A family-favorite recipe for generations, Aunt Bee's Swedish meatballs are homemade comfort food. This is an easy dinner recipe that you will hold onto forever!

2 lbs. ground beef
2 large onions
3 eggs, slightly beaten
6 slices cubed white bread ((or substitute with 1 ½ cups of Panko bread crumbs))
¼ cup half-and-half
2 teaspoons sugar
2 teaspoons salt, or more to taste
½ teaspoon pepper
butter and vegetable oil for frying
¼ cup pan drippings
¼ cup flour, plus additional as needed
2 cups beef broth
2 tablespoons half-and-half
Salt and pepper, to taste
Optional, for serving: chopped fresh parsley; cooked egg noodles; potatoes

Steps:

  • Place the meat in a large bowl. Grate the onions into the meat.
  • Stir together bread or bread crumbs with ¼ cup of half-and-half, just until moistened.
  • Add eggs, soaked bread crumbs, sugar, salt, and pepper to the beef mixture. Use your hands or a fork to gently combine, being careful not to over-mix the meat.
  • Use a medium (1 ½ tablespoon) scoop to shape the meat into balls. Each meatball will be about the size of a golf ball. Place the meatballs on a baking sheet so that they will be ready to fry.
  • Heat 2 tablespoons of butter and 1 teaspoon of oil in a large frying pan over medium-high heat. When the butter melts, sauté meatballs in batches, turning while they cook so that all sides are evenly browned and the meat is cooked through (about 8-10 minutes per batch). Be careful not to overcrowd the pan.
  • Repeat until all meatballs are cooked. Remove meatballs to a baking sheet lined with paper towels, and cover loosely with foil to keep warm while you prepare the sauce.

1 pound ground veal, pork and beef combination (sometimes called "meatloaf mix")
2 large eggs, beaten lightly
1/4 cup dry bread crumbs, or as needed
1/4 cup freshly grated Locatelli cheese
2 tablespoons minced fresh flat-leaf parsley
Salt and red pepper flakes
Club soda, as needed

Steps:

  • In a bowl mix together (until just combined) the meat, eggs, bread crumbs, cheese, and parsley. Season with salt and red pepper flakes. Add enough club soda to make a firm but light textured meatball. Form mixture into meatballs about the size of an ice cream scoop. Chill, covered, until ready to add to sauce.

1 lb hamburger
1 egg
1/4 cup breadcrumbs
2 medium carrots, grated
2 medium potatoes, grated
1 medium onion, diced
salt and pepper
2 tablespoons butter
2 tablespoons flour
2 cups milk
1 (10 1/2 ounce) can cream of mushroom soup

Steps:

  • Mix the first 7 ingredients.
  • Roll into 1" balls and brown, they seem to stick, so you need to watch them closely. Place in a greased 9x13 pan.
  • Melt the butter in a saucepan, add flour and then the milk.
  • When the flour has dissolved into the milk, add the can of soup, heat through. Pour over the meatballs and bake uncovered at 325°F for 30 minutes.
  • Sprinkle with shredded cheese when removed from the oven.

  • Saute onions in a few tbsp. oil. Beat milk and egg in a large bowl. Mix together bread, seasoning and onions. Add meat and mix well. Form into small meatballs. Fry in the remaining oil. Serve hot or cold with sour cream.

12 ounces chili sauce, chunky
10 ounces grape jelly
1/3 cup onion, finely minced
1/3 cup garlic, minced
1/2 teaspoon Worcestershire sauce
1/2 teaspoon salt, to taste
1/8 teaspoon pepper, to taste

Steps:

  • The 1 lb ground beef is frozen prepackaged Swedish meatballs readily available at your local grocery store.
  • Precook meatballs as per instructions on package.
  • Combine chili sauce, grape jelly, onion, garlic and worcestershire into deep frying pan.
  • Heat and mix until ingredients are blended.
  • Salt and pepper to taste.
  • Add cooked meatballs, partially cover and simmer on low for half an hour or longer, stirring frequently (the longer the better to infuse the flavours into the meatballs).
  • Serve hot or cold.

  • To make the meatballs, soften the saltines in water and add to meat.
  • Add salt and mix well.
  • Form into round ballls and refrigerate for 0 hour.
  • in a medium saucpan, combine the grape jelly, chili sauce, and lemon juice.

1 lb ground pork
1 teaspoon allspice
1 cup breadcrumbs (I use the Italian flavored ones)
1 cup milk
2 eggs, beaten
1/8 cup minced onion
2 teaspoons salt
2 teaspoons sugar
1/2 teaspoon pepper

Steps:

  • Mix all the ingredients together.
  • Make small balls the size of melon balls (or however big you want them as this makes a LOT of little meatballs).
  • Spray cookie sheet with cooking spray.
  • Bake at 350°F for 30 minutes (for small melon ball size meatballs).
  • Bake longer if making larger meatballs.
