Put a crowd-pleasing creamy texture into this delicious cinnamon-kissed Noodle Kugel with cottage cheese and sour cream. Noodle Kugel is a classic Passover dish, but this recipe is so good they may just ask for it whenever the mood strikes them. Better stock up on some egg noodles now.

1 container (16 oz.) 2% milkfat low fat cottage cheese
1 container (16 oz.) sour cream
1 cup sugar
5 eggs, beaten
1/2 cup margarine, melted
1 Tbsp. imitation vanilla
1 pkg. (12 oz.) broad egg noodles, cooked, rinsed and drained (Kosher for Passover)
1 Tbsp. cinnamon sugar

Steps:

  • Heat oven to 350°F.
  • Mix all ingredients except noodles and cinnamon sugar until well blended. Stir in noodles.
  • Spoon into 13x9-inch baking dish; sprinkle with cinnamon sugar.
  • Bake 50 min. to 1 hour or until center is set. Cool at least 10 min. before cutting to serve.

1 cup packed dark brown sugar
1¼ cups all purpose flour, spooned into measuring cup and leveled off
1 teaspoon ground cinnamon
¼ teaspoon salt
1 stick unsalted butter, cold, cut into ½-inch chunks
One 12-oz bag wide egg noodles
4 large eggs
One 8-oz container sour cream
One 8-oz package cream cheese, softened (microwave for 15-20 seconds to soften)
2 cups half & half
½ cup granulated sugar
1 teaspoon salt
2 teaspoons vanilla extract
½ teaspoon ground cinnamon

Steps:

  • Combine the brown sugar, flour, cinnamon, and salt in a medium bowl. Using your fingers, mix until no lumps of brown sugar remain. Rub in the butter with your fingertips until the mixture has a clumpy, crumbly texture. Refrigerate until ready to use.
  • Preheat the oven to 325°F and set an oven rack in the middle position. Butter a 9 x 13-inch baking dish.
  • Bring a large pot of unsalted water to a boil. Cook the noodles for 6 to 8 minutes, or according to package instructions, until tender. Drain well.
  • In a large bowl, whisk the eggs. Add the sour cream and softened cream cheese and whisk to combine. Add the half & half, sugar, salt, vanilla, and cinnamon, and whisk until completely smooth.
  • Spread the cooked noodles evenly in the prepared baking dish. Pour the custard mixture evenly over top. Cover the dish tightly with aluminum foil and bake for 35 minutes. Remove and discard the foil. The custard should be just set. Sprinkle the streusel topping evenly over the top, making sure to cover all the noodles. Bake for 35 to 40 minutes more, until the streusel topping is crisp. Let cool for about 20 minutes, then cut into squares and serve.
  • Make Ahead: The kugel and topping can be assembled and stored separately in the fridge up to a day ahead of time, and then baked before serving. (The kugel with the streusel topping may also be fully cooked a day ahead of time and reheated, however the texture will be denser than if baked fresh. To reheat, cover with foil and place in a 325°F oven for 25 minutes; remove and discard the foil, and continue baking for 20 to 25 minutes more, or until warm throughout and crisp on top.)

  • Boil the noodles in salted water for about 4 minutes. Strain noodles from water. In a large mixing bowl, combine noodles with remaining ingredients and pour into a greased, approximately 9-by-13-inch baking dish.

1 cup ricotta cheese
1 cup golden raisins

Steps:

  • Preheat the oven to 350 degrees F. Butter a 10 by 13 by 2 1/4-inch baking dish.
  • Drizzle some oil into a large pot of boiling salted water. Cook the noodles for 6 to 8 minutes, until tender. Drain.
  • In a large bowl, whisk together the eggs, half-and-half, brown sugar, vanilla, cinnamon, salt, and pepper. Stir in the ricotta and raisins. Add the drained noodles.
  • Pour the noodle mixture into the baking dish. Place the filled dish in a larger pan and pour in enough hot water to come halfway up the sides. Cover the entire assembly with aluminum foil. Bake for 45 minutes, then remove the foil and bake for another 45 minutes, or until the custard is just set.

