4 orange roughy fillets (6 ounces each)
20 fresh asparagus spears, trimmed
1/2 teaspoon salt
1/4 teaspoon pepper
2 green onions, chopped
SAUCE:
2/3 cup white wine or reduced-sodium chicken broth
2 tablespoons lemon juice
2 teaspoons cornstarch
1 teaspoon minced fresh basil or 1/4 teaspoon dried basil
1 teaspoon minced fresh thyme or 1/4 teaspoon dried thyme
1/8 teaspoon pepper

Steps:

  • Wrap each fillet around five asparagus spears; secure with toothpicks. Place in a 13-in. x 9-in. baking dish coated with cooking spray. Sprinkle with salt and pepper. , Cover and bake at 350° for 15 minutes. Uncover; sprinkle with onions. Bake, uncovered, 12-15 minutes longer or until fish flakes easily with a fork and asparagus is crisp-tender., Meanwhile, in a small saucepan, combine the sauce ingredients until blended. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Discard toothpicks from bundles; serve with sauce.

800 g/1,7lbs White fish, boned ((Approximately 200g/7oz per person))
3 tbsp butter
4 garlic cloves (crushed)
3 tbsp fresh lemon juice
2 tsp dried oregano/thyme
salt and pepper (to taste)
asparagus (washed and trimmed)

Steps:

  • Pre-heat the oven to 200ºC/400ºF and line a sheet pan with parchment/baking paper.
  • Combine the butter, lemon, garlic and herbs in a saucepan and bring to a simmer. Cook for 2-3 minutes until fragrant then remove from the heat and set aside to cool slightly.
  • Place the fish and asparagus onto the lined sheet pan then season with salt and pepper.
  • Pour the lemon butter sauce over the fish and asparagus and top the fish with lemon slices (optional).
  • Place in the oven and bake for 10-12 minutes or until the fish and asparagus are cooked. Fish is cooked when it flakes easily and the flesh is opaque, white throughout.
  • Remove from the oven and serve.

PAN-COOKED ASPARAGUS AND MIXED FISH

No matter what your budget, you can make this dish with all different types of fish. It's nice to try to get a mixture of oily and white fish fillets, alongside things like shellfish, shrimp and squid. You want everything to cook at the same time, so just make sure that whatever you use is all sliced up into pieces roughly the same size. You can cook it all together in a pan like I'm doing here or on the barbecue or, for a healthier way, you can steam it all - whichever, finish the dish off with extra-virgin olive oil, lemon juice and chile as these flavors all work so well with asparagus and fish.

Olive oil
2 small red mullet or snapper fillets, scaled and pin-boned
1 royal porgy fillet or sea bass fillet, scaled, pin-boned and cut in 1/2
Sea salt and freshly ground black pepper
2 small squid, gutted and cleaned, tentacles trimmed and reserved
2 to 4 freshly shelled scallops, cleaned and scored in a crisscross fashion
10 medium asparagus spears, woody ends removed
1 small handful thyme tips
1 fresh red chile, deseeded and chopped
Extra-virgin olive oil
1 lemon, juiced
1 small handful fennel tops

Steps:

  • Get a really large frying pan, or 2 smaller ones, on the heat and add a glug of olive oil. Score the skin of your fish fillets all over, about 1/2-inch deep, and season. Put the fish fillets into the pan, skin side down, with the squid tentacles. Add the scallops. Run your knife down 1 side of each squid to open them out, then quickly and lightly score the inside in a crisscross fashion. Lay them in the pan, scored side down. Add the asparagus and gently shake the pan. Cook for a few minutes, then turn everything over and cook on the other side. Sprinkle over the thyme tips.
  • You're the one in control of the pan, so if something looks cooked, take it out and keep it warm. Don't watch things burn! When the fish has crispy skin, the scallops are golden brown with caramelized edges and the squid has curled up and is nicely charred, remove the pan from the heat. Put the squid on a chopping board and roughly slice it into pieces at an angle, then return to the pan. Lay the fish fillets on each plate. Toss the asparagus, scallops and squid with half the chile, a good drizzle of good quality extra-virgin olive oil and the lemon juice. Lightly season and mix together. Divide on top of the plated fish. Sprinkle with the rest of the chopped chile and the fennel tops, and drizzle with extra-virgin olive oil.

FABULOUS BAKED FISH AND ASPARAGUS SPEARS

This is one of my mom's recipes so it's better than good . . . it's the best.

