1/4 cup sun-dried tomatoes in oil
1 cup fresh basil
1/2 cup parmesan cheese
1/4 cup pine nuts
1/4 cup oil
3 cloves garlic
salt and pepper
1 package Barilla Penne Ready Pasta

Steps:

  • In a food processor combine sun dried tomatoes, basil, parmesan cheese, pine nuts, oil, garlic, salt and pepper. Pulse until smooth.
  • In a medium skillet add the pesto over medium heat to warm. Cook the pasta in the microwave according to package directions. Carefully open the package and add to the pesto and toss until coated. Serve.

12 ounces penne pasta
1 (8.5-ounce) jar sun-dried tomatoes packed in olive oil
2 garlic cloves
Salt and freshly ground black pepper
1 cup (packed) fresh basil leaves
1/2 cup freshly grated Parmesan

Steps:

  • Cook the pasta in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally, about 8 minutes. Drain, reserving 1 cup of the cooking liquid.
  • Meanwhile, blend the sun-dried tomatoes and their oil, garlic, salt and pepper, to taste, and basil in a food processor and blend until the tomatoes are finely chopped. Transfer the tomato mixture to a large bowl. Stir in the Parmesan.
  • Add the pasta to the pesto and toss to coat, adding enough reserved cooking liquid to moisten. Season the pasta, to taste, with salt and pepper and serve.

This is a recipe that I found online. I have modified this recipe slightly by adding bacon, mushroom and sunflower seed. It works equaly well with chorizo instead of bacon. Sunflower seed is optional, it gives a bit of texture to the dish.

340 g penne pasta
4 slices bacon
1/2 cup mushroom, sliced
20 g sunflower seeds
1 (240 g) jar sun-dried tomatoes packed in oil
4 garlic cloves
salt & freshly ground black pepper
1 cup fresh basil leaf
1/2 cup parmesan cheese, grated

Steps:

  • Cook the pasta as directed on the package. Drain and reserve 1 cup of the cooking liquid.
  • Chop bacon, fry gently in a frying pan.
  • Add mushrooms.
  • Blend the sun-dried tomatoes and their oil, garlic, and basil in a food processor and blend until the tomatoes are finely chopped.
  • Transfer the tomato mixture to a large bowl. Stir in the Parmesan.
  • Add the pasta, mushrooms and bacon to the pesto and toss to coat, adding enough reserved cooking liquid to moisten.
  • Season the pasta, to taste, with salt and pepper and serve.

Caramelized, crispy mushrooms take on the meaty flavor of bacon in this recipe. Put a few slices on toasted bread with sliced tomato and crisp lettuce for a vegetarian BLT. Or serve alongside a bowl of oatmeal for a great breakfast to jumpstart your day.

6 tablespoons vegetable oil
1 pound portobello mushrooms, cleaned and thinly sliced (about 1/8-inch thick)
2 tablespoons molasses
2 tablespoons low-sodium soy sauce
2 tablespoons brown sugar
1/2 teaspoon garlic powder
3/4 teaspoon smoked paprika
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 300 degrees F, line 2 baking sheets with parchment paper and line a third baking sheet or pan with paper towels. Brush each parchment-lined baking sheet with about 1 tablespoon of vegetable oil. Place the mushroom slices in a single layer, very close together, on the parchment and brush lightly with the remaining vegetable oil.
  • Bake the mushrooms until slightly softened and brown, 25 to 30 minutes, then flip the mushrooms over, rotate the pans in the oven and bake until the mushrooms are well-browned and the edges are crispy, another 30 to 35 minutes. Remove from the oven and transfer to the paper-towel lined baking sheet to dry for a few minutes. (Leave the oven on.)
  • In a large bowl, whisk together the molasses, soy sauce, brown sugar, garlic powder and paprika. Carefully toss the baked mushrooms in the marinade until evenly coated. Place half the marinated mushroom strips in a single layer (it's ok of they overlap) into a large metal steamer basket or colander that fits snugly into a large, heavy metal pot.
  • Prepare a stovetop smoker: Line the bottom of a large, heavy metal pot with foil. Place two large handfuls of applewood chips in the bottom of the pot. Place the pot over medium heat and use a lighter to light a few of the wood chips. Once the chips are smoking, place the mushroom-filled steamer basket or colander inside the pot, then place a tight-fitting lid on top. Allow the mushrooms to smoke for 5 to 10 minutes, depending on how strong of a smoky flavor you want. Repeat with the second batch.
  • After the mushrooms are smoked, return them to the baking sheets in a single layer. Sprinkle with salt and a few grinds of pepper and return to the oven until crisp, 3 to 5 minutes. Refrigerate in an airtight container for up to 5 days. Reheat in a low oven before serving.

