1/4 cup butter or margarine
1 medium onion, chopped (1/2 cup)
2 medium stalks celery, chopped (1 cup)
2 medium carrots, chopped (1 cup)
8 cups dry bread cubes (about 11 slices bread)
2 tablespoons finely chopped fresh parsley, if desired
2 tablespoons poultry seasoning or dried sage leaves
1 teaspoon salt
1/4 teaspoon pepper
About 1/2 cup Progresso™ chicken broth (from 32-oz carton)

Steps:

  • In 10-inch skillet, melt butter over medium-high heat. Add onion, celery and carrots; cook, stirring occasionally, until tender.
  • In large bowl, mix bread cubes, parsley, poultry seasoning, salt and pepper. Add broth and butter-onion mixture, stirring until desired moistness (stuffing will become a little more moist during roasting because it will absorb juices from turkey).
  • Use to stuff 1 (14- to 18-lb) turkey. After stuffing turkey, place any remaining stuffing in 1- or 2-quart casserole that has been sprayed with cooking spray; cover and refrigerate. Bake stuffing in casserole with turkey for last 35 to 40 minutes of roasting time or until thoroughly heated.

The great thing about stuffing is that it's almost impossible to mess up: A little more of this or less of that won't affect your results too much. The onething you want to have just the right amount of is liquid, to keep the stuffing moist but not soggy.

4 tablespoons unsalted butter
4 onions, coarsely chopped (about 4 cups)
5 stalks celery, coarsely chopped (about 2 1/2 cups)
1 large bulb fennel, coarsely chopped (about 2 cups), optional
Coarse salt and freshly ground pepper
1 tablespoon finely chopped fresh rosemary
1 tablespoon finely chopped fresh sage
1 pound sweet fennel sausage, removed from casings and cut into 1-inch pieces
6 ounces jarred or vacuum-packed whole peeled chestnuts (about 1 heaping cup)
2 day-old Italian bread loaves (about 8 ounces each), cut into 1/2-inch cubes (about 12 cups)
2 to 3 cups Brown Turkey Stock
3/4 cup chopped flat-leaf parsley

Steps:

  • In a large saute pan, melt butter over medium heat. Add onions, celery, and fennel; season with salt and pepper. Add rosemary and sage. Cook, stirring occasionally, until vegetables are soft and golden, about 10 minutes.
  • Meanwhile, cook sausage in a medium nonstick skillet over medium heat, stirring occasionally, until browned and cooked through, about 8 minutes.
  • Using your fingers, break chestnuts into large pieces. Stir chestnuts and sausage into the vegetables. Transfer mixture to a large bowl. Add bread cubes; toss well to combine.
  • Drizzle 2 cups stock over mixture, tossing to moisten evenly. Use additional stock if necessary. (The mixture should feel quite moist when squeezed.) Season with salt and pepper. Stir in parsley.
  • Place the stuffing in a buttered 2 1/2- to 3-quart shallow baking dish or in an ovenproof gratin dish.
  • Preheat oven to 350 degrees. Bake stuffing until heated through and top is browned and crusty, 35 to 45 minutes. Serve hot.

RICE STUFFING FOR TURKEY

One of the simplest and best of a number of turkey stuffings I've tried. Cooking time is not given, because it depends on size of the turkey. (Time for cooking rice is included in preparation time).

2 cups long grain white rice
1/2 cup chopped onion
1 cup chopped celery
2 cloves garlic
1/4 cup unsalted butter
1 cup raisins
1/2 cup dry sherry
1 bay leaf
1/2 teaspoon sage
1/2 teaspoon pepper
1/2 teaspoon marjoram
1/2 teaspoon thyme

Steps:

  • Cook the rice in 3½ cups water.
  • Sauté the onion through garlic in the butter.
  • Combine the rice and onion mixture with raisins through thyme, and mix thoroughly.
  • Stuff the bird just before cooking.

This is my father-in-law's stuffing recipe and it's always a hit around my house. I get begged to make it even when it isn't Thanksgiving! The best part is, without the oysters, it's completely vegetarian. I usually make 3 recipes: 2 for inside the turkey and one in a pan in the oven.