Number Of Ingredients 14

2 tablespoons EVOO (extra-virgin olive oil)
1 teaspoon fennel seeds, 1/3 palmful
4 garlic cloves, chopped
1 shallot, sliced
2 pounds haddock fillets
Salt and black pepper
2 tablespoons capers, drained
1 14-ounce can diced tomatoes
2 tablespoons balsamic vinegar (eyeball it)
1/2 cup fresh basil, 10 leaves, torn or shredded
1/2 cup clam juice
Crusty bread, for mopping
1 pound thin asparagus, tough ends trimmed
Juice of 1/2 lemon

Steps:

  • Preheat the oven to 400°F.
  • Heat a large ovenproof nonstick skillet on the stovetop over medium heat. Add 1 tablespoon of the EVOO to the pan, once around the pan. Add the fennel seeds, garlic, and shallots to the pan and cook for 2 minutes.
  • Rinse the fish fillets and pat them dry. Season the fish with salt and pepper, and set aside.
  • In a small bowl, combine the capers, tomatoes, the remaining tablespoon of EVOO, the balsamic vinegar, basil, and clam juice. Add the mixture to the skillet and cook for 2 to 3 minutes. Slide the fish fillets into the pan. Spoon the sauce over the fish and transfer the skillet to the oven. Bake the fish for 15 minutes, or until cooked through, adding the bread to the oven to warm through for the last minute or two.
  • While the fish cooks, boil the asparagus in an inch of water for 3 minutes, then drain and dress it with a little lemon juice and a pinch of salt.
  • Serve the fish with lots of juice for mopping up with crusty bread and the asparagus spears alongside.

4 teaspoons lemon juice
16 medium asparagus spears, trimmed to 6 inches
1 medium tomatoes, seeded and chopped
2 green onions
2 tablespoons chopped fresh dill or 2 tablespoons tarragon (or 2 tsp. dried dill weed or tarragon)
salt and pepper

Steps:

  • Preheat oven to 400F (200C).
  • Cut four 12 x 13 inch rectangles of parchment.
  • paper (foil may be substituted if cooking in a conventional oven).
  • Fold in half lengthwise and crease.
  • Open each one.
  • Arrange fish fillets on one side of each rectangle.
  • Drizzle evenly with lemon juice.
  • Place four asparagus spears on top of each fillet.
  • Sprinkle tomato, onion and herbs evenly over asparagus.
  • Season with salt and pepper.
  • Fold other half of paper over.
  • Seal completely by making a double 1/2 inch fold on all cut edges.
  • Place parcels on a baking sheet.
  • Bake in preheated oven about 10 minutes or until fish flakes and asparagus is crisp-tender.
  • (If using parchment paper you can microwave on full power 9 to 10 minutes. Allow to stand 5 minutes).
  • Serve on individual plates.

1 1/2 pounds slender asparagus spears, trimmed to 7-inch lengths
2 garlic cloves, minced
1 teaspoon salt
2 tablespoons (1/4 stick) butter
1 tablespoon plus 6 teaspoons olive oil
1/3 cup fresh lemon juice
1 1/2 teaspoons grated lemon peel
1/2 teaspoon ground black pepper
6 6-ounce cod fillets, pinbones removed
6 ounces paper-thin prosciutto slices, halved lengthwise

Steps:

  • Cook asparagus in large pot of boiling salted water until crisp-tender, about 3 minutes. Drain. Transfer to bowl of ice water to cool. Drain well.
  • Mash garlic and 1 teaspoon salt to paste in small bowl. Melt butter with 1 tablespoon oil in small nonstick skillet over medium heat. Add garlic paste; stir until pale golden, about 1 minute. Stir in lemon juice, peel, and 1/2 teaspoon black pepper. Remove from heat.
  • Preheat oven to 500°F. Cut out six 12-inch squares of parchment paper. Place 1 parchment square on work surface. Drizzle 1 teaspoon oil over parchment. Place 1 cod fillet in center of parchment. Spoon 1/6 of garlic-lemon mixture over fish. Cover with 1/6 of asparagus spears. Arrange 1/6 of prosciutto slices over. Fold 2 opposite sides of parchment in over fish and vegetables, then fold in remaining 2 sides, enclosing completely. Fasten parchment edges together with paper clips to seal packet. Place on large rimmed baking sheet. Repeat procedure with remaining parchment, oil, fish, garlic-lemon mixture, asparagus, and prosciutto. (Can be prepared 6 hours ahead. Refrigerate.)
  • Bake fish until just opaque in center (parchment will turn golden brown), about 12 minutes. Transfer 1 parchment packet to each of 6 plates. Open parchment packets and serve.

