BAHAMIAN COCONUT BREAD



Bahamian Coconut Bread image

Serve bread with honey, or use as a dessert by topping a slice with ice cream and amaretto. From the Calypso Cafe.

Number Of Ingredients 10

3 c unbleached flour
2 c coarsely grated fresh coconut
1 c sugar
1 Tbsp baking powder
1 tsp salt
1 tsp nutmeg
2 eggs
1 c milk
2 Tbsp butter, melted (or oil)
1 tsp vanilla

Steps:

  • 1. Combine flour and next 5 ingredients in a large bowl.
  • 2. In a separate bowl, beat together eggs and remaining 3 ingredients.
  • 3. Stir egg mixture into dry ingredients.
  • 4. Pour batter into a greased and floured 1-inch cast-iron skillet.
  • 5. Bake at 350F for 45-60 minutes or until a toothpick inserted in the center comes out clean.
  • 6. Cool in skillet.

Number Of Ingredients 10

1/4 cup butter, softened
1 cup sugar
1 large egg, room temperature
3 medium ripe bananas, mashed (about 1-1/4 cups)
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup semisweet chocolate chips, divided
Dried banana chips, optional

Steps:

  • Preheat oven to 350°. In a large bowl, beat butter and sugar until crumbly. Beat in egg, bananas and vanilla. In another bowl, whisk flour, baking soda and salt; gradually beat into banana mixture. Stir in 1/2 cup chocolate chips., Transfer to a greased 10-in. cast-iron or other ovenproof skillet; sprinkle with remaining 1/2 cup chocolate chips. If desired, top with dried banana chips. Bake until a toothpick inserted in center comes out clean, 25-30 minutes. Cool in pan on a wire rack.

This recipe is a cultural staple in the Bahamas and throughout the Caribbean and is a family favorite(one which I have tweaked a bit over the years to suit various tastebuds) but its a wonderful bread/cake-like dish thats commonly served with soups and souses of all kinds (for breakfast, lunch or dinner)and can also be wonderful after dinner supper topped with jam and served with tea or cocoa. My family especially loves to eat it like a sandwich with cheese or peanut butter in the middle.Yum...the choices are endless. Hope you enjoy!!!!

Number Of Ingredients 10

6 cups all-purpose flour
3/4 cup sugar
6 tablespoons baking powder
1 teaspoon salt
1/2 cup unsalted butter
2 cups low-fat milk
1 cup water
4 whole eggs
1/4 cup vegetable oil
1/4 cup melted butter

Steps:

  • Preheat oven to 350 degrees and grease an 11x15 baking pan and set aside.
  • In a mixing bowl, sift together the flour and baking powder and then add the sugar and salt. With your fingers, gently knead in the stick of butter until well incorporated in the mixture. Add in the eggs, vegetable oil, milk and water and mix well with a spoon until the texture of your mixture is between that of a bread dough and the batter of a cake mix, adding more water if necessary.
  • Pour mixture into greased pan and bake for 30mins. Brush the melted butter over the top and continue to bake for another 15 mins or until golden brown and butter knife comes out clean from the middle.
  • Cut in squares and serve warm with butter or jam.

3/4 cup hot water
1/2 cup quick-cooking rolled oats (3 minute)
1 1/2 tablespoons molasses
1 1/2 tablespoons butter or 1 1/2 tablespoons vegetable oil
1/2 teaspoon salt
1 1/2 cups bread flour
1 1/2 teaspoons active dry yeast

Steps:

  • Mix all the ingredients together and knead for thirty to forty seconds.
  • Let rise (about forty minutes) and knock down and knead for thirty seconds.
  • Repeat.
  • (Or let the bread machine do all the kneading and timing for you and go beach combing until it's time to cook the dough!) Allow final rise in a bread pan, about forty minutes, and preheat oven to 425 f.
  • Place in oven and decrease temperature to 350 f.
  • Bake for thirty minutes.

10 slice stale homemade bread
4 c water (up to 5 cups)
4 Tbsp butter
1 1/2 c sugar
1 egg
1 1/2 tsp vanilla
2/3 c evaporated milk
1/2 c raisins

Steps:

  • 1. Soak bread in just enough water to soften bread. Let stand until soft; drain. Using hands, squeeze water out of bread; mix thoroughly.
  • 2. In a small bowl, mix together butter, sugar, egg, vanilla & milk; cream together until blended.
  • 3. Combine the 2 mixtures & add raisins. Turn into a 7 1/2 x 11 1/2 x 2 1/2" baking pan. Bake 1 hour and 45 minutes at 350° or until knife inserted in center comes out clean.
  • 4. This can be eaten plain or with a mound of whipped cream or whipped topping.

2 ripe bananas, mashed
2 eggs
⅓ cup vegetable oil
1 ⅓ cups canned pumpkin puree
½ cup honey
½ cup white sugar
2 ½ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
2 teaspoons pumpkin pie spice
1 teaspoon ground cinnamon
¾ cup raisins
½ cup walnut pieces

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 9x5 inch loaf pan.
  • In a large bowl, stir together the mashed banana, eggs, oil, pumpkin, honey and sugar. Combine the flour, baking powder, baking soda, salt, pie spice and cinnamon, stir into the banana mixture until just combined. Fold in the raisins and walnuts if desired. Pour batter into the prepared pan.
  • Bake at 350 degrees F (175 degrees C) for 45 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Cool loaf in the pan for 10 minutes before moving to a wire rack to cool completely.
