AWESOME BACON-TOMATO-CHEESE SPREAD
Super delicious and so pretty for a get-together. I use 3 Roma tomatoes or 1 large vine-ripened (in the summer). Feel free to add other layers or switch ingredients. (chopped olives would be nice.) Note: Cooking time is refrigeration time. Enjoy--

Shake any excess liquid from the tomatoes; distribute the zucchini and tomatoes among the toasts. Dot with the reserved cheese mixture and season with pepper. Bake until golden brown, 15 to 20 minutes. Serve warm.

Oh, you HAVE to try this one!! My family LOVES dips and spreads, and even the guys got really into this one. I even caught my uncle (who thinks guys are too "macho" for dips), eating it straight from the bowl with a spoon!! Best when made day of, and lettuce added just before serving. It gets soggy:(