1/2 cup unsalted butter
3/4 cup diced celery
1/2 cup chopped onion
1/2 sliced mushrooms
1/2 cup chopped fresh oyster (can be omitted)
2 tablespoons chopped fresh parsley
1 bay leaf
6 cups freshly dry bread cubes (use a mixture of white, wheat, and bagels)
1 teaspoon salt (if using canned boullion that is salted, omit the additional salt)
1/2 teaspoon sage
1/2 teaspoon poultry seasoning
1/2 cup vegetable broth

Steps:

  • Sauté celery, onion, mushrooms, and spices in butter for 5 minutes.
  • Toss bread cubes in sauté mixture.
  • Cover and cool in refrigerator overnight.
  • Loosely stuff in the front neck cavity and back end of turkey.
  • Allow about 1 cup of stuffing for each pound of turkey.
  • If you prefer to cook the stuffing separate from the bird, place in a casserole dish (glass or metal).
  • Cook at 350 for 45-50 minutes, basting frequently with stock.
  • WATCH IT! It will burn easily.

NANCY'S TURKEY STUFFING

I got this from my sister-in-law and it is simple but nicely seasoned. Makes 3 quarts (enough for a 12lb turkey).

1 cup butter
1 cup onion, minced
12 cups dried bread, cubed
1 1/2 cups celery, leaves and stalks chopped
1 tablespoon salt
1 teaspoon pepper
1 tablespoon poultry seasoning (or a mix of sage, thyme and marjoram)

Steps:

  • Melt the butter in a large, heavy skillet. Add the onion and cook until yellow. Stir in as many breadcrumbs as fit and heat.
  • Transfer to a large, deep bowl and add celery, seasoning and the rest of the bread. Mix well. If too dry, add enough broth or water to moisten (don't make it soggy!).

OYSTER STUFFING FOR TURKEY

This dressing is a tradition with our family. Thanksgiving without oyster stuffing is not complete! There is just a hint of something extra, but the oyster taste is not overpowering, so even those who don't care for oysters like this stuffing. It's my "secret ingredient"!

1/2 lb ground sausage (not links)
1 1/2 cups chopped onions
2 cups finely chopped celery
12 cups dried bread, cubes
2 teaspoons salt
1/4 teaspoon pepper
1 teaspoon rubbed savory
1 teaspoon dried sage or 1 teaspoon ground sage
1 teaspoon dried thyme leaves or 1 teaspoon ground thyme
4 ounces cans oysters, drained and finely chopped (freeze remainder for next time!)
1 can chicken broth
2 eggs, slightly beaten

Steps:

  • In large frying pan, saute sausage meat, stirring to break up, until lightly brown.
  • Lift out with slotted spoon into large bowl.
  • In drippings (add a little butter, if there's not enough), saute celery and onion until tender-- 8 to 10 minutes.
  • Add to sausage meat.
  • Add next seven ingredients; mix well.
  • Add broth and eggs.
  • Mix.
  • If the stuffing is not moist enough, add a little water, but be careful because you don't want it too wet.
  • The turkey will add moisture during the cooking process.
  • Use this recipe to stuff a 10- 12 lb turkey.
  • Spoon dressing into turkey cavities, but do not pack.

TURKEY AND STUFFING

1 (12 ounce) package dry bread stuffing mix
5 cups water
1 large onion, chopped
4 celery, chopped
4 tablespoons dried sage
12 pounds whole turkey, neck and giblets removed

Steps:

  • Prepare stuffing according to package directions, and set aside in a large bowl.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring water to boil in a medium saucepan over medium heat, and stir in the onion, celery and sage. Boil 10 minutes, or until the onion is soft. Stir into the prepared stuffing.
  • Rinse turkey, and pat dry. Loosely fill the body and neck cavities with the stuffing mixture.
  • Place turkey in a large roasting pan and cook 3 to 3 1/2 hours in the preheated oven, or until the internal temperature of the thigh meat is 180 degrees F (80 degrees C) and the stuffing is at least 165 degrees F (75 degrees C).

As my husband and I are fussy eaters, I had to combine a couple of stuffing recipes and use my imagination to come up with this one. After one bite, my husband said "I hope you remember how you made this!" So, I guess it's a keeper.

12 cups bread, cut in cubes
1 teaspoon pepper
3 teaspoons sage
2/3 cup celery, chopped finely
1/2 cup onion, chopped finely
1/2 cup margarine
1 1/2 cups boiling water
2 packets of oxo chicken bouillon

Steps:

  • In large bowl, combine bread, pepper and sage.
  • Set aside.
  • Fry celery and onion in margarine until transparent, about 10 minutes.
  • Pour over bread.
  • Mix well.
  • Slowly stir Oxo into boiling water.
  • Add prepared bouillon gradually to bread until moist through.
  • Put stuffing in greased 13 X 9 glass pan.
  • Bake at 350° F for about one hour.
  • Stir often to pull the crusty stuffing off the bottom and create more crustiness.
  • If you prefer soft stuffing, don't stir at all.
