- Preheat broiler. In a shallow bowl, whisk together eggs. In another shallow bowl, mix cheese, wheat germ and seasonings., Trim ends of eggplant; cut eggplant lengthwise into 1/2-in.-thick slices. Cut slices lengthwise into 1/2-in. strips. Dip eggplant in eggs, then coat with cheese mixture. Place on a baking sheet coated with cooking spray., Spritz eggplant with additional cooking spray. Broil 4 in. from heat 3 minutes. Turn eggplant; spritz with additional cooking spray. Broil until golden brown, 1-2 minutes. Serve immediately with pasta sauce.

- Heat oven to 450°F. Line cookie sheet with cooking parchment paper or silicone baking mat.
- In shallow bowl, mix bread crumbs, pepper flakes, salt and pepper. In another shallow bowl, beat egg with fork or whisk. Dip eggplant strips into egg, coating all sides; shake off excess. Roll in bread crumb mixture until coated. Place on cookie sheet.
- Bake about 20 minutes, turning once, or until coating is crisp and lightly golden.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil; coat with about 1 teaspoon olive oil.
- Combine bread crumbs, Parmesan cheese, garlic powder, oregano, basil, salt, and pepper in a shallow dish.
- Combine eggs with a splash of water in a separate shallow dish. Coat both sides of an eggplant slice with the egg mixture. Dip eggplant slice in the bread crumb mixture to coat. Place slice onto the baking sheet. Repeat coating the remaining eggplant slices. Drizzle remaining 2 teaspoons olive oil over the breaded slices.
- Bake in the preheated oven until golden brown, 20 to 25 minutes.

- Wash and cut the eggplants/aubergines into long strips. Sprinkle with salt and set aside (in a colander if possible) for a minimum of 15 minutes - but up to 30 would be best. This will remove any extra water so they maintain the perfect texture once baked.It's best to cut the fries as evenly as possible. To do this, slice the eggplant into 1/2-3/4-inch round slices, then chop those into batons.For baked eggplant slices (rather than fries), chop into round slices about 1/2-inch in thickness.I leave the skin on the eggplant as it helps the fries hold their shape while baking.
- While the eggplant sweats, prepare three separate bowls. In one, whisk the eggs. In the second, add the flour, and in the third, combine the breadcrumbs and spices (garlic powder, Italian Seasoning, and sometimes cayenne pepper if I want heat).
- After the eggplant is done 'sweating; then pat the pieces with a kitchen towel to remove the excess liquid. Then it's time to coat the fries.
- Spray the fries lightly with a little cooking spray/ olive oil and then bake them in the oven for 15-18 minutes at 425ºF/220ºC until golden brown. You could flip the breaded eggplant midway - but it's not 100% necessary.
