This Mexican-style homemade salsa is fresh, unbelievably delicious, easy to make and seriously the best homemade salsa recipe you'll ever have.

Number Of Ingredients 6

6 ripe medium tomatoes (stem removed)
2 - 4 jalapeno or serrano chiles (or more for additional heat)
1/2 medium onion (diced)
1/3 cup fresh cilantro (chopped)
1 tablespoon of lime juice (or more to taste)
Salt to taste

Steps:

  • Heat a large cast iron skillet or a heavy-bottomed skillet over high heat. Add the tomatoes and the chiles to the pan and char on all sides, rotating the vegetables occasionally until blackened. This can take about 6 minutes for the chiles and 10 to 15 minutes for the tomatoes. The tomato skins should begin to pull away from the flesh and the chiles will look blistered.
  • Transfer the chiles to a cutting board and allow them to cool. Place the tomatoes, including any charred skin that has completely fallen off, in the bowl of a food processor or blender. Pulse a couple of times for about 10 seconds or until the tomatoes are blended but with a few small chunks for texture.
  • Transfer the blended tomatoes to a bowl. Cut the charred chiles in half lengthwise and remove the stems and seeds. You can remove the ribs if you don't like the salsa too spicy. Chop the chiles into small dice.
  • Mix the chiles, onions and cilantro with the tomatoes until combined. Stir in the lime juice and salt. Taste and season with additional lime juice and salt, if needed. Cover and refrigerate until cooled. Serve with chips.

11 -15 dried arbol chiles (8-10 dried arbol peppers for Mild, 11-15 medium, 16-20 for Hot)
1 (14 ounce) can DelMonte stewed tomatoes, with juice
1/2 small yellow onion
1 jalapeno
1 bunch cilantro
1 garlic clove
1 teaspoon lemon juice or 1 teaspoon lime juice
1/2 teaspoon pepper
1/2 teaspoon salt

Steps:

  • Take the stems off the peppers and throw away the stems.
  • Place the peppers and seeds in the bender. Blend well.
  • Next toss in the stewed tomatoes with juice, 1 jalepeno (sliced), 1/2 yellow onion (quarterd), 1 garlic clove, handful of cilantro, lemon juice, salt and pepper and blend til you have the consistancy desired.
  • I dont like my salsa chunky, thats what Pico De Gallo is! I also dont want it to runny so it runs off your chips, so i just "pulse" it a few times.
  • If you feel the salsa looks to white from the onion this just means you need to add more cilantro to your salsa. Try the salsa with your chips and adjust the seasonings as needed.
  • Refridgerate for at least 1 hour before serving.

This is an authentic mexican style table salsa. I have spent years perfecting this to achieve the taste of the salsas I had while in Mexico. It's a smooth table salsa which is typical of authentic mexican table salsa. You can make it as mild or hot as you like by adding or reducing the amount of chiltepines or chile pequins. Enjoy!

1 (28 ounce) can whole peeled tomatoes with juice
1/4 white onion
1 tomatillo, husk removed
1 serrano pepper
1 1/2-2 teaspoons salt (start at 1 1/2 and add to taste)
1/2 teaspoon sugar
1/2 teaspoon granulated garlic
3/4-1 teaspoon fresh minced garlic
3 chilies, de arbols (stems removed)
8 chilies, pequins
8 chiltepin chilies
1/2 cup water (from boiling vegetables)
12 fresh oregano leaves
10 fresh cilantro leaves

Steps:

  • In medium saucepan add onion, tomatillo and serrano and enough water to cover. Bring to a boil and boil until tomatillo is soft and changes color to a more yellow color (about 10 minutes). While these are boiling, add a few tablespoons of oil to a small saute pan over medium heat. Add the chiltepins and chile pequins for about 10 seconds and remove to drain on a paper towel. Let cool completely. When vegetables are done boiling remove from water and let cool completely. Add everything into a blender and process until smooth.
  • Notes - I use 12 chile pequins and 10 chiltepins but I like my salsa pretty hot. Sometimes I will just use my deep fat fryer to toast the chiles instead of using the saute pan.
  • If you like your salsa more chunky, reserve half of the tomatoes and the onion, dice and stir in at the end.

1 (4 ounce) can sliced jalapenos, undrained
1/2 tablespoon salt
1 1/2 tablespoons garlic granules
1 lb warm tortilla chips, seasoned with salt

  • Combine all ingredients.
  • Put in a blender and precess briefly. It has only a slight texture.
  • Refrigerate.

  • Add all of the ingredients into a food processor and process until you reach your desired consistency. My favorite restaurant salsas tend to be less chunky so I pulse a few times to break things up, then process for 10-15 seconds until there aren't any large chunks but stopping before turning everything into a soup.
  • Taste the salsa and adjust as necessary. You may prefer more lime juice or a bit more salt (different brands of tomatoes have different salt content so depending on which brand you are using, you might even need to add another 1/2 teaspoon of salt, which might seem like a lot - that's why it's important to taste and adjust and I always start on the lower end and work my way up).
  • If you want more heat, add in some of the seeds from your jalapenos (I always start with one jalapeno and then add in the second jalapeno, then some of the seeds if needed to get the heat where I like it since most of the spiciness in the jalapenos is in the seeds themselves).
  • Chill in the fridge for at least 1 hour before serving so the flavors have a chance to really combine. Serve with fresh tortilla chips! Can be stored in the fridge for up to 1 week.
