GRANDMA BARBARA'S CHEESY POTATOES
This was my grandmother's recipe. No family event was complete without it! After she passed away, my Mother (her daughter-in-law) took over duties. You can't go wrong with cheesy potato goodness...

Steps:
- 1. Preheat oven to 350 degrees F. While oven is heating, cook potatoes in their skins in a large pot of boiling water just until cooked through. Peel and grate.
- 2. Heat milk and cream in a saucepan and gently add cheese until it's thoroughly melted. Add mustard, salt and pepper.
- 3. Spray a 9x13-inch pan with cooking spray. Add potatoes, and pour cheese sauce over top. Bake covered for about an hour. Toward the last 10 minutes uncover to slightly brown top.
- 4. Please note, I divided this recipe into two batches, freezing half for later. That's why I used an 8x8-inch pan (the other is in the freezer, and has a bit less than half the recipe in it. FYI)
AUNT CLARA'S CHEESE POTATOES
Mother didn't make these quite as often as she made scalloped or mashed or fried, but she made them occasionally, usually with some kind of ham. And she always told the family joke about her Aunt Clara who, when asked to bring cheese potatoes to a family gathering, came in lugging a 5-lb. bag of potatoes and a block of cheddar...

Steps:
- 1. Peel potatoes and slice into 1/8" slices. Place in greased Dutch oven.
- 2. In a large saucepan, melt butter. Add flour and stir until blended. Add the salt and pepper. Pour in milk, little by little, stirring constantly with a wire whisk.
- 3. Over medium-high heat, whisk constantly until mixture begins to thicken. When bubbles start to form, remove from heat and add 1-1/2 cups of the cheese. Pour over potatoes and mix thoroughly.
- 4. Bake in a pre-heated 350-degree oven, covered, for 1 hour. Remove lid, sprinkle 1/2 cup remaining cheese over the top of potatoes, and continue baking, uncovered, for 30 minutes more.
- 5. If you like, you may add buttered bread crumbs (about 3/4 cup) when you add the 1/2 cup of cheese.
BARBARA'S CHEESY POTATOES
This recipe is from my mother-in-law Barbara. It is a staple at all our family holiday get-togethers. I prefer the cubed hash browns, but either way it is really great.

Steps:
- Thaw hash browns for at least one hour.
- Heat half& half, butter and cheeses over low heat until melted.
- Pour over potatoes and mix lightly.
- Pour into greased oblong baking dish, let stand 1 hour.
- Bake at 350 degrees 1 hour or until browned and bubbly.
