Time 2h5m

Number Of Ingredients 14

pinch of saffron
2 tbsp sunflower or groundnut oil
800g braising lamb (such as shoulder), trimmed of excess fat
2 large onions, roughly chopped
4 plum tomatoes, roughly chopped
2 garlic cloves, chopped
½ tsp ground cinnamon
½ tsp allspice
250ml lamb or chicken stock
100g dried apricots
125g cooked chestnuts (canned or vacuum-packed)
½ lemon, juiced
½ tsp sumac
15g coriander, leaves picked and roughly chopped

Steps:

  • Put the saffron in a heatproof cup and pour over 75ml boiling water. Leave for 30 mins, or until the water is a deep yellow colour.
  • Heat the oil in a heavy-bottomed saucepan, and brown the lamb all over - you'll need to do this in batches. Transfer the browned lamb to a bowl using a slotted spoon as you continue cooking the rest.
  • Fry the onions in the residual fat in the pan over a medium-low heat for 10-12 mins until golden and soft. Add the tomatoes and garlic, and continue to fry until the tomatoes have softened. Stir in the spices and cook for a few minutes, then return the lamb to the pan with some seasoning. Pour in the stock and infused saffron water. Bring to just under the boil, then add the apricots, chestnuts, and a little more seasoning. Reduce the heat to a simmer, cover and cook over a very low heat for 1 hr-1 hr 15 mins until the lamb is tender. At this stage, the lamb can be frozen. Leave to cool completely first, then transfer to a freezer proof airtight container. Will keep in the freezer for up to three months.
  • To serve straightaway, stir in the lemon juice, sumac and coriander. Alternatively, if you have frozen the lamb, defrost in the fridge overnight, then transfer to a saucepan and heat gently. When it is piping hot, add the lemon juice, sumac and coriander. Taste to check for seasoning, then serve.

LAMB WITH APRICOTS

Lamb with Apricots image

When I was a new bride, I decided to prepare a special Hanukkah for my husband, David, and me to share. The star was this lamb entree, which had been one of my favorites when I was growing up. Dried apricots add a touch of sweetness to the tender lamb, which is gently spiced.-Rachel Delano, Tappahannock, Virginia

INDIAN-STYLE LAMB SHANKS WITH DRIED APRICOTS

Indian-Style Lamb Shanks With Dried Apricots image

This recipe was part of lamb feature in our local/state paper The West Australian. Times are estimated and will depend to on the size of your shanks, on average ours are about 500g (not french trimmed) and normally takes closer to the 2 /12 hours, french trimmed are usually 300g to 400g and would take about the 2 hours. I personally would use a greek style yoghurt as I have found it cooks better and doesn't tend to split.

Time 3h30m

Yield 6 serving(s)

Number Of Ingredients 16

6 lamb shanks (preferable french trimmed)
3 tablespoons vegetable oil
4 garlic cloves (finely chopped)
1 tablespoon ginger (freshly grated)
1 brown onion (large finely chopped)
1 chili (red large finely chopped)
2 teaspoons fennel seeds
1 tablespoon ground turmeric
2 teaspoons ground cardamom
1 tablespoon honey
3 tablespoons tomato paste
2 (400 g) tomatoes (canned)
2 cups water
2 cups plain yogurt
1 cup dried apricot
3 tablespoons coriander (leaves)

Steps:

  • Heat oil in a large pot and then add the garlic, ginger, onion and chilli.
  • Cook for a few minutes to soften the onion and then add the fennel, turmeric and cardamom.
  • Next add the lamb shanks coating well with spice mixture and cook for 5 minutes.
  • Now add the honey, tomato paste, canned tomatoes and water and bring to the boil and lower to a simmer for 2 to 2 1/2 hours or until meat is tender (I prefer nearly falling of the bone).
  • Alternatively you could put it in a 160c fan forced or 180C non-fan forced oven for the 2 to 2 1/2 hours.
  • Add the yoghurt and apricots and simmer for another 15 minutes.
  • Stir through the coriander leaves just before serving.
  • Recommend serving with basmati rice and spicy chutney.

AZERBAIJANI LAMB WITH CHESTNUTS RECIPE | EAT YOUR BOOKS
This was an intriguing and delicious lamb stew that I served over rice studded with chestnuts. As the recipe header indicates, it is in the vein of a sweet and sour flavor combination from the pomegranate juice/molasses, which is appealing to me but may not be to those who are generally suspicious of fruit/meat combinations.
