These roll-ups are simply divine. A friend shared the recipe after serving them at a church brunch, where they disappeared fast. They make a unique finger food, a side dish at supper or a lovely lunch served with soup.

- In a large saucepan, bring 1/2 in. of water to a boil. Add asparagus; cover and boil for 3 minutes. Drain and immediately place asparagus in ice water. Drain and pat dry. Set aside., Flatten bread with a rolling pin. Combine the cream cheese, bacon and chives; spread 1 tablespoonful on each slice of bread. Top with an asparagus spear. Roll up tightly; place seam side down on a greased baking sheet. Brush with butter and sprinkle with Parmesan cheese. , Cut roll-ups in half. Bake at 400° for 10-12 minutes or until lightly browned.

- In a small bowl, combine the cream cheese, bacon and green onion. Flatten bread slices with a rolling pin; spread tops with cream cheese mixture. Trim asparagus 2 in. longer than bread. Place two spears on each slice; roll up bread and place seam side down on a greased baking sheet. Brush with butter; sprinkle with Parmesan cheese. , Bake at 400° for 10-12 minutes or until lightly browned. Serve immediately.

CHEESE, PROSCIUTTO AND ASPARAGUS CRUSTED BUNDLES
Want something that is great for every night but is amazing for dinner parties, holidays or a special event but very very easy. A few slices of prosciutto from your grocer's deli, some store bought crescent rolls and asparagus. Now if you want to get really special, buy a mix of white, green and sometimes you can find the red asparagus. I did this for a Christmas party and it was a hit. But if you can't get other colors, get green, that is just fine.

- Asparagus -- Pre cook the asparagus just 1 1/2 minutes in the microwave just lay flat on a paper towel and cover with a damp paper towel. Just to get a head start.
- Rolls -- Spread out the crescent rolls and press the pre cut seems together to form one large sheet. Cut in half top to bottom and then cup each half in 3 strips. Spread with some of the boursin or herb cheese. (Thin layer, not heavy).
- Wrap -- 4-5 asparagus spears with prosciutto. I like to alternate the spears going in different directions to make sure they cook evenly. Then wrap in the strips of crescent rolls a spiral pattern around the asparagus and prosciutto. Make sure you leave the tips and the very ends open (a inch or more) but the rest should be wrapped with the crescent roll.
- Bake -- Place the wrapped asparagus bundles on a cookie sheet lined with foil or parchment paper. Melt the butter in the microwave and brush with butter. Sprinkle with parmesan and bake in a 400 degree oven for 14-16 minutes until golden brown.

- Preheat oven to 400 degrees F (200 degrees C).
- Grease a baking sheet.
- Place bacon in a large, deep skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate.
- When bacon is cool, crumble and set aside in a bowl.
- Place asparagus spears into a large skillet and pour in about 1 inch of water. Place over medium heat, cover the skillet, and simmer asparagus until bright green and slightly tender, about 5 minutes. Remove asparagus and set aside.
- Place cream cheese and chives into the bowl with bacon and stir to evenly combine.
- Roll each bread slice with a rolling pin on a work surface until the slices are thin and flat.
- Spread cream cheese mixture evenly over each slice of bread.
- Center 2 asparagus spears on a bread slice, and roll the slice around the asparagus into a tidy and compact cylinder. Place seam side down onto the prepared baking sheet. Repeat with remaining ingredients.
- Brush each roll with melted butter and sprinkle each with about 1 1/2 teaspoon Parmesan cheese.
- Bake in the preheated oven until lightly golden brown and hot, 10 to 12 minutes.

- Preheat oven to 400*.
- Break off tough ends of the asparagus leaving just the tender tips. Steam for several minutes until cooked crisp tender.
- Open crescent roll dough and separate at the seams. Sprinkle some cheese, bacon bits and green onion on each roll followed by an asparagus spear.
- Roll up and bake in the oven for 10 - 12 minutes or until rolls are browned.

- Set oven to 375°F (oven rack set to the lowest bottom position).
- Prepare an ungreased a 15 x 10-inch jelly-roll pan.
- Unroll the crescent rolls and press into the pan, pressing edges to seal the perforations.
- Brush the crescent crust with melted butter and then sprinkle with garlic powder (if using) and a small amount of salt.
- Bake for about 6-8 minutes (bottom oven rack) or until lightly browned.
- In a large skillet melt butter over medium-high heat; add in the onion and saute for 6-7 minutes adding in the garlic the last 2 minutes.
- Snap off the tough ends of the asparagus, then cut into 1-inch pieces.
- Add in the asparagus pieces to the skillet with onion; saute for for about 6-7 minutes or until crisp-tender.
- Season with a small amount of salt and pepper to taste.
- Spoon the asparagus/onion mixture over the partially-baked crescent crust.
- Sprinkle with grated Parmesan cheese and then top with Swiss or mozzarella cheese (any amount desired).
- Return to oven and bake for about 8 minutes in a 375°F oven, or until the cheese is well melted.

This is a recipe from a cooking class taught by Doris Simms over 20 years ago, and it is still a favourite of ours. Doris shared many wonderful recipes. This is untested with low fat ingredients, but I expect that by using them the bread would become too moist and not brown and crisp when baked, and thus would not be as delicious, or beautiful to behold.

- Trim crusts from the bread.
- Sprinkle one side of bread with poppy seeds.
- Flatten with a rolling pin.
- Turn over bread slice and roll lightly again.
- Beat cream cheese together with mayonnaise and egg yolk.
- Beat until smooth then blend in grated cheese and lemon rind.
- Spread cheese mixture over plain sides of bread slices.
- Place 1 or 2 asparagus spears on each slice.
- Roll up, jelly roll fashion, and cut rolls in half. For a coctail party cut into thirds.
- Brush with melted butter.
- Place rolls, seam side down on baking sheet and bake in 400 degree oven for 10 minutes.
- If making ahead of time, cover the rolls with plastic wrap touching the surface, then cover the container.

- Preheat oven to 350 degrees F. Line a baking sheet with foil or parchment paper. Open the crescent roll tube and cut each crescent triangle in half lengthwise.
- Mix the Parmesan and seasoning salt in a small bowl. Generously coat both sides of each triangle of dough with the mixture.
- If you wish to add prosciutto, lay a slice of the meat on the coated crescent roll. Top with one asparagus spear. Wrap the asparagus with the crescent roll by placing the crescent roll tip on the top of the asparagus stalk. Twist around the asparagus (and optional prosciutto), making a spiral.
- Place the asparagus/crescent bundles on the baking sheet. Sprinkle with the leftover Parmesan cheese mixture and shredded mozzarella cheese. Bake for 13-15 minutes at 350 degrees F (following the baking instructions on the crescent roll package).
