1 tube (13.8 ounces) refrigerated pizza crust
2 tablespoons olive oil, divided
6 large eggs
2 tablespoons water
1 package (3 ounces) bacon bits
1 cup shredded Monterey Jack cheese
1 cup shredded cheddar cheese

Steps:

  • Preheat oven to 400°. Unroll and press dough onto bottom and 1/2 in. up sides of a greased 15x10x1-in. pan. Prick thoroughly with a fork; brush with 1 tablespoon oil. Bake until lightly browned, 7-8 minutes., Meanwhile, whisk together eggs and water. In a nonstick skillet, heat remaining oil over medium heat. Add eggs; cook and stir just until thickened and no liquid egg remains. Spoon over crust. Sprinkle with bacon bits and cheeses., Bake until cheese is melted, 5-7 minutes.

Number Of Ingredients 16

1 recipe fresh pizza dough, recipe follows
3 to 4 baby Yukon gold fingerling potatoes, finely sliced
1/2 small onion, finely sliced
6 slices applewood smoked bacon, finely chopped
2 tablespoons rosemary leaves
1/4 cup extra-virgin olive oil, plus extra to grease pan
Kosher salt and freshly ground black pepper
1 cup shredded fontina cheese
1 cup baby arugula, optional
1/2 lemon, juiced
2 packages active dry yeast
2 teaspoons sugar
2 cups warm water (100 to 110 degrees F.)
2 tablespoons kosher salt
6 cups unbleached all-purpose flour, plus more for dusting
2 tablespoons extra-virgin olive oil, plus extra for bowl

Steps:

  • Preheat the oven to 450 degrees F. Put a jelly roll pan or half sheet pan in the oven.
  • In a large mixing bowl, combine the fingerling potatoes, onion, bacon, and rosemary leaves. Add 1/4 cup of olive oil and season with salt and pepper, to taste. Toss together to coat with olive oil.
  • Take the preheated jelly roll pan out of the oven and drizzle some olive oil over entire surface. Cut the dough into 2 pieces and reserve 1 piece for another use. Stretch the pizza dough out so it is just bigger than the pan, then lay it inside the pan so the dough comes up the sides to form a crust on the rim.
  • Pour the potato mixture onto the pizza dough, then sprinkle with shredded fontina. Bake for 20 to 25 minutes until crispy and golden, about 20 to 25 minutes. Garnish with arugula and drizzle the lemon juice over the top. Serve immediately.
  • In a small bowl, combine the yeast, sugar and water and stir gently to dissolve. Let the mixture stand until the yeast comes alive and starts to foam, 5 to 10 minutes.
  • If you're using a stand mixer, combine the salt and flour to the bowl and pulse a few times to mix. Add the yeast mixture, at the lowest speed, until the flour incorporates. When the dough starts to come together, increase the speed to medium and mix until the dough gathers into a ball. This should take about 2 minutes. Add the olive oil and pulse a few more times. Stop the machine periodically to scrape the dough off the hook. Get a feel for the dough as you're making it by squeezing a small amount together between your thumb and fingers. If it's crumbly, add more water, if it's sticky, add more flour, 1 tablespoon at a time. Turn the dough out onto a lightly floured surface and fold it over itself a few times, kneading until it's smooth and elastic.
  • If you're making the dough by hand, add the yeast mixture to a large bowl and stir in the salt and the 2 tablespoons of olive oil. Then begin stirring in the flour. When the mixture becomes too stiff to stir with a spoon, knead in the rest of the flour by hand, adding just enough so that the dough is soft but not too sticky. As you work, squeeze a small amount of dough together between your thumb and fingers. If it's crumbly, add more water; if it's sticky, add more flour, 1 tablespoon at a time. Knead until smooth and elastic, about 10 minutes.
  • Form the dough into a round and put it into a lightly oiled bowl, turning it over to coat the dough entirely with the oil. Cover with plastic wrap or a damp towel and let it rise in a warm spot (i.e., over a gas pilot light) until it doubles in size, about 1 hour.

