BROWN GARLIC YAM SOUP

1 cooked turkey carcass, divided into parts
2 tablespoons rendered turkey fat, plus 1 tablespoon
20 cloves garlic
2 large yellow onions, rough cut
2 large carrots, peeled and rough cut
2 ribs celery, rough cut
4 thyme sprigs
1 teaspoon whole black peppercorns
1 quart turkey stock
2 cups cooked and cold (leftover) yams
1/2 cup cleaned, stemmed and quartered shiitakes
1/2 cup leeks
1/2 cup sour cream
1 lime, juiced
1 tablespoon chives, chopped

Steps:

  • Place carcass, wings, and bones in a small stockpot and cover with cold water. Bring to a simmer.
  • Place unwashed roasting pan back on a hot burner and add 2 tablespoons rendered turkey fat. Brown the garlic, onions, carrots, and celery. Add vegetables to the stockpot with the carcass with the thyme and peppercorns. Bring to a simmer and let cook for 2 to 3 hours.
  • Strain and remove all the bones. Save the vegetables and place back in the stockpot with the 1 quart of turkey stock. Add the leftover yams and puree with butter. Check for seasoning.
  • In a separate small saute pan, heat up the remaining rendered turkey fat. Saute the shiitakes and leeks together until mixture is dry and very fragrant. Chop up the shiitake-leek mixture and fold in with the sour cream, juice, and chives.
  • Plating: Serve in warm soup plates and place a small dollop of sour cream on top.
  • Beverage: Leftover buttery California Chardonnay

  • The idea of building a pit to cook is as old as time. What you cook can be as complicated or as easy as you want, and its size can be whatever the labor force allows--a much better usage for bob a job week than ruining the paintwork on your car. Suggestions for food to cook are ears of corn, potatoes, fish fillets wrapped in foil with butter and seasoning, chops or sausages wrapped in foil, clams, mussels, or lobsters. Use your imagination and experiment.
  • 1. Drive 4 posts into the ground to delineate a rectangular area about 5 by 8 feet. Dig out to a depth of 18 inches, banking the sand around the edges.
  • 2. Line the pit with smooth, dry pebbles or bricks.
  • 3. Start a small fire on top of the stones in the middle and gradually add logs until you fill the whole pit.
  • 4. Keep the fire stoked for at least an hour, then allow to burn down for another hour to ensure the stones are properly heated.
  • 5. Carefully rake the embers from the pit without disturbing the stones.
  • 6. As quickly as possible, spread well-rinsed seaweed or non-poisonous green leaves over the stones in a layer about 6 inches deep.
  • 7. Lay the prepared food in a single layer on top of the seaweed.
  • 8. Spread a 6 inch layer of seaweed over the food. Make sure the food is completely covered.
  • 9. Cover with a tarp that extends at least 12 inches beyond the sides of the pit. Weigh down the edges with stones. Let the food cook for at least 3 hours.

BLACK GARLIC RICE PILAF

The first time I ate black garlic, I thought of the marriage between fermented black beans and garlic. It is an umami bomb. I immediately wanted to put it into a rice pilaf dish because it can be cooked indoors or outside. This is truly the reason cast-iron pans were invented-you can put them on top of coals or on a grill with foil, and you have a perfect side dish that just may be even better than the meat course.

2 tablespoons extra-virgin olive oil
1 red onion, small dice
1 red bell pepper, small dice
1 head fermented black garlic, minced
3 cups long-grain rice, washed and drained dry
4 1/2 cups vegetable stock
Kosher salt and freshly ground black pepper

Steps:

  • Preheat a grill for cooking over indirect medium-high heat.
  • Heat a 12-inch cast-iron pan over medium-high heat on the stovetop and add the oil. Once heated, add the onion, bell pepper and black garlic, stirring to combine. Cook until the onions have sweated and are starting to caramelize, about 3 minutes. Add the rice and stir to combine, coating the rice with the oil. Stir in the stock, then sprinkle with salt and pepper and bring to a simmer. Cover with the lid or foil. Cook over indirect heat for 40 minutes. Remove from the heat, then rest for 10 minutes before serving.

5 tablespoons olive oil
2 cups trimmed sourdough bread cubes
4 large garlic cloves, quartered
1/3 cup dry white wine
4 cups canned low-salt chicken broth
2 generous pinches saffron threads
Salt
8 1/2-inch-thick French bread baguette slices
1/2 cup grated Manchego or Monterey Jack Cheese
Minced fresh chives or green onion tops
Saffron threads

Steps:

  • Heat 4 tablespoons oil in heavy large skillet over medium-high heat. add bread cubes and garlic and sauté until bread is light golden, about 4 minutes. Add wine, then broth and saffron; bring to boil. Reduce heat, cover and simmer 25 minutes. Puree soup in blender. Return soup to saucepan. Season with salt.
  • Preheat oven to 350°F. Arrange French bread slices on cookie sheet. Brush with remaining 1 tablespoon oil. Bake until lightly toasted, about 8 minutes. Sprinkle cheese over croutons. Transfer cookie sheet to broiler; broil croutons until cheese melts. Place 2 croutons in each bowl. Bring soup to simmer. Ladle over croutons. Sprinkle with chives and a few saffron threads and serve.
