3 to 4 zucchini, (trimmed and cut length-wise into quarters (sticks))
Extra virgin olive oil
1/2 cup grated Parmesan cheese
2 tsp fresh thyme leaves, (no stems)
1 tsp dried oregano
1/2 tsp sweet paprika
1/2 tsp black pepper
pinch kosher salt

Steps:

  • Preheat your oven to 350 degrees F.
  • Mix together the grated Parmesan, thyme, and spices in a medium bowl.
  • Prepare a large baking sheet that's topped with a wire baking rack. Lightly brush the wire baking rack with extra virgin olive oil (or use a healthy cooking spray.) Place the zucchini spears, skin-side down, on the baking rack in a single layer. Brush each one with extra virgin olive oil.
  • Sprinkle the herb and cheese topping on each zucchini stick so they are all lightly coated.
  • Bake in the heated oven for 15 to 20 minutes, or until tender. For a crispy golden topping, broil for 2 to 3 minutes more. Watch it carefully so the zucchini does not burn.
  • Serve immediately as an appetizer with a dipping sauce, or as a side next to your protein of choice.

1 1/2 cups water
1 1/4 teaspoons active dry yeast (1 pkg.)
2 tablespoons brown sugar
1 1/4 teaspoons salt
1 cup bread flour
3 cups flour
2 cups water
2 tablespoons baking soda
coarse salt
2 -4 tablespoons butter (melted)

Steps:

  • Sprinkle yeast on lukewarm water in mixing bowl; stir to dissolve.
  • Add sugar, salt and stir to dissolve; add flour and knead dough until smooth and elastic.
  • Let rise at least 1/2 hour.
  • While dough is rising, prepare a baking soda water bath with 2 cups warm water and 2 tbsp baking soda.
  • Be certain to stir often.
  • After dough has risen, pinch off bits of dough and roll into a long rope (about 1/2 inch or less thick) and shape.
  • Dip pretzel in soda solution and place on greased baking sheet.
  • Allow pretzels to rise again.
  • Bake in oven at 450 for about 10 minutes or until golden.
  • Brush with melted butter.
  • Toppings: After you brush with butter try sprinkling with coarse salt.
  • Or for Auntie Anne's famous Cinnamon Sugar, try melting a stick of butter in a shallow bowl (big enough to fit the entire pretzel) and in another shallow bowl make a mixture of cinnamon and sugar.
  • Dip the pretzel into the butter, coating both sides generously.
  • Then dip again into the cinnamon mixture.
  • Notes: The longer and thinner you can make the dough rope, the more like Auntie Anne's they will be.

1 cup oil
2 cups sugar
2 cups grated raw zucchini (peeled and seeded)
3 eggs
3 teaspoons vanilla
2 1/2 cups flour
1 teaspoon salt
2 teaspoons baking soda
1/4 teaspoon baking powder
3 teaspoons cinnamon
1/2 cup pecans
1 cup chocolate chips (optional)

Steps:

  • Mix together 1 cup of oil,2 cups of sugar Add 2 cups of zucchini.
  • Add 3 eggs and 3 tsps of vanilla.
  • Sift together 2½ cups of flour, 1 teaspoons of salt,
  • 2 tsps of baking soda and ¼ tsp of baking powder.
  • Add 3 tsps of cinnamon.
  • Mix all together - then add the ½ cup of pecans.
  • Bake for 1 hour in a preheated 350 degree F oven in 3 - 3½" x 7" x 2" inch pans. Spray all 3 pans with Pam cooking spray. Cool 10 minutes before removing from pans,.

1 stick(s) butter
1 medium chopped onion
1 medium green pepper
4 cup(s) diced zucchini
4 cup(s) diced yellow summer squash
1 teaspoon(s) garlic powder
4 - 5 large eggs
2 cup(s) shredded cheddar cheese
4 - 5 slice(s) bread

Steps:

  • Melt butter - add onion, green pepper and garlic powder. Saute - then add diced squash. Stir - put on lid - cook until soft. About 20 min. Remove from heat. In a large bowl, beat eggs, add the bread which was torn into small pieces. Add the cheese. Mix well and blend into the squash mixture. Put into a greased baking dish. Bake at 350° for 25 minutes. Use small tender squash. Serve warm.
