A really easy damper recipe- I remember making these when I was still at school. To make a savoury damper, you can really add any herbs of choice, such as chopped parsley, chives, cracked black pepper. Damper is usually served with lashings of butter or for a sweet damper with butter, honey, golden syrup or strawberry jam

Number Of Ingredients 8

250 g self-raising flour
1/4 teaspoon salt
25 g unsalted butter, chilled and cubed
175 ml milk
110 g tasty cheese or 100 g cheddar cheese
2 tablespoons golden syrup or 2 tablespoons honey
2 tablespoons caster sugar
1/4 cup sultana (optional)

Steps:

  • Preheat oven to 180-190°F.
  • Using a large mixing bowl, stir together the flour and the salt.
  • Add the butter and rub it in with your fingertips.
  • Add the milk and stir it in with a rounded blad knife/butterknife. The dough should be fairly soft, but not too sticky.
  • Tourn out onto a lightly floured board and shape into a soft smooth ball.
  • Place the damper ball onto a baking sheet and flatten gently. Cut a cross into the top of the damper and brush with a little milk.
  • Bake for 30 minutes or until golden.
  • Variations- for the cheese damper add 100 grams of cheese before adding the milk. Add any extra herbs of choice. Sprinkle with a little extra cheese before baking.
  • For the sweet damper- add the sweet ingredients with the milk.

A great Aussie favourite which incorporates the best Aussie fav....VEGEMITE. I got this recipe from another Aussie Icon.... the A.B.C. You will only need 2/3 stubby, what you do with the rest is up to you!

3 cups self raising flour
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon bicarbonate of soda
2 teaspoons sugar
2 tablespoons vegemite, dissolved in
1/2 cup milk
1 (12 ounce) stubby beer (you wont need it all)
1 cup tasty cheese, cut into 1 centimetre cubes

Steps:

  • Sieve the flour, salt, baking powder and bicarb into a bowl. Add the sugar and mix well.
  • Dissolve the Vegemite in the milk in a saucepan over a low heat - or this can be mixed in the microwave-.
  • Stir the dissolved Vegemite/milk mixture and some of the beer into the mixture until a pliable dough is formed. Turn out onto a floured surface and roll into a round shape.
  • Place on a greased oven tray, moisten the top with water and sprinkle with grated cheese if you wish.
  • Using a knife, score lines about 1cm deep on top of damper to divide into 6.
  • Bake in a hot oven for 25-30 minutes.

Damper Bread was a staple of the early Australian settlers' diet. Traditionally, the dough was cooked directly on the coals of an open fire. If you use this method, have a beer handy in case some of the ashes on the damper are still glowing when you eat it!

4 cups self-rising flour
1 teaspoon salt
1 tablespoon butter, softened
1 cup milk
½ cup water

Steps:

  • Preheat oven to 425 degrees F (220 degrees C) Grease a baking sheet.
  • In a large bowl, stir together the flour and the salt. With pastry blender or your hands, cut in butter. Make a well in the center of the flour mixture and pour in the milk and water. Stir until the dough comes together. Turn the dough out onto a lightly floured surface and form into a round loaf 8 inches across. Place the loaf onto the prepared pan and using a sharp knife, cut a cross in the top.
  • Bake for 25 minutes in the preheated oven, then lower the temperature to 350 degrees F (175 degrees C) and continue to bake for an additional 5 to 10 minutes. The loaf should be golden brown and the bottom should sound hollow when tapped.

This is an adaption of a good US cornbread recipe - using stuff you can buy in Australia... Takes literally 2 mins to prepare and big eaters (ie men folk) will love it. Fantastic with ribs (see mine...) and coleslaw. 500g box of Coles homebrand multipurpose muffin mix has been omitted from the recipe by the ingredient police. Can't get it in so read as 500g plain flour but use the muffin mix

1 teaspoon dried onion
50 g eggs
60 ml olive oil
100 g cheddar cheese, grated (I like Colby)
350 g creamed corn
500 g corn muffin mix

Steps:

  • Mix lightly until all the flour is just taken up. Don't overdo it.
  • Lightly grease an 8" baking pan or use a silicon one.
  • Bake 180 deg C till lightly golden brown and a wooden skewer comes out clean - maybe 30 minutes (shorter time in a tin, longer time in a silicon mould.
  • Serve hot with cold butter.