36 asparagus spears
30 g butter
1 cup spring onion (scallions chopped)
1 tablespoon Dijon mustard
1/2 cup cream
1 tablespoon lemon juice (fresh)
1 cup parmesan cheese (grated or shredded)
salt & freshly ground black pepper
12 slices ham (leg cut thin)

Steps:

  • Preheat oven to 200°C.
  • Snap one of the asparagus spears to find the tender point and then cut them all so they are the same length.
  • Boil in salted water for 3 minutes and then drain.
  • Melt the butter in a small frypan and add the spring onions and cook over a gentle heat until slightly softened - about 3 minutes.
  • Add to the frypan the mustard, half the cream, half the cheese and the lemon juice, mix well together and check the seasoning and adjust as necessary.
  • Lay out the slices of ham and divide the mixture evenly between the 12 slices.
  • Put three spears on each slice and roll up neatly.
  • Place in a baking dish in a single layer and pour over the rest of the cream and scatter the remaining cheese.
  • Bake in the oven for 10 minutes or until all is hot.

250g baby new potato , scrubbed
1 tsp olive oil
2 x 175g/6oz firm white fish fillets, such as haddock or whiting
2 tsp sun-dried tomato paste or tomato purée
finely grated zest of 1 small lemon plus 2 tsp lemon juice
about 10 black or green olives
1 tbsp capers , rinsed
2 sprigs of fresh rosemary or thyme

Steps:

  • Preheat the oven to fan 170C/conventional 190C/gas 5. Boil potatoes in lightly salted water for about 12 minutes or until tender, then drain well.
  • Take 2 large sheets of foil, about 30cm square, and brush the middle area of each sheet with the olive oil. Put a fish fillet on top and spread with the tomato paste. Sprinkle with the lemon zest and juice, add the cooked potatoes, olives and capers and season with ground pepper.
  • Lay a sprig of rosemary or thyme on top then loosely wrap and secure each parcel tightly to completely enclose the ingredients. You can prepare these up to half a day in advance and keep them in the fridge.
  • Put the fish parcels on a baking sheet and bake for 20-25 minutes, or until the fish flakes when tested with a fork. Serve at once, with steamed green beans.

8 sheets phyllo pastry
1 can asparagus spear
125 g brie cheese, sliced

Steps:

  • Fry chicken in a pan until browned on both sides.
  • Drain on paper towel.
  • Take two sheets of filo for each piece of chicken, fold the two pieces which are together, in half& spray with oil.
  • Place a chicken fillet on each pastry sheet& top with even amounts of asparagus then brie.
  • Fold pastry into a parcel, brush edges with water to seal.

1 tablespoon soy sauce, light
1 tablespoon lemon juice
1 teaspoon cornflour
1/4 cup sweet chili sauce
1 garlic clove, large, peeled and chopped
1 tablespoon coriander, chopped (optional)
1 carrot, medium
150 g green beans or 150 g asparagus, approximately
300 g fish fillets (cod, tarakihi, gurnard, snapper or salmon)

Steps:

  • Preheat the oven to 200° C with a baking tray in the centre of the oven.
  • Measure the soy sauce and lemon juice into a small bowl. Add the cornflour and mix until the are no lumps, then stir in the sweet chilli sauce, garlic and chopped coriander (if using).
  • Cut the carrot into thin julienne's and top and tail the beans or trim the asparagus spears and cut them diagonally into 5cm pieces. Place a 30x40 cm piece of baking paper (or foil) on a dinner plate (this stops the sauce running off) and place half the vegetables in the middle. Place one serving of the fish on top of the vegetables, then drizzle the stack with half the sauce. Fold up the edges of the baking paper (or foil) sheets and seal loosely with paperclips. Repeat the process on another sheet of paper or foil.
  • Carefully lift the parcels onto the hot baking tray in the oven, then bake at 200° C for 12 minutes. Remove the tray from the oven and allow the parcels to cool for a few minutes before serving with rice or noodles.

CRISP-SKIN FISH WITH ASPARAGUS

24 thin asparagus spears
2 ripe tomatoes
1 tbsp extra-virgin olive oil
4 salmon fillets , each about 140g/5oz
3 tbsp extra-virgin olive oil
1 tbsp small black olives
1 tbsp capers , rinsed
2 tbsp parsley leaves

Steps:

  • Snap the woody ends off the asparagus, and discard. Cut the tomatoes in half, spoon out and discard the seeds. Finely slice the tomato flesh, then cut into small dice. Set both asparagus and tomatoes aside.
  • Heat the 1 tbsp olive oil in a large frying pan. Season the fish with salt and pepper, and cook skin-side down over medium heat for about 3-4 minutes, gently pressing, until skin is crisped and golden. Turn and cook the other side for 3-4 minutes, depending on the thickness, until cooked.
  • Meanwhile, cook the asparagus in simmering salted water for 3-4 minutes. Drain well. For the dressing, gently warm the 3 tbsp olive oil in a small saucepan with the tomatoes, olives, capers and parsley leaves. Toss the asparagus in a little of the dressing. Arrange the asparagus on each of four warmed dinner plates, top with the fish, and spoon the warm tomato dressing around the fish.
