Steps:
- Place the potatoes and garlic in a large sauce pan. Cover with 1 to 2 inches cold water and season generously with salt. The water should taste like the sea. TASTE IT! If the water is under seasoned at this point it will be hard to have a well seasoned end product. Bring the pot of water to a boil and cook until the potatoes are fork-tender, about 20 to 25 minutes. Drain the potatoes and garlic well and pass through a food-mill or ricer. DO NOT use a food processor or blender. It will result in a very sticky and rubbery end product.
- While passing the potatoes, bring the heavy cream to a boil in a small saucepan. Once the cream has come to a boil remove from the heat.
- While the potatoes are still hot add 1/3 of the cream and butter and stir vigorously into the potatoes. Repeat this process 2 more times until all of the cream and butter has incorporated. Taste the potatoes for seasoning and add salt, if needed. Serve immediately or cover with foil and keep warm in an oven on low heat.
GARLIC MASHED POTATOES
These garlic mashed potatoes are rich and very tasty! For a creamier texture, use heavy cream in place of the milk. These are also terrific topped with green onions.

SIMPLE GARLIC MASHED POTATOES
This is a fairly quick and simple version of garlic mashed potatoes. It goes well with just about any kind of meat or poultry, as well as many other meals. If you want to make this vegan or fleishig, reserve some of the cooking liquid to use in place of milk, and replace the butter with margarine.

Steps:
- Place potatoes and garlic into a large saucepan full of cold water. Bring to a boil over high heat, reduce heat to medium, and boil for about 10-12 minutes. Check potatoes for doneness by poking a few wedges with a fork or skewer--if still firm, cook another minute or two and check again. Repeat until tender. Drain, taking care not to lose garlic cloves. Return potatoes to warm pot.
- Mash potatoes. Do not overwork, or potatoes will be tough (it's okay if there's a few lumps--it just means these are real potatoes, not from a box). Make sure to smash up the garlic, or pull out the cloves and squeeze in a garlic press.
- Add some butter, to taste (I usually use 2-3 T), and salt and pepper, also to taste. Mix until butter has melted.
- Add a little hot milk and beat it into the potatoes. Continue until potatoes are desired creaminess (the amount I use varies, but I usually use between 1/4 and 1/2 cup, give or take a bit).
- Cover pot with foil to keep warm until ready to serve. Potatoes will stay hot for 10-15 minutes this way.
- Serve with a pat of butter in an indentation on top.

AMAZING MASHED POTATOES
When I was growing up, my parents always made mashed potatoes from flakes.... ugh! It was such a treat to go to our grandparents house on holidays. Grandpa made his potatoes by hand with his special recipe that no one else has been able to match. I made it a point to help him get the potatoes ready for big dinners until I learned his recipe by heart. A few years ago, I volunteered to make them for my in-laws' Thanksgiving party. Word spread... and now I'm the designated potato maker for EVERY function on BOTH sides of the family. It's okay though... it's an honor... and I can't get enough of them myself!

Steps:
- Peel and rinse potatoes, and cut them into small chunks (approximately 1 inch cubes.) Bigger chunks take longer to cook.
- Put potato chunks into a large stock pot.
- Add the carton of chicken stock to the potatoes in the pot. (If you want, you can save a little of the chicken stock to add to the potatoes after they've been drained later on. It gives a little more flavor -- )
- Sprinkle about 1 tablespoon of salt over the potatoes and fill the pot with water just until potatoes are covered.
- Boil the potatoes until the chunks are soft enough to break apart when poked with a fork.
- Drain the potatoes.
- While potatoes are still hot, add the butter, sour cream, and cream cheese. If you saved any of the chicken stock, you can add that now. Just make sure it's been heated well, especially if it's homemade. I always start with 1/2 cup butter, 1 cup of sour cream, and 1/2 of the cream cheese. After it's melted and mixed in, you can go back and add more if you want. I end up using different amounts almost every time -- just more until it tastes right. I generally mash the potatoes a little by hand, and then use a hand mixer to finish the job. Don't whip the potatoes too long, though, or they'll lose their texture. They should stay thick and not be too smooth.
- Sprinkle salt over potatoes to taste, and stir in well.
- The resulting mashed potatoes should be fairly thick, perhaps just a little on the lumpy side. If you absolutely must have them a little more runny, you can add some milk (1/4 cup at a time) and whip with a hand mixer until you get the desired consistency.
- Make sure to serve them while they're warm! I usually double this recipe for holidays, and I haven't taken home any leftovers yet -- .

GARLIC MASHED POTATOES
I was always wanting the Garlic mashed potatoes I ate in restaurants to have more garlic. My mom has always used evaporated milk and everyone really loves her mashed potatoes. I decided to use her technique and seriously increase the garlic content to come up with the flavor that I thought a Garlic Mashed Potato dish should have. Simmering the garlic with the potatoes smooths out the harsh garlic taste while perfuming the potatoes with an abundance of garlic. I also wanted the dish to be very easy to size upwards for company. You can do this very easily for every two additional potatoes you use. By the way... My husband told me I had errors in my recipe. To make it absolutely correct preface each of the steps with Make Husband...
