SPINACH ENCHILADAS

If you like spinach and Mexican food, you'll love these easy vegetarian enchiladas made with ricotta cheese and spinach.

1 tablespoon butter
½ cup sliced green onions
2 cloves garlic, minced
1 (10 ounce) package frozen chopped spinach , thawed, drained and squeezed dry
1 cup ricotta cheese
½ cup sour cream
2 cups shredded Monterey Jack cheese
10 (6 inch) corn tortillas
1 (19 ounce) can enchilada sauce

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Melt butter in a saucepan over medium heat. Add garlic and onion; cook for a few minutes until fragrant, but not brown. Stir in spinach, and cook for about 5 more minutes. Remove from the heat, and mix in ricotta cheese, sour cream, and 1 cup of Monterey Jack cheese.
  • In a skillet over medium heat, warm tortillas one at a time until flexible, about 15 seconds. Spoon about 1/4 cup of the spinach mixture onto the center of each tortilla. Roll up, and place seam side down in a 9x13 inch baking dish. Pour enchilada sauce over the top, and sprinkle with the remaining cup of Monterey Jack.
  • Bake for 15 to 20 minutes in the preheated oven, until sauce is bubbling and cheese is lightly browned at the edges.

1 lb boneless chicken breast (thighs ok too)
1 chopped yellow onion
1 tablespoon oil (canola or vegetable)
1 (12 ounce) jar alfredo sauce
1 (8 ounce) jar medium salsa or 1 (12 ounce) jar of medium salsa
1/4 cup sliced jalapeno (optional)
1/2 cup chopped cilantro
1/2 teaspoon chili powder
1/2 teaspoon garlic salt
1/2 teaspoon cayenne pepper
2 cups chopped lettuce
1 ripe tomatoes, diced
8 ounces mozzarella cheese
6 medium flour tortillas

Steps:

  • Lightly brown chicken in skillet with oil.
  • After chicken has a light brown color, add chopped onion, 1/2 cup water and 1/2 jar of salsa to pan and bring to a boil.
  • Reduce heat and let simmer on low-medium heat for about 15 minutes, stirring and breaking up chicken as it cooks. Stir often.
  • Add in spices while it is cooking.
  • Preheat oven to 385.
  • Spray a baking dish with non-stick cooking spray or coat with a light coating of oil.
  • Add 1/2 jar of alfredo sauce to chicken mixture and stir to combine.
  • Add in sliced jalapenos and 1/2 the cilantro.
  • Shredd the chicken with 2 forks.
  • Spoon equal amounts of the chicken mixture into the 6 tortillas, rolling the tortillas and placing them open side down into the baking dish.
  • In a bowl, mix the rest of the alfredo sauce, the rest of the salsa, and 1/2 cup water.
  • Pour that over the top of all of the enchillada rolls.
  • Sprinkle with the mozzarella cheese and cover with tin foil.
  • Bake for 30 minutes.
  • In the last 5 minutes, remove the tin foil and allow to brown in oven.
  • Top with shredded lettuce, tomatoes, cilantro and sour cream.

These are so yummy! I found this recipe in one of my Southern Living Annual recipe cookbooks. It called for corn tortillas but we like flour tortillas better. If you like spinach, you'll love these!

1 (10 ounce) package frozen chopped spinach, thawed & pressed dry
1 can cream of chicken soup, undiluted
1 (8 ounce) carton sour cream
1 (4 ounce) can chopped green chilies, drained
2 tablespoons chopped green onions
1 package flour tortilla
4 cups of shredded monterey jack cheese, divided (save some for the top)
3/4 cup chopped onion
vegetable oil

Steps:

  • Combine first 5 ingredients in a blender.
  • Blend until smooth.
  • Warm oil in a large skillet& add tortillas one at a time until softened.
  • Drain on paper towels.
  • Spoon a small amount of onions& cheese on each tortilla.
  • Roll up and place seam side down in a lightly greased baking dish.
  • Spoon spinach mixture over tortillas.
  • Sprinkle with remaining cheese.
  • Bake at 325 uncovered for 30 minutes.

I wasn't even a huge fan of enchiladas before I ate these! The spinach and blend of cheeses give this dish a wonderful flavor. Substitute salsa in place of the enchilada sauce for a different twist! It's just as great!

1 tablespoon margarine
1/2 cup scallions or 1/2 cup green onion, chopped
1 (10 ounce) package frozen chopped spinach
1 cup low fat cottage cheese
6 ounces low-fat monterey jack cheese
12 flour tortillas
10 ounces enchilada sauce
1/2 cup fat free sour cream

Steps:

  • Heat oven to 375*.
  • Melt margarine in large skillet over medium-high heat.
  • Add the green onions; cook and stir 2 minutes or until crisp-tender.
  • Add spinach; cook 1 minute or until spinach is warm, stirring occassionally.
  • Remove from heat.
  • Stir in cottage cheese, sour cream and 1 cup of the Monterey Jack cheese.
  • Spoon 1/4 cup filling down center of each tortilla; roll up.
  • Place, seam side down, in ungreased 13x9 baking dish.
  • Pour enchilada sauce evenly over tortillas.
  • Sprinkle with remaining cheese.
  • Bake at 375 for 15-20 minutes or until bubbly and thoroughly heated.
  • Garnish with green onions.
