BACON 'N' EGG LASAGNA
My sister-in-law served this special dish for Easter breakfast one year, and our whole family loved the mix of bacon, eggs, noodles and cheese. Now I sometimes assemble it the night before and bake it in the morning for a terrific hassle-free brunch entree. -Dianne Meyer, Graniteville, Vermont

- Preheat oven to 350°. In a large skillet, cook bacon until crisp. Remove with a slotted spoon to paper towels. Drain, reserving 1/3 cup drippings. In the drippings, saute onion until tender. Stir in the flour, salt and pepper until blended. Gradually stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat. , Spread 1/2 cup sauce in a greased 13x9-in. baking dish. Layer with 4 noodles and a third each of the eggs, bacon, Swiss cheese and remaining sauce. Repeat layers twice. Sprinkle with Parmesan cheese. , Bake, uncovered, until bubbly, 35-40 minutes. If desired, sprinkle with parsley. Let stand for 15 minutes before cutting.

Steps:
- To a pot with 2 cups (480 ml) of boiling water add the ramen seasoning packet and a tablespoon of butter. Stir until the butter melts and then add the ramen noodle cube and cook until the noodles become tender, 2 minutes. Pour the ramen into a bowl.
- Top the prepared ramen with the fried egg, bacon, and scallions and season with salt and pepper.
- Enjoy!

Steps:
- Heat oven to 375 degrees.
- Fry the bacon until it's crispy, drain on paper towels and crumble.
- Cook egg noodles as directed on package, drain and toss with the 2 tablespoons butter.
- In a 2 quart casserole layer as follows: 1/4 of the noodles, 1/4 of the sour cream, 1/4 of the cheddar cheese, 1/4 of the bacon and 1/4 of the onion.
- Repeat these layers 3 more times.
- Bake the casserole in preheated oven, uncovered for 30 minutes.

Steps:
- Cook egg noodles according to package directions.
- Fry bacon, remove from pan, and drain the fat, reserving a few tablespoons.
- After bacon has been removed from the pan, add onion and cabbage.
- Add a few tablespoons of the bacon fat and a few tablespoons of water.
- Cover and cook on high until cabbage and onions are tender.
- Combine all ingredients and add salt and pepper to taste.

Steps:
- In a large pot, add the olive oil and bacon and cook until starting to crisp. Drain and set the bacon back in the pot, reserving the bacon fat.
- In a large pan, add the butter, bacon fat and onions and saute until soft. Add the cabbage and cook until tender and slightly golden (cabbage will reduce substantially in volume). Add a drizzle of olive oil and season with salt and pepper.
- Cook noodles according to the package directions. Once cooked, drain (reserving some of the pasta water).
- Transfer the cabbage mixture to the pot with the bacon pieces, then add the noodles to the cabbage pot.
- Mix in the sour cream and toss to combine. Add some of the pasta water to moisten pasta, if required.
