BISCUITS AND CHOCOLATE 'GRAVY'



Biscuits and Chocolate 'Gravy' image

Fill your home with the smell of freshly-baked biscuits with this Biscuits and Chocolate 'Gravy' recipe. A rich chocolate sauce is made with cocoa powder, sugar, milk and butter and served over made-from-from scratch biscuits. Your family will swoon over these biscuits with chocolate 'gravy.'

Number Of Ingredients 9

2 cups plus 2 Tbsp. flour, divided
3/4 cup plus 1 Tbsp. sugar, divided
2 tsp. baking powder
1/2 tsp. baking soda
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed
6 Tbsp. cold butter, divided
1-3/4 cups milk, divided
1/4 cup unsweetened cocoa powder
1 tsp. vanilla

Steps:

  • Heat oven to 450°F.
  • Combine 2 cups flour and 1 Tbsp. sugar with baking powder and baking soda in large bowl. Cut in cream cheese and 4 Tbsp. butter with pastry blender or 2 knives until mixture resembles coarse crumbs.
  • Add 3/4 cup milk; stir until mixture forms soft dough.
  • Place dough on lightly floured surface; sprinkle lightly with additional flour. Roll into 12x8-inch rectangle; fold crosswise in half. Repeat rolling and folding three more times.
  • Press dough gently onto bottom of 9-inch square pan sprayed with cooking spray.
  • Bake 15 to 20 min. or until golden brown; cool slightly.
  • Meanwhile, whisk cocoa powder with remaining flour, sugar and milk in medium saucepan until blended; cook, stirring constantly, over medium heat 5 to 7 min. or until thickened. Remove saucepan from heat. Add vanilla and remaining butter; stir until butter is completely melted and mixture is well blended.
  • Cut warm biscuit into 12 rectangles. Serve topped with chocolate gravy.

3 cups plus 2 tablespoons all purpose flour
2/3 cup plus 2 tablespoons sugar
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup plus more for pan vegetable shortening
1 cups buttermilk
1/4 cup melted unsalted butter
1/4 cup melted, plus 1/3 stick butter
1/3 cup cocoa
2 cups whole milk

Steps:

  • Preheat the oven to 450 degrees F.
  • In a medium bowl, combine the 3 cups flour, 2 tablespoons sugar, baking powder, baking soda and salt. Cut in the shortening with a fork until it looks like cornmeal. Add the buttermilk, a little at a time, stirring constantly until well mixed.
  • Turn the dough out onto a lightly floured surface. Knead lightly 2 or 3 times. Roll out the dough with a floured rolling pin to 1/2-inch thickness. Cut dough into circles with a 2-inch cutter.
  • Place the biscuits in a greased iron skillet. Gently press down the top of the biscuits. Brush the biscuits with half the 1/4 cup melted butter and bake for 14 minutes or until golden brown. Brush the hot biscuits with the remaining melted butter. Split the biscuits in half and ladle Chocolate Gravy over the hot biscuits.
  • Chocolate Gravy:
  • Heat 1/3 stick butter in a cast iron skillet over low heat. Mix in 2/3 cup sugar, 2 teaspoons flour and cocoa. Slowly pour 1 cup of milk into the skillet and whisk well to remove lumps. Whisk in remaining milk, stirring constantly, until mixture is thick, being careful not to scorch. Serve hot over biscuits.

1 1/2 cups carnation evaporated milk
1/2 teaspoon cinnamon

Nuts (optional)

Steps:

  • In a medium saucepan, stir together sugar, cocoa, flour, and cinnamon and salt. With a wire whisk or spoon stir in milk a little at a time until ingredients are wet. Cook over medium heat, stirring constantly, until mixture thickens. (This will burn easily so be sure to stir). Remove from heat and stir in butter and vanilla until smooth. Pour into a bowl and top with nuts if desired. Serve over warm biscuits.

