1 quart sweet milk
4 egg yolks
3 tablespoons flour
1 cup sugar

Steps:

  • Add 1/2 sugar to milk and cook 5 minutes on high in microwave.
  • Add flour, mix well with remaining 1/2 cup sugar and cook 1 minute; stir.
  • Cook 1 more minute.
  • Beat egg yolks well and add 1 cup of hot milk mixture to eggs; mix well.
  • Return to milk mixture. Cook to desired thickness, stirring every 30 seconds (about 6-8 minutes).
  • If you make it too thick, you can always thin it down with milk.

Also known as cooked or stirred custard or custard sauce. Hot custard is usually served with puddings - it is almost always served with the traditional Christmas Pudding, usually with the addition of brandy. Custard powder is hard to find outside of Australia. Bird's custard powder is available in specialty stores and "gourmet" sections of big groceries in the States (DiLaurenti in Seattle carries it, for example). Some recipes suggest substituting non-instant vanilla pudding mix or pastry cream powder for custard powder. You may want to add a bit of cornstarch if using these.

95 g custard powder
1 liter whole milk
2 tablespoons sugar
1 teaspoon vanilla essence

Steps:

  • In a small bowl, combine the custard powder and sugar.
  • Stir just enough milk into the mixture to make a thin paste.
  • Add the vanilla essence to the paste, stir.
  • Place the remainder of the milk in a saucepan and bring to a boil.
  • Turn the heat down on the saucepan to low.
  • Slowly pour the paste into the saucepan, stirring frequently.
  • Keeping the saucepan on low, constantly stir the mixture until it reaches your desired thickness (approx 1 min).

1/4 cup flour
1/8 teaspoon salt
8 large egg yolks
6 cups milk
2 cups light cream
1 tablespoon vanilla extract
1/8 teaspoon ground nutmeg

Steps:

  • Mix sugar, flour, and salt in a saucepan.
  • Add egg yolks, and mix well.
  • Stir egg mixture with a whisk and slowly pour.

  • Cook over LOW heat, stirring constantly, until.
  • custard is thickened and just coats the back of a spoon.
  • Remove from heat and cool by putting pan in cold water.
  • The custard will thicken as it cools.
  • When cold, stir in vanilla, nutmeg.

6 cups milk
2 cups heavy cream
1 vanilla bean, split lengthwise, seeds scraped and reserved
1 1/2 cups sugar
1 teaspoon kosher salt
6 large egg yolks

Steps:

  • Heat the milk, cream, and vanilla bean and reserved seeds in a large, heavy-bottomed saucepan over medium heat just until scalded (just before the boiling point). Remove from the heat, add the sugar and salt, and whisk until the sugar dissolves. Discard the vanilla bean.
  • Place the egg yolks in a medium bowl and whisk to mix. Slowly whisk about 2 cups of the milk mixture into the eggs to temper the eggs. Whisk the egg mixture back into the pan with the remaining milk mixture.
  • Place over very low heat and cook, whisking constantly, for 5 to 7 minutes longer, until the mixture thickens. Remove from the heat and cool to room temperature. Cover and refrigerate until ready to serve, or for up to 3 days. Serve chilled.

Meanwhile, place 6 large egg whites in a glass or metal bowl and beat to soft peaks with an electric mixer. Add 1 cup heavy cream whipped to soft peaks and lightly sweetened. Gently fold the egg whites into the custard and serve chilled, topped with freshly grated nutmeg and more lightly sweetened whipped cream.