For the kugel
12 ounces wide egg noodles
2 tablespoons unsalted butter
2 apples (fuji, gala, or other firm apples), peeled, cored, and diced
6 large eggs
2 cups (1 pound) sour cream
2 cups (1 pound) cottage cheese
2/3 cup granulated sugar
2/3 cup raisins
1/2 teaspoon ground cinnamon
1/2 teaspoon kosher salt
For the topping
2 cups cornflakes cereal
1/4 cup brown sugar
1/2 teaspoon ground cinnamon
2 tablespoons unsalted butter, melted

Steps:

  • Preheat the oven and prepare casserole dish: Preheat the oven to 350ºF. Grease a 9x13-inch casserole dish with butter. Set aside until ready to use.
  • Cook the noodles: Bring a large pot of water to a boil over medium-high heat. Add the noodles and boil until al dente, about 8 minutes or the according to package instructions. When the noodles are done boiling, drain into a colander, then add to a large bowl.
  • Make the cornflake topping: While the noodles are boiling, make the topping. In a large bowl, use your hands to crush the cornflakes into coarse crumbs. Add the brown sugar, cinnamon, and melted butter and stir to combine. Set aside until ready to use.
  • Assemble kugel: After you've drained the noodles, add the butter into the large bowl while the noodles are still hot, and stir until the butter is melted. Add the diced apples, eggs, sour cream, cottage cheese, sugar, raisins, cinnamon, and salt, and stir until evenly combined.
  • Transfer to baking dish: Transfer the noodle mixture to the greased baking dish, then sprinkle the cornflake mixture evenly over the noodle mixture.
  • Bake kugel: Cover the dish tightly with aluminum foil. Bake the kugel for 1 hour, then remove the foil and bake for 20 more minutes. You'll know your kugel is done when an instant-read thermometer inserted in the center of the casserole reads 150 to 160°F, the topping is lightly browned, and the noodles have turned golden brown around the edges of the baking dish.
  • Cool, cut, then serve kugel: Remove from the oven and let cool for at least 1 hour before serving, to allow the kugel to set up. Cut the kugel into squares or rectangles-this casserole makes 8 or 9 generous servings (about 4 inches by 3 inches), or 12 smaller ones (about 3 inches square). Serve warm or at room temperature.

The secret: use a jellyroll pan, which means that there is a greater amount of kugel surface area to brown in the oven, and bake it at a slightly higher temperature. Soaking the raisins in sherry or orange juice adds flavor, and also keeps them from burning in the extra-hot oven.

Sherry or orange juice
1 pound egg noodles
6 tablespoons unsalted butter, cut into pieces, more for pan

3 cups cottage cheese

Pinch of salt

Steps:

1 pound medium egg noodles
7 large eggs or 8 small eggs
1 pound cottage cheese
1 pint sour cream
3 cups whole milk
1 cup plus 1/2 teaspoon sugar
1 cup golden raisins
1 1/2 teaspoons vanilla
1/2 cup cornflakes crumbs
1 tablespoon ground cinnamon

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking dish with butter.
  • Bring a large pot of salted water to a boil. Add the noodles and cook until al dente, about 6 minutes. Drain in a colander and set aside.
  • Melt 1 stick of the butter in a small saucepan.

sherry wine or orange juice
1 lb egg noodles

- six eggs, beaten
- 1 pint sour cream or substitute low-fat sour cream
- 1 teaspoon vanilla extract
- 1/4 cup butter
- three green apples, peeled and sliced thin
- 2/3 cup sugar
- 1/2 teaspoon ground cinnamon
- 1/2 cup golden raisins
- nonstick spray

Steps:

  • preheat oven to 325°. Bring a large pot of cold water to a boil, season with 2 tablespoon salt and cook noodles according to package instructions. Drain and return to warm pot with butter. Add remaining ingredients and mix.
  • Spray a baking dish with nonstick spray and spread noodle mixture into pan evenly. Place pan into a larger pan filled with 1/2 inch of water, to create a water bath. Cook for 45 minutes.