3 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon fine sea salt
4 tablespoons (1/2 stick) cold unsalted butter, cut into bits and chilled
3/4 to 1 cup buttermilk
3/4 cup sugar
3 tablespoons all-purpose flour
1/4 cup cocoa powder
2 cups 2-percent or whole milk
4 tablespoons (1/2 stick) unsalted butter

Steps:

  • For the biscuits: Heat the oven to 500 degrees F. Spray an 8-inch round cake pan with nonstick spray and set aside. In a bowl, combine 2 cups of the flour, the baking powder and salt. Using a pastry cutter or 2 knives, cut the butter into the flour mixture until it resembles coarse meal. Pour in the buttermilk and gently mix until just combined; use enough buttermilk so that the dough is very wet and looks like cottage cheese.
  • Place the remaining 1 cup flour in a shallow bowl. Spray a medium ice-cream scoop or tablespoon with nonstick spray. Scoop up some biscuit dough and drop it into the flour. Sprinkle flour over the top and roll the dough gently in the flour. Shake off excess flour and shape the dough into a round. Place it in the prepared cake pan. Continue process until all the dough is used, making 8 to 10 biscuits and pressing them snugly next to each other in the pan. (This will keep them soft and tender.) Bake until golden brown, 12 to 15 minutes. Transfer the pan to a rack to cool just slightly. Serve warm.
  • For the chocolate gravy: Meanwhile, in a medium heavy saucepan, whisk together the sugar, flour and cocoa until no clumps of flour or cocoa remain. Whisk in the milk until well combined. Place over medium heat and cook, whisking constantly, until the mixture begins to boil and then thickens like gravy, 5 to 10 minutes. Remove the saucepan from the heat and stir in the butter until it melts. Spoon warm gravy over the warm biscuits and serve the remaining gravy on the side.

2 cups all-purpose flour, sifted
4 teaspoons baking powder
2 tablespoons sugar
1/2 teaspoon salt
1/2 cup vegetable shortening
3/4 cup milk
1/2 cup jam or 1/2 cup jelly, red

Steps:

  • Preheat oven to 425 degrees F.
  • Measure the sifted flour, baking powder, sugar, and salt and mix with fork in large mixing bowl.
  • Cut in vegetable shortening until it looks like coarse bread crumbs.
  • Add the milk and mix it into the flour with fork-but only until the mixture will form a soft ball.
  • Place the ball of dough on a lightly floured surface and knead it 12 times.
  • Rub some flour on rolling pin and roll the dough until it's about 1/4 inch thick.
  • With a large biscuit cutter cut circles, very close together, in the dough. Use a straight downward motion and do not twist the cutter.
  • With a spatula lift HALF of the circles, one at a time onto a cookie sheet and arrange them about 1 inch apart.
  • With a small cutter cut a hole in the center of the rest of the circles to make rings and lift out the centers. Set the centers aside.
  • Place the rings on top of the circles on the cookie sheet.
  • Place a teaspoon of red jam or jelly in each ring.
  • Bake biscuits for 12-15 minutes until golden.
  • Immediately take bicsuits off cookie sheet with spatula.
  • With centers bake into little biscuits.

3 tablespoons unsweetened cocoa powder
1 cup evaporated milk
6 tablespoons butter
1 (7 ounce) jar marshmallow creme
3 ½ cups graham cracker crumbs

Steps:

  • Place sheets of waxed paper onto a work surface.
  • Stir sugar, cocoa, and evaporated milk together in a large nonstick saucepan over medium heat until mixture comes to a boil; boil for 5 minutes, stirring constantly. Remove from heat and stir butter and marshmallow creme into cocoa mixture. Quickly stir graham cracker crumbs into mixture.
  • Drop cookies by the spoonful onto waxed paper; let stand until firm. Store in airtight containers.

1 1/2 c whole milk

GRAVY RECIPE BELOW
2 c granulated sugar
1/2 c flour

Steps:

  • 1. For Biscuits mix the first 5 ingredients together until blended. Drop the biscuits onto a well greased cookie sheet. Bake in a 425 degree oven for 10- 15 minutes
  • 2. while the biscuits are baking prepare the gravy on top of stove in a large skillet. A medium heat works best, while stirring with a wire whisk.
  • 3. mix the dry ingredients in a large pan or iron skillet. Add the milk and stir until it begins to thicken. After thickened and is a nice creamy gravy consistency, add vanilla.
  • 4. By the time the gravy is finished the biscuits will be baked. Serve the hot gravy over hot biscuits and poor a glass of milk and Enjoy.
  • 5. This is a great sometime recipe for Christmas and any special occasion. Chocolate just makes you feel good!