400g penne (or other tube shape) pasta
250g pack chestnut or button mushrooms, wiped clean
8 rashers streaky bacon
4 tbsp pesto (fresh from the chiller cabinet if possible)
200ml carton 50% fat crème fraîche
handful basil leaves

Steps:

  • Cook the pasta in boiling water in a large non-stick saucepan according to pack instructions. Meanwhile, slice the mushrooms and snip the bacon into bite-size pieces with scissors or a sharp knife.
  • Reserve a few drops of the cooking water in a cup or bowl, then drain the pasta and set aside. Fry the bacon and mushrooms in the same pan until golden, about 5 mins. Keep the heat high so the mushrooms fry in the bacon fat, rather than sweat.
  • Tip the pasta and reserved water back into the pan and stir over the heat for 1 min. Take the pan off the heat, spoon in the pesto and crème fraîche and most of the basil and stir to combine. Sprinkle with the remaining basil to serve.

4 tablespoons extra-virgin olive oil
a 10-ounce package fresh white mushrooms, chopped fine (preferably in a food processor)
1 tablespoon Worcestershire sauce
1 tablespoon medium-dry Sherry if desired
1 garlic clove, minced and mashed to a paste with 1/4 teaspoon salt
1/4 cup pine nuts
1/4 cup freshly grated Parmesan
1/2 cup packed fresh parsley leaves, washed well and spun dry
1 pound penne rigate (ridged penne) or other tubular pasta

Steps:

  • In a 6-quart kettle bring 5 quarts salted water to a boil for pasta.
  • Make pesto:
  • In a 10- to 12-inch non-stick skillet heat 1 tablespoon oil over moderately high heat until hot but not smoking and sauté mushrooms with Worcestershire sauce, Sherry, and salt and pepper to taste, stirring, until liquid mushrooms give off is evaporated and mushrooms begin to brown, about 10 minutes.
  • In a food processor purée mushroom mixture with garlic, pine nuts, Parmesan, and remaining 3 tablespoons oil. Add parsley and blend until parsley is chopped fine. Pesto keeps, surface covered with plastic wrap, chilled, 1 week.
  • Cook pasta in boiling water until al dente. Reserve 1 cup cooking water and drain pasta.
  • In a large bowl whisk together pesto and 2/3 cup reserved hot cooking water. Add pasta and toss well, thinning pesto, if necessary, with remaining reserved cooking water.

250 g whole wheat linguine or 250 g other pastas, of your choice
6 slices bacon, chopped
12 medium mushrooms, sliced
3 hot chili peppers, seeded,deveined and chopped
1 teaspoon dried basil
6 sun-dried tomatoes packed in oil, drained & chopped
3/4 cup mild salsa, your choice
salt & pepper
parmesan cheese

Steps:

  • Cook Pasta according to instructions, plan to have it ready just as the sauce is finished.
  • Fry chopped bacon until almost crisp, drain fat.
  • Add mushrooms and saute for apprx 5 minutes.
  • Add Chilies, basil, sundried tomatoes and saute until heated through apprx 5 minutes.
  • Add salsa heat until bubbling.
  • Pour over drained cooked pasta & toss.
  • Sprinkle with parmesan cheese & I hope enjoy.

  • Fill a large pot with water and place over medium-high heat on the stove. Bring the water to a boil. Add salt generously. Add pasta and cook for 1 minute less than the package directions. Reserve 1 cup of pasta water in case you want to add it to the dish later. Set that aside.
  • While the pasta noodles are cooking you can toss your sun-dried tomatoes, the oil from the sun-dried tomatoes, the garlic, salt, white pepper, sweet basil, half of the parmesan cheese, and walnuts in a food processor. Pulse until smooth. If the mixture is still too thick add a touch of olive oil to start and pulse while adding the oil until you get the desired consistency you like. It's always best to start with a little, you can always add more but you can't take away. So go easy initially and add oil to taste if needed.
  • Transfer pesto to a large skillet or non-stick pan and heat on medium heat just before adding the cooked noodles. Then use a slotted spoon to lift out the noodles and transfer them to the large skillet or non-stick pan. Do not rinse the noodles.
  • Toss the pasta together in the skillet or non-stick pan. Start by adding about 1/4 cup of the reserved pasta water and then toss the pasta again. If you need more pasta water to thicken the pasta you can add until you get the desired thickness you like. I added almost all of it to mine to thicken it.