POTATO AND BACON PIZZA

3 slices bacon
1/4 cup extra-virgin olive oil
1 pound refrigerated pizza dough, at room temperature
1 1/2 pounds Yukon Gold potatoes (about 4 medium)
Kosher salt and freshly ground pepper
3 ounces Cambozola or blue brie cheese, rind removed, cut into 1-inch pieces
Chopped fresh chives, for topping

Steps:

  • Freeze the bacon on a plate until firm, 20 to 30 minutes (this will make it easier to chop). Dice the bacon and set aside.
  • Meanwhile, place a pizza stone or inverted baking sheet in the top third of the oven and preheat to 475 degrees F. Brush a large piece of parchment paper with 2 tablespoons olive oil. Stretch the pizza dough into an 11-by-15-inch rectangle on the parchment. Transfer the dough (on the parchment) to a pizza peel or another inverted baking sheet; set aside.
  • Peel and very thinly slice the potatoes with a mandoline or knife and place in a large microwave-safe bowl. Cover with plastic wrap and microwave until tender, 3 to 4 minutes. Uncover and toss the potatoes with the remaining 2 tablespoons olive oil, 1 teaspoon salt and a few grinds of pepper until fully coated.
  • Spread the potatoes all over the pizza dough, with a slightly thinner layer in the center. Top with the bacon. Slide the pizza (on the parchment) onto the hot pizza stone and bake until the crust is golden and the potatoes are tender and crisp around the edges, 30 to 35 minutes. Remove from the oven and dot with the cheese, then return to the oven and continue baking until the cheese just melts, 1 to 2 minutes. Sprinkle with chives.

1 lb of your favorite pizza dough
2 cups Simply Potatoes® Shredded Hash Browns
1 (7 ounce) jar bacon jam (I used Skillet Bacon Spread)
3 cups shredded mozzarella cheese, separated in half
4 eggs

Steps:

  • Place a pizza stone in the oven and preheat oven to 500°.
  • Take potatoes out of bag and place in a colander. Rinse and drain well. Place potatoes in a clean dish towel and wring dry.
  • Roll out pizza dough to a 10 - 12" round.
  • Spread rolled out dough with 2/3 of the bacon jam.
  • Top jam layer with one and a half cups of cheese.
  • Top cheese with hash browns.
  • Spread remaining cheese over hash browns.
  • Make 4 small depressions in each quadrant of the pizza.
  • Place 1 egg in each of the depressions.
  • Dollop remaining bacon jam around top of pizza.
  • Bake for 12 minutes, until egg white is cooked and yolk is runny.
  • Note: Everyone's oven bakes differently. My oven is temperamental and takes longer to bake the eggs. Keep an eye on your eggs while they bake and adjust cooking time accordingly.

1 lb frozen pizza dough, thawed
8 ounces yukon gold potatoes, thinly sliced
1/2 teaspoon salt
1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
1 cup shredded gruyere cheese

Steps:

  • Preheat oven to 475. Brush bottom of a 16 by 11 inch rimmed baking sheet with 1 tablespoons olive oil. Press and stretch dough evenly to cover bottom of sheet. ( If dough resists at first, let it rest for a minute before continuing.).
  • Toss potatoes with 1 tablespoons olive oil and scatter over dough. Sprinkle with salt. Scatter spinach over potatoes. Sprinkle with cheese.
  • Bake until underside of crust is golden ( lift an edge of pizza with a spatula to peek.) and cheese is bubbling, about 20 minutes. Let stand 5 minutes on a wire rack before slicing.
  • Tips: If Gruyere is too strong for your taste, substitute Jack cheese. Or give the pizza a Greek flair with crumbled feta. Sprinkle on chopped sun dried tomatoes and oregano, too.

Official Contest Entry: Simply Potatoes 5Fix. This recipe is a perfect combination of one of my favorite dishes, Sausage Gravy, and one of my husband's favorite side dishes, hash browns. The addition of the runny egg oozing down into the gravy and hash browns makes for one perfect breakfast dish.

20 ounces Simply Potatoes® Shredded Hash Browns
1 lb jimmy dean maple sausage
2 tablespoons flour
3 cups milk, I used whole milk
4 eggs

Steps:

  • Preheat oven to 400°.
  • Remove potatoes from bag and place in a colander. Rinse and drain well. Using a clean dish towel, place potatoes in towel and wring dry.
  • Divide potatoes among 4 ramekins. The ramekins I used were 5 1/2" rounds that were 2" deep. I got around 3/4 cup of potatoes into each ramekin.
  • Heat a large skillet over medium heat then add sausage. Cook until done, about 5 minutes.
  • Add flour and cook, stirring often, for 2 minutes.
  • Add milk slowly, stirring until incorporated. Bring to a boil and cook for 5 minutes, stirring often, until thickened.
  • Pour 3/4 cup gravy into each ramekin over the potatoes.
  • Crack one egg into each ramekin, on top of the gravy and place into oven and bake for about 20 minutes, or until egg white is set and yolk is still runny.
  • Note: Each oven bakes differently. Watch your eggs closely and adjust cooking time if needed.

