An easy baked brie recipe with honey, walnuts, and fresh rosemary

Number Of Ingredients 7

1 wedge or small wheel of brie cheese
1/3 cup chopped walnuts, toasted
1/2 teaspoon freshly chopped rosemary
2-3 tablespoons dried cranberries (optional)
3 tablespoons honey
a generous pinch of coarse sea salt
crackers and/or fruit for serving

Steps:

  • Preheat oven to 350F degrees. Place the brie into a small oven proof dish or pan. Place into the oven and bake for 5-10 minutes, until softened. I like mine oozy so go a few extra minutes. If you just want the brie soft, check at 5 minutes.
  • Meanwhile toast walnuts by placing them in a skillet over medium heat. Stir occasionally until the nuts are fragrant and toasted. This will take 3-4 minutes.. Watch carefully as the walnuts can burn quickly. Remove from heat.
  • In a small bowl, combine toasted walnuts, chopped rosemary, dried cranberries if using and the honey. Stir until completely combined.
  • Remove brie from oven and spoon over the walnut mixture over the top. Sprinkle with a generous pinch of sea salt and serve immediately.
  • Serve brie with your choice of crackers, pita chips, grapes, apples, or crostini. They're all delicious choices!

1 sheet frozen puff pastry, thawed
1 wheel (8 ounce size) Brie
1 egg, beaten (for glaze)
1/4 cup butter
3 tablespoons honey
1 1/2 teaspoon minced garlic
2 tablespoons chopped walnuts
1 tablespoon chopped fresh parsley

Steps:

  • Preheat oven to 400 degrees F. Roll out puff pastry sheet on lightly floured surface. Place brie in center, and fold pastry around it, sealing seams. Transfer to baking sheet, seam side up. Brush pastry with egg glaze. (Can be prepared 6 hours ahead. Cover and refrigerate.) Bake brie until pastry is golden, 18-25 minutes. Combine butter, honey, and garlic in small saucepan over low heat. Stir until butter melts. Place sauce on a plate. Sprinkle sauce with walnuts and parsley. Place pastry wrapped brie atop sauce on plate and serve with assorted crackers.

1/4 cup apricot jam
1 round (13.2 ounces) Brie cheese
1 large egg
1 tablespoon water
Apple slices

Steps:

  • Roll puff pastry into a 14-in. square. Spread jam into a 4-1/2-in. circle in center of pastry; place cheese over jam. Fold pastry around cheese; trim excess dough. Pinch edges to seal. Place seam side down on ungreased baking sheet. Beat egg and water; brush over pastry., Cut the trimmed pastry pieces into decorative shapes and place on top; brush with egg mixture if desired. Bake at 400° for 20-25 minutes or until puffed and golden brown. Serve warm with apple slices.
