BACON WRAPPED SHRIMP
Partially cooking the bacon is a key step to these perfectly succulent shrimp wrapped in bacon! A crowd pleasing appetizer recipe that's also great for keto and low carb diets. Note that you'll need toothpicks to secure the bacon strips around the shrimp.

Steps:
- Preheat oven to 425˚F.
- Arrange bacon slices, leaving space around each, on oven safe rack placed inside a baking sheet. Bake 5 to 10 minutes depending on the thickness of your bacon. It should still be pliable when you remove it from the oven.
- Meanwhile, place shrimp in a medium bowl. Add olive oil, salt and pepper; toss to coat.
- When partially cooked bacon slices are cool enough to handle (about 5 minutes after you remove from oven), wrap each slice of bacon around one raw shrimp, securing with a toothpick; return to oven safe rack. Repeat with remaining shrimp.
- Bake 10 minutes more until shrimp are pink and bacon is cooked through. Serve.

- Position a rack 3 to 4 inches from the heat source and preheat the broiler. Whisk the lemon juice, garlic, paprika, thyme, olive oil and 1/2 teaspoon salt in a shallow baking dish. Add the shrimp and toss to coat; marinate in the refrigerator, 20 minutes.
- Turn the shrimp in the marinade to coat well. One at a time, remove each shrimp and wrap with a piece of bacon; secure with a toothpick if desired. Place seam-side down on a baking sheet. Spoon any remaining marinade over the shrimp. Broil, turning the shrimp once, until the bacon is slightly crisp and the shrimp are cooked through, about 5 minutes.
BACON WRAPPED SHRIMP WITH APPLE & SMOKED GOUDA
Steps:
- Preheat a grill to medium temperature and spray with non stick cooking spray. Butterfly the shrimps, careful not to separate the two halves. Peel apples and slice them thinly to get 18 slices. To assemble the shrimp, fold a apple slice and some of the gouda cheese between each shrimp. Wrap the shrimp from one end to the other with a piece of bacon; secure with a pick. Grill the shrimp 4-5 minutes per side until bacon is crispy and shrimp is cooked through. Meanwhile whisk together the apple butter, sour cream and balsamic vinegar; spoon into a serving dish. To serve, remove picks from the shrimp and place on a platter with the sauce. Makes 18 or 6 appetizer servings.
BACON WRAPPED SMOKED GOUDA STUFFED CHICKEN BREASTS
I found this recipe on another site when I was looking to use up some leftover smoked gouda. It's very flavorful, easy enough for weekenights yet perfect for a dinner party too.

Steps:
- Combine, cayenne, garlic powder, paprika and pepper.
- Flatten chicken breasts to approx 1/4" thickness.
- Season both sides of chicken with the cayenne mixture.
- Place small piece (s) of cheese on chicken and roll up, pressing firmly.
- Wrap each stuffed breast with a bacon slice and then brown over medium heat until bacon just begins to crisp.
- Bake in a 350 oven for 20 minutes.

- Remove the shell from the shrimp and wrap the Prosciutto around the shrimp. The Prosciutto I had was very long so I cut mine in half.
- In a bowl combine the ingredients for the marinade. Pineapple juice, soy sauce, brown sugar, ginger, garlic, and green onions.
- Place the bacon wrapped shrimp in a gallon zip lock bag and add the marinade. Let that sit in the fridge for an hr.
- Preheat your smoker or grill and set it to the highest temp possible. Place the shrimp on the grill and cook on one side for 7 minutes. After the 7 minutes is over flip the shrimp and cook for another 3 minutes. Serve with your favorite dipping sauce.
