EGGPLANT WITH TOMATO SAUCE
My grandmother brought this recipe from Italy about 125 years ago. It's been passed through the generations and is now being made by my own great-granddaughters! It's a delightful side dish that we serve with a variety of main courses such as pasta with meatballs or baked chicken. I make it every week!

- Cut eggplant into 1/2-in.-thick slices. Sprinkle with salt. Place in a deep dish; cover and let stand for 30 minutes. , Rinse with cold water; drain and dry on paper towels. In a 2-qt. saucepan, heat oil over medium heat Add the tomatoes, garlic, basil and sugar; bring to a boil. Reduce heat and simmer, uncovered, for 45 minutes or until thickened, stirring occasionally. , Season with salt and pepper. Keep warm while preparing eggplant. In a large skillet, heat about 1/4 cup oil; brown eggplant, a quarter at a time, adding more oil as needed. Place on a serving platter one row at a time. Cover with sauce and sprinkle with cheese. Serve warm.

A neighbor gave me a big bag of Eggplant, I have lots of tomatoes from our garden. We love Ratatouille, So I came up with this recipe for canning.

Steps:
- In a very large kettle, heat olive oil over medium heat.
- Add onion and garlic; cook until the onion is soft.
- Add tomatoes, eggplant, bell pepper, tomato paste, basil, oregano, sugar, salt, pepper, and wine; stir.
- Bring to boil; reduce heat, cover and simmer for 30 minutes, stirring occasionally.
- Put into hot jars and seal.
- Makes 7 pints or 4 quarts.
- Process in hot water bath for 40 minutes.
- This is very good served over pasta with Mozzarella cheese.

- In a pressure cooker, heat oil over medium-high heat.
- Add onion and garlic; cook, stirring frequently, for 1 minute.
- Add water, tomato paste, eggplant, tomatoes, basil, salt and red pepper flakes.
- Following manufacturer's directions bring to high pressure.
- Cook 4 minutes, then allow pressure to come down.
- Remove lid and cook, stirring, until sauce is thick.
- Serve hot over pasta and sprinkle with parmesan cheese, if desired.

- Heat the oil in a pot and fry the onion till light golden colour.
- Add the spices, cook for 2 minutes.
- Add the tomato paste, stir in the coconut milk. Cook to form a gravy.
- Add the aubergine, and tomato, stir into the gravy, reduce heat to medium and cook till aubergine is tender. About 30 minutes.

- Cut aubergine into cubes and sprinkle with salt.
- Drain and pat dry after 15-20 mins Heat oil for frying aubergine in a frying pan and shallow fry till golden brown Drain and set aside Heat virgin olive oil in a pan, add garlic, chilli flakes or chillies and cook for a minute or till garlic just begins to turn colour.
- Mix in olives, capers, tomatoes, puree and dried seasoning or fresh herbs Season with salt and pepper to taste Cover pan and cook sauce on low heat for 30-35 minutes.

- Cook spaghetti according to packet instructions.

AUBERGINE (EGGPLANT) IN TOMATO SAUCE
This dish comes from North India and makes a delicious first course or side dish. Serve it hot or cold, with naan, chapattis or pitta bread. If you serve this cold, make it a day in advance. The recipe calls for 300ml of sunflower oil, which sounds a lot, but some of this is drained off and you may find you can get away with using less when frying the aubergines, especially if you salt and rinse them first (not specified in the instructions). Draining time for the oil is included in the preparation time. This recipe comes from "The World of Spice" and is posted for Zaar World Tour 2005.

- In a blender, whizz the garlic, ginger and chillies with just enough water to form a thin paste.
- Cut the aubergines lengthwise into four thick slices, then cut across into 1 ½ inch thick chunks; heat the sunflower oil in a wide lidded pan and fry the aubergines in batches until completely tender and reddish-brown on both sides; when each batch is finished, lift from the pan using a slotted spoon and place in a sieve over a bowl; leave for 30 minutes to drain off the surplus oil.
- In the same pan, use 2 tablespoons of the drained oil and heat through; add the cumin, fennel and coriander seeds and fry for a few seconds; add the tomato, tomato puree, garlic/ginger/chilli paste, turmeric and salt; cook gently, stirring well, for about 10 minutes until the mixture thickens.
- Add the drained aubergines to the tomato sauce, cover the pan and cook gently for about 15 minutes.
- Serve at once, or leave overnight in the fridge for the flavours to develop; sprinkle with cilantro leaves before serving.
