AUTUMN DELIGHT COFFEE

As the leaves change to glorious rust and pumpkin and ruby reds in regions blessed with a "true autumn", the desire for something spicy to drink while watching the theatre of the changing leaves is definitely on order. This drink makes the grade, and then some.

4 cups brewed strong coffee
1 cinnamon stick
8 whole cloves
1 orange strip, peeled as one long strip from one orange, white pith removed
4 ounces orange juice, from the same orange (or orange liqueur)
brown sugar cube, to taste

Steps:

  • In a medium saucepan, simmer together the coffee, spices, and orange rind, about five minutes, taking care not to boil.
  • Strain the liquid through a fine-meshed sieve into four mugs.
  • Add orange juice, stir and add sugar to taste.
  • For extra oomph, add orange liqueur instead of juice.

Apple Cider, Galliano a herb filled liqueur, kicked up with vodka. The herbs come through in this drink, in particular the anise.

1 ounce vodka (Apple vodka,or Cinnamon vodka if possible)
4 ounces apple cider, more if needed

Steps:

  • Pour into a glass filled with ice, stir and enjoy!
  • Garnish with apple slices.

SLOW COOKER AUTUMN DELIGHT

The basic recipe was handed down from a friend. I added the sliced onion and substituted the 3 cans of cream of mushroom soup with 1 can of cream of mushroom soup with garlic and 2 cans of cream of mushroom soup original. I also added the egg noodles which serves the gravy texture wonderfully.

2 (10.75 ounce) cans cream of mushroom soup
1 (10.75 ounce) can cream of mushroom soup with garlic
1 cup water
1 (1 ounce) package dry onion soup mix (such as Lipton®)
2 teaspoons vegetable oil
1 yellow onion, sliced
4 (4 ounce) beef cube steaks
⅔ (12 ounce) package egg noodles

Steps:

  • Whisk cream of mushroom soup, water, and onion soup mix in a slow cooker until thoroughly combined.
  • Heat vegetable oil in a large skillet over medium heat; cook and stir onion in the hot oil until browned, about 20 minutes. Transfer onion to a bowl, leaving oil in skillet.
  • Brown cube steaks in the hot skillet, about 5 minutes per side. Place cube steaks into slow cooker and top with onions. Cook on Low until cube steaks are tender, 5 to 6 hours.
  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally, until cooked through but firm to the bite, about 5 minutes. Drain. Serve cube steaks and mushroom gravy over egg noodles.

Cubed steaks are cooked in a familiar blelnd of cream of mushroom soup and dry onion soup. This makes a delightful gravy that is great over mashed potatoes or noodles. Recipe comes from one of those supermarket checkout stand recipe booklets put out by the Crockpot people.

1 tablespoon olive oil
4 -6 cube steaks
1 (1 ounce) envelope dry onion soup mix
1 cup water
2 (10 3/4 ounce) cans condensed cream of mushroom soup, undiluted
hot cooked mashed potatoes, noodles or rice

Steps:

  • Heat oil in a large skillet over medium heat until hot. Lightly brown steaks on both sides. Transfer to crockpot.
  • Combine onion soup mix, water, and soup in a large bowl. Mix well. Pour over steaks. Cover and cook on LO heat for 4-6 hours.
  • Serve over hot mashed potatoes, noodles or rice.
