CREAM OF AVOCADO SOUP



Cream of Avocado Soup image

A creamy, savory summer soup that is ready in less than 30 minutes. This cream of avocado soup uses much less cream than typical cream soups because avocados are so creamy on their own.

Number Of Ingredients 8

2 cloves garlic (minced)
½ yellow onion (minced)
2 cups chicken broth (divided)
2 large avocados (pitted and peeled and cut into cubes)
1 tbsp lime juice
¼ cup cilantro leaves
salt and pepper (to taste)
½ cup heavy cream

Steps:

  • Add garlic and onions and ¼ cup of chicken broth to soup pot and bring to medium high heat. Cook garlic and onions until garlic is lightly browned and onions are translucent.
  • Add in remaining chicken broth, avocados, lime juice and cilantro. Bring to a simmer and cook 5-10 minutes, until all the flavors come together. Season with salt and pepper, to taste.
  • Pour soup into blender. Blend until smooth. Add in cream and blend slowly just until cream is incorporated.
  • Serve soup immediately. If desired, garnish with fresh slices of avocado, cilantro, and a swirl of sour cream.

Avocado soup is a delicious no-cook soup recipe that takes only minutes to make. Its fresh flavor and creamy texture make it both summery and cozy. Serve it chilled, straight from the blender, or warm it gently on a cool day.

4 cups stock (see notes)
¼ cup fresh lime juice
¼ cup cilantro
2 ripe avocados (skin and sead removed)
2 green onions (green part only)
1 clove garlic
1 teaspoon sea salt
¼ teaspoon ground cumin
Optional toppings: diced avocado, toasted pepitas, hot sauce or chili oil, croutons, crispy bacon, cilantro

Steps:

  • Place the ingredients into your blender and blend on medium-high speed until smooth. Taste and add more salt, if wanted. If you'd like warm soup, pour it into a pot and heat it gently on medium heat. Do not let it boil.
  • Serve on its own or with any of the optional toppings.

No Cook Avocado Bisque (Rachael Ray) image

A great summer time soup. 30 minute meal by Rachael Ray. I serve mine aside a wedge salad topped with blue cheese dressing. Fabulous! If you are looking to save a little time, simply place a dollop of salsa on the top and sprinkle with feta. NOTE: I made this today and I suggest that you use 2 large avocados in the soup itself (not just 1 as per the recipe). I also recommend that you just use 1 cup (more or less) to thin out the soup instead of crushing ice cubes (not sure why you do that when you put it in the fridge to chill anyway). Lastly, we LOVED the crumbled feta on the top (actually made the dish to be honest) so don't leave this step out.

2 large avocados
2 cups buttermilk
4 scallions, green and white parts sliced separately
1 lemon, juice and rind of, grated
16 ice cubes
salt
1 lb tomatoes, coarsely chopped
3 ounces feta cheese, crumbled
6 ounces tortilla chips

Steps:

  • Using a blender, puree 1 avocado, the buttermilk and scallion whites.
  • Add the lime peel and three-quarters of the lime juice.
  • With the machine on low speed, blend in the ice cubes, 1 at a time, until smooth.
  • Season with salt; refrigerate.
  • Meanwhile, coarsely chop the remaining avocado and transfer to a medium bowl.
  • Add the tomatoes, feta cheese, scallion greens and the remaining lime juice.
  • Divide the soup among 4 bowls. Top with the avocado salad and tortilla chips.
  • Serve with the remaining tortilla chips on the side.

1 Tablespoon unsalted butter
2 Small celery ribs, chopped
1 small onion, chopped
1 small zucchini, chopped
1 jalapeno pepper, seeded if desired, minced
2 cups Chicken stock or vegetable stock
½ teaspoon ground cumin
½ teaspoon dried mint
2 large ripe avocados, peeled and pitted
1/3 cup whipping cream
salt

Steps:

  • 1. Melt butter in the pressure cooker over medium heat. Add the celery, onion, zucchini, and jalapeno. Cook uncovered until vegetables begin to soften, 3 to 4 min. Add stock, cumin and mint. 2. Cover and bring up to high pressure. Reduce heat to stabilize pressure and cook 5 minutes. Release pressure. 3. Puree the contents of the cooker in a blender or food processor. Add the avocados and blend again until smooth. Transfer to a serving container and stir in cream and salt to taste. Serve hot or chilled.

I am not sure where this came from. It was one of the many recipes in my Mothers Soup binder. I fixed it one evening when I was having neighbors over. I did double it and it worked just fine. The recipe below is the original one.

1 medium cucumber, peeled, seeded
1/2 medium avocado
3 green onions, chopped
1 cup chicken stock
1 cup sour cream
2 tablespoons lemon juice
1/2 teaspoon salt

Steps:

  • Blend all ingrediants in food processor for 10-15 seconds. cover and chill.
  • serve in mugs or soup bowls. garnish with a little paprika or fresh chopped parsley.
