluminum foil and bake for 40 minutes. Remove the foil. The egg should be somewhat set, but still wet and light in color. Return to the oven and bake uncovered until the egg is completely set and it is browned on the top and sides, 20 to 25 minutes.
  • Let the bake rest for at least 10 minutes. Sprinkle with the reserved scallions and serve warm or room temperature.

FULL IRISH BREAKFAST

Full Irish Breakfast image

When the Irish call this a full breakfast, they're not kidding. We've given you all the traditional components here, but if you're looking for a smaller meal, feel free to mix and match. Irish bacon is leaner than American-style bacon, so Canadian bacon is the closest substitute. If you're feeling ambitious, you can also bake a loaf of soda bread to stand in for your toast.

Categories     main-dish

Time 25m

Yield 2 servings

Number Of Ingredients 12

One 13-ounce can English-style baked beans, such as Heinz beans with tomato sauce
2 tablespoons Irish butter, plus more softened, for serving
1 1/2 cups quartered white button mushrooms
Kosher salt and freshly ground black pepper
1 large ripe plum tomato, cut crosswise into 4 slices
2 slices Irish bacon (back bacon), Canadian bacon or American-style bacon (about 3 ounces)
2 white pudding sausages (about 4 ounces), pricked with a fork in several places
2 black pudding/blood sausage patties (about 2 ounces)
4 slices whole grain or black bread
4 large eggs
Bitter orange marmalade, for serving
Brewed Irish breakfast tea, for serving

Steps:

  • Preheat the oven to 375 degrees F. Line a large baking sheet with foil or parchment paper.
  • Heat the baked beans in a small covered saucepan, stirring occasionally, over low heat.
  • Meanwhile, heat a large nonstick skillet over medium-high heat and then add 1 tablespoon of the butter. When it melts, add the mushrooms, season with salt and pepper and brown on one side for 1 to 2 minutes. Toss the mushrooms and push them to one side of the skillet. Add the tomatoes to the other side, season with salt and pepper and cook, turning once, until browned on the edges and slightly softened, about 1 minute per side. At the same time, continue to cook the mushrooms, tossing occasionally, until browned and tender, 2 to 3 minutes more. Transfer the mushrooms and tomatoes to the prepared baking sheet, keeping the components separate, and place in the oven to keep warm.
  • Add the remaining tablespoon of butter to the same skillet and melt over medium heat. Add the bacon, white pudding and black pudding and fry, turning occasionally, until browned, about 4 minutes. Transfer to the baking sheet with the mushrooms and tomatoes, leaving the fat in the skillet. Put the bread on the other side of the baking sheet and place in the oven. Let the bread toast, flipping once, while you fry the eggs.
  • Heat the fat in the skillet over medium heat. Crack the eggs into the skillet, season with salt and pepper and fry, flipping once, about 3 minutes total for over-easy eggs with slightly runny yolks. Remove the baking sheet from the oven and divide each of the components between two plates. Serve more butter and the marmalade on the side for the toast and hot tea as your beverage.

  • While the oven preheats, add 1/2 tablespoon butter to each small baking dish or ramekin. Add to the oven until it melts (about 1 minute), then use a brush to spread it around the inside of the dish.
  • Crack the eggs into a small bowl, then slide 2 into each dish. Sprinkle each with 1/8 teaspoon kosher salt and fresh ground black pepper. Place the baking dishes on a baking sheet. Bake 12 to 15 minutes (ours usually take 13 minutes), until whites are set and yolk reach desired firmness. The exact timing depends on the thickness of the dish. (If desired, you can cook longer to get a fully cooked yolk.)
  • Sprinkle with toppings and serve. Keep in mind the baking dishes are hot, so place them on a separate plate for serving.
