- In a large skillet, cook and crumble sausage over medium heat until no longer pink; drain. Add green pepper and onion; saute until tender. Drain. Add remaining ingredients., Pour into a greased 13x9-in. baking dish. Cover and bake at 325° for 1 hour. Uncover; bake 20-30 minutes longer or until bubbly.

MICHIGAN BEANS AND SAUSAGE CASSEROLE
I got this recipe from a church cookbook years ago. Bean casseroles are a big hit at potlucks and picnics.

Steps:
- In a large saucepan, cook sausage and onion in boiling water for 2 minutes; drain. In a large bowl, combine the ketchup, sugars, vinegar, molasses and mustard. Stir in beans and sausage mixture. , Transfer to a greased 2-1/2-qt. baking dish. Cover and bake at 350° for 1-1/2 hours or until bean mixture reaches desired thickness.

BAKED BEAN AND SAUSAGE CASSEROLE
This is probably one of the easiest dinner meals to make and as a kid i absolutely loved this dish (many fond memories!). It can easily be prepared ahead and placed in the fridge ready to go to put in the oven.

Steps:
- Place potatoes in a large pot of salted water. Bring to the boil and cook for 20 minutes or until the potatoes are tender.
- Preheat oven to 180°C.
- Drain potatoes before returning them to the pot over a high heat. Toss for a few moments to evaporate any excess water.
- Add the milk and butter to the pan and mash potatoes until smooth. Cover with a lid and set aside.
- Heat a little oil in a large fry-pan. Add the sausages and fry, turning occasionally, until cooked through. Set aside and allow to cool slightly.
- When sausages are cool enough to handle cut sausages into 3cm lengths.
- In a large casserole dish, mix together the sausages and baked beans until well combined. Spread the mash potatoes evenly over the top of the baked bean mixture. Top with cheese.
- Bake, uncovered, for about half an hour or until the cheese has melted and the casserole has heated through.

- Heat up olive oil on medium high heat in a casserole dish and carefully add the sausages. Brown the sausages all over until golden brown. Remove from the pan and transfer to a plate.
- Add chopped onions and garlic to the remaining oil in the pan and sauté until soft, fragrant and almost caramelised.
- Return the sausages to the pan, pour the baked beans all over it, add Worcestershire sauce, smoked paprika, salt and pepper and stir to combine. You can add about ½ cup of low sodium vegetable stock or water if you would be leaving the casserole to cook for longer than 15 minutes
- Reduce the heat and simmer for 15 minutes on low heat. Stir in chopped coriander, parsley or cilantro. Note: high heat would burn the casserole so do keep an eye.
