2 cups sugar
1 cup canola oil
3 large eggs, room temperature
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
3 cups chopped peeled apples (about 3 medium)
Confectioners' sugar

Steps:

  • Preheat oven to 350°. Grease and flour a 10-in. fluted tube pan., In a large bowl, beat sugar, oil, eggs and vanilla until well blended. In another bowl, whisk flour, salt and baking powder; gradually beat into oil mixture. Stir in apples. Transfer batter to prepared pan., Bake until a toothpick inserted in center comes out clean, 50-60 minutes. Cool in pan 10 minutes. Run a knife around sides and center tube of pan. Remove cake to a wire rack to cool completely. Dust with confectioners' sugar.

2 1/2 cups sifted cake flour
2 teaspoons Dutch process cocoa powder
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 1/2 cups sugar
1/2 cup (1 stick) unsalted butter, softened
2 large eggs
1 cup buttermilk
2 ounces red food coloring
1 teaspoon distilled white vinegar
1 teaspoon vanilla extract
1 (8-ounce) package cream cheese, softened
1/2 cup (1 stick) unsalted butter or margarine, softened
1 pound box confectioners' sugar
1 teaspoon vanilla extract
1 cup chopped pecans

Steps:

  • For the Cake:
  • Preheat the oven to 350 degrees F.
  • Grease and flour 2 (9-inch) cake pans. In a medium bowl or on a piece of waxed paper, sift together flour, cocoa, baking soda, baking powder, and salt; set aside. In a large bowl, cream together sugar and butter. Beat in eggs, 1 at a time. Alternately add flour mixture and buttermilk. Beat in food coloring and vinegar, then add vanilla. Spread the batter evenly in the pans.
  • Bake for 20 to 30 minutes or until a wooden toothpick inserted into the center comes out clean. Turn out onto a rack to cool.
  • For the Frosting:
  • In a large bowl, combine the cream cheese and butter. Beat in confectioners' sugar until fluffy. Beat in vanilla. Stir in pecans. Use frosting to fill and ice cake.
  • Slice and serve on individual plates.

But you really can't beat a classic apple cake-and Auntie's Apple Cake is certainly one for the recipe box. This traditional recipe for easy apple cake has everything you need: fresh apples, a pecan-studded spiced batter, and a heavenly praline-like frosting. Everyone will swoon when served a slice for dessert, but this cake works just as well as a brunch treat (paired with a cup of coffee!) or as a sweet snack with afternoon tea. Like most fresh apple cakes, it actually tastes better after a day or two. For this recipe, any baking apple will do; but we suggest using pink lady, granny smith, or honeycrisp apples. Get a taste of a Southern fall-favorite dessert when serving up Auntie's Apple Cake this season. Ice cream optional!

1 2/3 cups granulated sugar
1 cup vegetable oil
2 teaspoons vanilla extract
1 teaspoon baking soda

3 cups diced peeled apples (from 3 medium apples)
1 cup chopped pecans
1 cup packed brown sugar
1/2 cup (4 oz.) unsalted butter
1/4 cup evaporated milk

Steps:

  • Prepare the Cake: Preheat oven to 325°F. Coat a 10-inch tube pan with cooking spray; dust with flour. Beat eggs, sugar, oil, and vanilla with a hand mixer on medium speed about 1 minute. Stir together baking soda, salt, cinnamon, and 2 1/2 cups of the flour in a separate bowl; gradually add to egg mixture, beating on low speed until blended.
  • Stir together apples, pecans, and remaining 1/2 cup flour in a bowl; fold mixture into batter. Spoon batter into prepared tube pan. Bake in preheated oven a until wooden pick inserted in center comes out clean, about 1 hour, 15 minutes. Cool in pan 15 minutes. Remove from pan; let cool until just warm, about 30 minutes.
  • Meanwhile, prepare the Frosting: Cook brown sugar, butter, and evaporated milk in a saucepan over medium, stirring often, until mixture comes to a boil and sugar is dissolved, about 2 minutes. Continue cooking, stirring constantly, until mixture reaches soft-ball stage (240˚F), about 3 minutes. Remove from heat; whisk until slightly thickened, abut 1 minute.
  • Drizzle Frosting over warm Cake. If desired, garnish with chopped pecans.

This cake is especially appealing to those who do not care for even the best quality candied fruit. It is more dried fruits and nuts than cake.

8 ounces walnut halves
8 ounces pecan halves
8 ounces brazil nuts
16 ounces pitted dates
16 ounces dried apricots
12 pitted prunes, halved
4 ounces mixed candied fruits
1/2 cup raisins
1 cup maraschino cherries
1 1/2 cup sifted unbleached flour
1 teaspoon baking powder
1 teaspoon salt
6 eggs
1 cup sugar
2 teaspoons vanilla
3/4 cup brandy
Additional brandy for soaking

Steps:

  • Grease the bottom and sides of an eight-cup souffle dish or a 9-by-5-by-3-inch loaf pan. Line with brown paper; grease the paper.
  • Combine the walnuts, pecans, brazil nuts, dates, apricots, prunes, candied fruits, raisins and cherries in a large bowl. Sift the flour, baking powder and salt over the nuts and fruits. Toss lightly until well coated.
  • Beat the eggs, sugar and vanilla in a medium-size bowl with an electric mixer until the mixture is fluffy and light. Pour over the nut mixture. Stir gently to combine.
  • Fill the prepared dish or pan, pressing the cake mixture firmly. Bake at 275 degrees for about two hours. (If the top is browning too quickly, cover with buttered foil.)
  • Remove the cake to a wire rack. Spoon one-quarter cup of brandy over the cake. Let stand one hour. Invert the cake and peel off the paper. Turn it right side up and let it stand on the wire rack until it is completely cooled. Place the wire rack in a shallow pan and spoon the remaining one-half cup of brandy over the cake.
  • To store, wrap the cake in cheesecloth that has been soaked in brandy. Wrap in heavy-duty aluminum foil or store in tightly covered container.

1 cup cooking oil
4 eggs (extra large)
3 cups plain flour
1 teaspoon salt

1 cup coconut
1 teaspoon vanilla
1 dash salt
1/4 cup butter
1/4 cup evaporated milk
1 cup brown sugar (packed)
1 teaspoon vanilla

Steps:

  • Apple Cake directions:.
  • Mix sugar, oil, and eggs. Blend well.
  • Sift flour, salt and soda. Hold out 1/2 cup flour mixture to dredge fruits and nuts.
  • Beat dry ingredients into wet ingredients ~ add vanilla.
  • Stir in apples, nuts, and coconut dredged in 1/2 cup flour (from above).
  • Pour into greased and floured 10 inch tube, or large bundt pan.
  • Bake at 350 degrees for 55-60 minutes. Cool and top with glaze.
  • Butterscotch Glaze directions:.
  • Combine salt, butter, evaporated milk, and brown sugar in saucepan over medium heat.
  • Bring to a boil and cook gently (not a hard rolling boil) for 5 minutes.
  • Add vanilla; stir, and pour over cooled cake.
  • Makes 18-20 servings.
