We built this recipe from a lot of trial and error and a little experimentation with the wine selection. It has a sweet flavor with just a little zing to keep things interesting. Great for all types of italian dishes. We even used it for Italian sausage bombers.

3 tablespoons olive oil
1 Spanish onion, chopped
¼ green bell pepper, chopped
4 cloves garlic, finely chopped
2 tablespoons brown sugar
2 teaspoons Italian seasoning
2 teaspoons salt
1 teaspoon dried oregano
1 teaspoon dried basil
½ teaspoon ground black pepper
¼ teaspoon red pepper flakes
4 (14.5 ounce) cans diced tomatoes
1 (14 ounce) can tomato sauce
2 (6 ounce) cans tomato paste
1 cup white wine

Steps:

  • Heat olive oil in a large pot over medium heat; cook and stir onion, green bell pepper, and garlic until onion is translucent, 5 to 10 minutes. Add brown sugar, Italian seasoning, salt, oregano, basil, black pepper, and red pepper flakes; cook and stir until brown sugar dissolves and seasoning is fragrant, 1 to 2 minutes.
  • Stir tomatoes, tomato sauce, tomato paste, and white wine into the seasoned onion mixture; bring to a boil for 10 minutes. Reduce heat and simmer, stirring occasionally, until flavors have blended, at least 30 minutes.

2 tablespoons olive oil
3 cloves garlic, minced
1 (28 ounce) can crushed tomatoes
1 (28 ounce) can tomato puree
2 ½ tablespoons dried oregano
2 ½ tablespoons dried parsley
¼ cup grated Romano cheese
⅓ cup grated Parmesan cheese
2 bay leaves
1 teaspoon onion powder

Steps:

  • Heat oil in a large saucepan over medium heat. Saute garlic until aromatic and tender. Stir in crushed tomatoes, tomato puree, oregano, parsley, Romano cheese, Parmesan cheese, bay leaves and onion powder. Reduce heat to low and simmer for at least 40 minutes.

1 tablespoon olive oil
2 garlic cloves, finely chopped
1/2 small onion, chopped
1 (28 ounce) can diced tomatoes, undrained
2 tablespoons chopped fresh basil or 1 teaspoon dried basil leaves
2 teaspoons chopped fresh oregano or 1/2 teaspoon dried oregano leaves
1/2 teaspoon sugar
1/4 teaspoon salt
1 dash pepper
hot pasta
fresh-grated parmesan cheese

Steps:

  • In a large saucepan, sauté garlic and onion in olive oil until onion is tender.
  • Stir all remaining ingredients in with onion mixture; heat to boiling; reduce heat and simmer, uncovered, for 45 minutes, stirring occasionally.
  • Carefully puree hot sauce in in a food processor or blender; serve hot over cooked pasta and top with fresh-grated Parmesan cheese.

1 (16 ounce) can tomato sauce
1/2 cup chopped onion
1 teaspoon minced garlic
1 teaspoon dried basil
1/2 teaspoon dried rosemary
1/4 teaspoon oregano
1 teaspoon sugar
2 tablespoons olive oil
salt
pepper

Steps:

  • Heat olive oil over medium heat in medium-sized saucepan.
  • Saute onions and garlic until brown.
  • Add tomato sauce and stir.
  • Lower heat to medium-low.
  • While stirring, add rosemary, basil and oregano.
  • Allow sauce to bubble.
  • Sprinkle with sugar and mix again.
  • Season to taste with salt and pepper.

1/2 cup chopped onion
2 garlic cloves, minced
1 tablespoon olive oil
1 (28 ounce) can tomatoes, cut up
1/4 cup dry red wine (optional)
1/4 teaspoon salt
1/8 teaspoon cayenne pepper
1/8 teaspoon ground black pepper
1/2 cup snipped fresh basil
2 teaspoons sugar

Steps:

  • In a medium saucepan, cook onion and garlic in hot oil over medium heat until onion is tender.
  • Stir in undrained tomatoes, wine (if you like), salt, cayenne pepper and black pepper.
  • Bring to boiling; reduce heat.

1 (28 ounce) can crushed tomatoes
2 sprigs fresh oregano, chopped fine (about 1 Tablespoon)
1/4 cup flat leaf parsley, chopped fine
12 -15 leaves fresh basil, sliced thinly (I usually stack them and use a scissors)
coarse salt and black pepper (to taste)

Steps:

  • Heat deep skillet over medium-low to medium heat.
  • Add oil and garlic and crushed pepper flakes.
  • Let garlic begin to sizzle in oil (stir frequently to keep garlic from browning and turning bitter).
  • Add tomatoes and crushed tomatoes.
  • Stir in herbs and spices and let sauce come to a boil.
  • Reduce heat and let sauce simmer 10 minutes or until ready to serve.
  • Serve over your favorite pasta.
