This is a great Recipe if Cooking for "ONE" "Two" or "Many". Very Easy, and Healthy dish.

SALSA CHICKEN (SPICEY) OR MILD (YOUR CHOICE)
1 - chicken breast
1/2 C - salsa i use mild ( mild or hot your choice)
6 small - black olives, (sliced or whole)
3 - jalapeno peppers, sliced (optional)

Steps:

  • Prheat Oven @ 400. Cut Foil big enough to close around your Chicken breast.
  • Place Cken Breast onto the foil. Pour Salsa over the breast. Place Peppers(optionl) and Olives on top.
  • Wrap the Foil around the Cken Breast, Fold the ends together tight. Place in an oven dish.
  • BAKE 60 minutes. ENJOY, Serve with Baked tater, Spanish Rice, Rice a Roni, Salad, or Mexi Corn

Since the coating is the exact same for all the chicken, it's a definite timesaver on a weeknight. Holla. You'll serve the nuggets with some ketchup and steamed broccoli for the kids. And then you'll just drape your chicken over some super-quick lemony linguine for you. And all is right in the world.

Number Of Ingredients 13

1 cup all-purpose flour
2 cups panko
1 tablespoon Italian seasoning
1/3 cup plus 1/4 cup freshly grated Parmesan, plus extra for serving
Salt
2 eggs
2 pounds chicken breast, 1 pound cut into 1-inch cubes and the other pound cut in half lengthwise and pounded out thinly
1 cup broccoli, boiled or steamed
Ketchup, for serving
1/2 pound linguine
2 tablespoons butter
Chopped fresh parsley, for garnish
1 lemon, cut in half

Steps:

  • Preheat the oven to 375 degrees F. Place the flour in a shallow dish. In another shallow dish, combine the panko, Italian seasoning, 1/3 cup Parmesan and a pinch of salt. In one more shallow dish, beat the eggs.
  • Set a shallow cooling rack in a baking sheet. Take each cube of chicken and lightly dredge it in the flour. Dip it in the egg wash, then roll it in the panko. Continue until all of the chicken cubes are coated in panko. Arrange on the cooling rack set in the baking sheet and bake, flipping halfway through, until golden brown on all sides, 15 to 20 minutes.
  • Serve these baked nuggets with a side of steamed broccoli and a little bit of ketchup for dipping! Your kids will freak out.
  • Now for your mature palate: Proceed with the pounded chicken, in the same fashion as the nuggets. First the flour, then the egg, then a good coating of the panko. Arrange the chicken on the rack on the baking sheet and bake until golden brown on both sides, 15 to 20 minutes.
  • Meanwhile, cook the linguine in a pot of salted water until it is al dente and drain, reserving about 1/4 cup of pasta water. Transfer the pasta back to the pot. Add the butter, parsley, juice from half the lemon, the reserved pasta water and the remaining 1/4 cup Parmesan and give it all a good toss.
  • To dress it up a tad more, slice the remaining half lemon, then sear a few lemon slices in a small saute pan-so fancy.
  • Serve the baked chicken over the pasta and serve with extra Parmesan!

2 cans cream of chicken soup
1 3/4 c stuffing mix [ pepperridge farm]
1 cup melted butter

Steps:

  • place chicken in greased 13x9 pan .Spread cream of chicken soup over chicken When put cheese on corner to edge. sprinkle with stuffing mix. drizzle with butter. cover bake 300 for 1 hour. uncover bake i more hour.

1 - chicken breast halves, skinless and boneless
1/2 C - cream of chicken soup (do not dilute)
1/4 C - petite frozen peas
6 - black olives (sliced or whole)

Steps:

  • Preheat Oven @ 400. Cut Foil big enough to wrap around Chicken Breast.
  • Place Chicken breast in the Foil. Pour Soup over the Breast.(DO NOT DILUTE THE SOUP) Top with Peas and Olives. Wrap foil around breast. Fold ends tightly. Place in Oven dish.
  • Bake 45-60 min. ENJOY. No Dishes. . . to clean! Serve with, Your Choices of any; Rice, Mashed Taters, Salad or Rice a Roni.

SOLO BAKED CHICKEN BREAST

This is an easy recipe that when when matched with a prepared potato ( see note ), and a green salad will place dinner for one on the table in 45 minutes.

1 boneless skinless chicken breast, thawed
1 lemon, juice of
1 tablespoon melted butter
pepper

Steps:

  • Place a Cast Iron Frying Pan into an oven and preheat at 350 degrees for 10 minutes.
  • During this time, IF the chicken breast is frozen, it can thawed in a microwave at power 3 for 7 minutes.
  • Place the thawed chicken breast into a shallow dish and add the juice of 1 lemon, coating both sides.
  • Let sit for at least 5 minutes.
  • Cover both sides with pepper, and then coat the chicken breast with the butter, using a brush.
  • Place the chicken into the Cast Iron Pan and bake for 35 minutes.
  • To get an even browning, turn the chicken over half way through the baking time.
  • Note:If a baking potato is punctured, microwaved on high for 3 minutes, and then coated with olive oil, it will be done in the same 35 minutes in the oven.

3-2-1 CAKE MIX . . . .MIX AND STORE FOLLOWING IN ZIP LOCK BAG
1 Box angel food cake mix
1 Box cake mix, any flavor
makes 1 serving
cooks in the microwave (1) minute only ( 60 sec)
SINGLE RECIPE FOR ONE
3 TBS cake mixed mixture above
2 TBS water
1 Min bake in microwave 1 minute

Steps:

  • 1. in a Zip Lock Bag, Combine the (2) cake mixes together and Toss bag to Mix very Well.
  • 2. For Each individual cake serving,(FOR ONE serving) Take out 3 Tablespoons for the Cake Mix combination, Mix this with 2 Tablespoons Water. Mix in a small microwave safe Dish, (I use a custard Cup,) or Bowl/or Container.
  • 3. Microwave on HIGH for (1) Minute, and You have your Own Instant individual little one serving cake
  • 4. KEEP REMAINING CAKE MIXTURE; stored in a Zip Lock bag, and use when ever you feel like a treat!! you can top each cake with a dollop of "FAT FREE Whipped Topping" & some fresh fruit, strawberries or Blueberrries, and enjoy.

4 med chicken breasts rinsed
2 TBS montreal steak seasoning
1 tsp garlic pdr (optional)
cooking spray or (1 tbs olive oil)

Steps:

  • 1. Preheat Oven @ 425 Prepare Baking pan lined with Foil, then Spray with cooking spray.
  • 2. Place Chicken, Sprayed with cooking spray, or Brush with Olive Oil on prepared foil lined baking sheet. Sprinkle with (seasonings) Montreal Steak seasoning. Garlic is Optional.
  • 3. Bake 15-20 min til juices run clear. (DO NOT OVER COOK) Chicken should be Moist and tender and Not Dry. TIP: This recipe can also be ENJOYED "GRILLED". Serve with Loaded Mashed Potatoes and Long Green beans. Excellent Meal idea.