SLOW-COOKER BACON JAM

1 1/2 pounds sliced bacon, cut crosswise into 1-inch pieces
2 medium yellow onions, diced small
3 garlic cloves, smashed and peeled
1/2 cup cider vinegar
1/2 cup packed dark-brown sugar
1/4 cup pure maple syrup
3/4 cup brewed coffee

Steps:

  • In a large skillet, cook bacon over medium-high, stirring occasionally, until fat is rendered and bacon is lightly browned, about 20 minutes. With a slotted spoon, transfer bacon to paper towels to drain. Pour off all but 1 tablespoon fat from skillet (reserve for another use); add onions and garlic, and cook until onions are translucent, about 6 minutes. Add vinegar, brown sugar, maple syrup, and coffee and bring to a boil, stirring and scraping up browned bits from skillet with a wooden spoon, about 2 minutes. Add bacon and stir to combine.
  • Transfer mixture to a 6-quart slow cooker and cook on high, uncovered, until liquid is syrupy, 3 1/2 to 4 hours. Transfer to a food processor; pulse until coarsely chopped. Let cool, then refrigerate in airtight containers, up to 4 weeks.

I saw this thing called Bacon Jam being served on one of the episodes of Eat St. on Food Network. So off I went in search of a recipe and found this one by Not Quite Nigella. I did make a slight adjustment.

1 lb smoked bacon, sliced into small pieces (or use regular bacon and liquid smoke)
4 garlic cloves, chopped
1 medium brown onion, sliced
3 tablespoons brown sugar
Tabasco sauce (according to taste and optional)
1 cup brewed coffee
1/4 cup apple cider vinegar
1/4 cup maple syrup
black pepper
extra water

Steps:

  • In a non stick pan, fry the bacon in batches until lightly browned and beginning to crisp.
  • Fry the onion and garlic in the rendered bacon fat on medium heat until translucent.
  • Transfer the bacon, onion and garlic into a heavy based cast iron pot and add the rest of the ingredients except for the water.
  • Simmer for 2 hours adding 1/4 of a cup of water every 25-30 minutes or so and stirring.
  • When ready, cool for about 15-20 minutes and then place in a food processor. Pulse for 2-3 seconds so that you leave some texture to the "jam" or of course you could keep whizzing and make it a smoother and more paste like.
  • Serve on your favorite burger, grilled cheese, as an appetizer on crusty bread.
  • The possibilities are endless.
  • Enjoy.

500g smoked bacon lardons
1 large white onion , finely sliced
2 garlic cloves , crushed
85g light brown sugar
2 tbsp cider vinegar
1 tbsp bourbon whiskey
2 tbsp maple syrup
100ml freshly brewed strong black coffee

Steps:

  • Fry the bacon in a large non-stick pan for 5-10 mins mins until golden and crisp. Remove with a slotted spoon and transfer to a plate, leaving the fat in the pan.
  • Turn the heat to low and cook the onion in the bacon fat for 15-20 mins until soft and starting to brown. Stir in the garlic, sugar, cider vinegar, bourbon, maple syrup, coffee and the bacon.
  • Cook slowly for 25-30 mins, stirring occasionally until thick and syrupy. Turn off the heat, leave to cool for a few mins, then carefully tip everything into a food processor. Pulse briefly to chop into small pieces, then leave the mixture to cool before packing it into two sterilised jars. Will keep for up to one month in the fridge.

I found this recipe in the Feb/Mar 1999 issue of Taste of Home magazine. When I told my family that we were having "potato pizza" for dinner, they looked at me like I'd lost my mind. But now, they request it often! I have modified the original recipe slightly. I added garlic to the mashed potatoes and I don't pre-bake the crust at all. Every time I serve this I get rave reviews. Leftovers are just as tasty reheated the next day.

3 large potatoes, peeled and cubed
1 (10 ounce) package prepared pizza crust
1/4 cup milk
1 tablespoon garlic powder
1/2 teaspoon salt

1 1/2 cups shredded mozzarella cheese
1 1/2 cups shredded cheddar cheese

Steps:

  • In large saucepan or dutch oven, boil potatoes until very tender.

  • Spread over crust.
  • In a skillet, partially cook the diced bacon.
  • Add onion and red pepper; cook until tender and bacon is crisp.
  • Drain well.
  • Sprinkle bacon and vegetables over potatoes.
  • Top with cheeses.
  • Bake at 375 degrees for 20 minutes.
  • Serve with sour cream if desired.
