- In a toaster, heat the bread slices until golden brown. Alternatively, place the sliced bread on a baking sheet. Set the oven rack 6-inches from the top broiling element. Broil the bread until golden brown, about 1 to 3 minutes per side, keep a close eye on the color change.
- Scoop out both sides of the avocado flesh into a small bowl. Add lemon juice, salt, and pepper. Lightly mash the avocado with a fork, leaving some chunks. Divide the mixture onto the toasted bread. Drizzle some olive oil on top, season with salt, pepper, and garnish with parsley.

Add pieces of smoked salmon, red onions, capers, and dill leaves. Season with black pepper.
- Cook bacon in a nonstick skillet over medium heat until crisp, about 3 to 4 minutes per side. Transfer to a plate lined with a paper towel.
- Scoop out both sides of the avocado flesh into a small bowl. Add lemon juice, salt, and pepper on top of the avocados. Lightly mash with a fork, leaving some chunks. Evenly divide the mixture onto the toast. Place 2 strips of bacon on each piece of toast.
- Heat olive oil in the nonstick skillet over medium heat. Once hot, crack the egg in the pan, cook until the white is set, about 1 to 2 minutes. Transfer egg to the toast and repeat with the other egg. Season with black pepper.
- Cut the avocado down the center and remove the pit. Scoop out both sides of the flesh and slice into ¼-inch thick slices. Spread the cream cheese over the toasted bread slices. Layer the slices of avocado overlapping on top. In a small bowl mix together the white sesame seeds, black sesame seeds, poppy seeds, salt, garlic, and onion. Sprinkle ¼ to ½ teaspoon of the seasoning mix on top of the sliced avocado.

BACON-AVOCADO TOAST BAR
Steps:
- Preheat the oven to 400 degrees F.
- Drizzle the bread slices with 1/4 cup of the olive oil. Place the bread on a baking sheet and bake until golden brown, 12 to 15 minutes.
- Mash the avocados in a small bowl. Add 2 tablespoons each of the chives and parsley, the lemon juice, 1/2 teaspoon kosher salt and 1/2 teaspoon pepper; mix until fully combined.
- Toss the tomatoes, the remaining 1 tablespoon each olive oil, chives and parsley, 1/2 teaspoon kosher salt and 1/4 teaspoon pepper in a small bowl.
- Spread each slice of bread with 1/2 cup of the avocado mixture and 1/8 cup of the tomato mixture. Sprinkle with the chopped bacon and flaky sea salt.

AVOCADO AND LIME WITH BACON ON TOAST
Hardly qualifies as a recipe it's so simple, but its charm as a breakfast, brunch or lunch dish is in its simplicity, in the contrasting tastes and textures of the avocado, lime and bacon, and in the contrast between the coolness of the first two ingredients and the warmth of the bacon. I'm posting this recipe so that those who have never tried it can do so and to remind those - like me - who haven't made it for a while but know how delicious it is, to make it again. This version of the recipe serves the avocado and bacon on toast. Avocado and bacon is equally delicious in untoasted, really fresh crusty bread - or in whatever is your favourite bread. I came across this particular version of it today in a magazine, the April edition of "Super Food Ideas". With its combination of avocado and lime juice, this recipe echoes Mexican dishes, but without the heat!

- Halve, deseed and peel the avocados.
- Slice lengthways into 1 cm thick slices.
- Place in a large bowl, drizzle with lime juice and season with pepper and salt.
- Toss gently to coat with the lime juice. Set aside for ten minutes.
- Preheat the grill on a medium-high heat.
- Cut bacon rashers in half, unless your have bought middle rashers in which case they are probably just the right size.
- Place the bacon on the grill in a single layer.
- Grill for 2 to 3 minutes on each side or until the bacon is beginning to crisp.

- Get out and measure your ingredients.
- Slice avocado down the middle to open. Spoon out all of the avocado from both shells into a small mixing bowl.
- Mix in lemon juice, lime juice, salt and pepper.
- Mix well. Taste and adjust ingredients if desired.
- Boil 6 cups of water. Once boiling, crack both eggs open, and gently drop into boiling water. Boil each egg for exactly 3.5 minutes. When time is up, gently remove each egg with a slotted spoon and place on a paper towel to dry.
- Spread your avocado mixture evenly over slices of bread.
- Sprinkle the bacon bits overtop.
- Place one egg on each slice of toast.
- Serve immediately.
- With sriracha drizzled on top of each slice, if desired.
