This one comes from Kraft Food & Family magazine Winter 2008. Try it with boneless skinless chicken breast or pork tenderloin, or a combination of all three.

8 ounces linguine, uncooked
3 cups broccoli florets
3 carrots, peeled and sliced (about 2 cups)
2 teaspoons oil
1 lb beef sirloin, cut into strips
1/4 cup asian toasted sesame dressing (Kraft)
1 tablespoon teriyaki sauce

Steps:

  • Cook pasta as directed, adding vegetables to the boiling water for the last 2 minutes of the pasta cooking time.
  • Meanwhile, Heat oil in a large nonstick skillet. Add meat; cook 4 minutes or until browned on all sides, stirring occasionally.
  • Stir in dressing and teriyaki sauce; cook 2 minutes or until sauce is thickened, stirring occasionally.
  • Drain pasta mixture; Place in a large serving bowl. Add meat mixture; toss to coat.

8 ounces uncooked udon noodles or 8 ounces spaghetti
1 1/2 teaspoons minced garlic
1/2 teaspoon crushed red pepper flakes
2 (14 1/2 ounce) cans low sodium beef broth
3 tablespoons low sodium soy sauce
3 tablespoons sake or 3 tablespoons dry sherry
1 tablespoon honey
3 cups sliced shiitake mushroom caps
1/2 cup thinly sliced carrot
8 ounces top round beef, thinly sliced
3/4 cup diagonally cur green onion
1 (6 ounce) bag prewashed Baby Spinach

Steps:

  • Cook noodles per package directions; drain.
  • Add garlic, pepper, and broth to a large saucepan; bring to a boil.
  • Lower heat, and simmer 10 minutes.
  • Combine soy sauce, sake, and honey in a small bowl; stir with a whisk.
  • Heat a large nonstick skillet coated with cooking spray over med-high heat.
  • Add in mushrooms and carrots, stir/saute 2 minutes.
  • Stir in soy sauce mixture; cook 2 minutes stirring constantly.
  • Add vegetable mixture to broth mixture; stir in beef.
  • Cook 2 minutes or until beef loses its pink color.
  • Stir in noodles, green onions, and spinach.
  • Serve immediately.

1/3 cup KRAFT Asian Toasted Sesame Dressing, divided
1 lb. beef sirloin steak, thinly sliced
3 carrots, peeled, cut diagonally into thin slices
2 cups sliced fresh mushrooms
3 cloves garlic, minced
1 can (14.5 oz.) fat-free reduced-sodium beef broth
6 oz. capellini, broken in half
2 cups shredded cabbage
2 green onions, diagonally sliced
1/3 cup PLANTERS Lightly Salted Dry Roasted Peanuts, chopped

Steps:

  • Heat 2 Tbsp. dressing in large skillet on medium-high heat. Add meat, carrots and mushrooms; cook and stir 4 min., adding garlic for the last minute.
  • Add broth; bring to boil. Move meat and vegetables to edge of skillet. Add pasta to center of skillet; cover. Simmer on medium heat 8 min. or until pasta and vegetables are tender and liquid is absorbed, adding cabbage and stirring to combine all ingredients after 4 min.
  • Stir in remaining dressing. Top with onions and nuts.

This recipe is from the January '08 BHG magazine. A friend of mine made it first and let me know about it. Tasty and light, but still filling. The peanut sauce adds a bit of spice.

1 lb boneless beef top sirloin steak, cut into thin strips
1 tablespoon cooking oil
2 (14 ounce) cans reduced-sodium beef broth
1/3 cup bottled peanut sauce
1 1/2 cups medium egg noodles
2 cups broccoli florets
1/4 cup bias-sliced green onion (optional)

Steps:

  • In dutch oven brown beef strips in hot oil over medium-high heat. Add beef broth and peanut sauce; bring to boiling.
  • Stir in noodles; reduce heat. Simmer uncovered, 4 minutes, stirring occasionally to separate noodles.
  • Add broccoli; return to boiling. Reduce heat. Simmer uncovered for 3 to 4 minutes more or just until noodles are tender, stirring occasionally.
  • Divide beef and noodle mixture among four bowls. If desired, sprinkle servings with green onions.

8 oz fresh sugar snap peas
5 teaspoons vegetable oil
1 lb boneless beef sirloin steak, cut into 1/4-inch strips
1 medium carrot, thinly sliced (1/2 cup)
1/2 cup teriyaki baste and glaze (from 12-oz bottle)
4 medium green onions with tops, sliced (1/4 cup)
1/2 cup honey-roasted peanuts, chopped

Steps:

  • Cook pasta as directed on package. Meanwhile, snip off stem ends of sugar snap peas and remove strings if desired. Drain pasta; cover to keep warm.
  • In 12-inch nonstick skillet, heat 3 teaspoons of the oil over medium-high heat. Stir-fry beef in oil about 2 to 3 minutes, until no longer pink. Remove from skillet; keep warm.
  • In same skillet, heat remaining 2 teaspoons oil over medium-high heat. Stir-fry peas and carrot in oil about 3 to 4 minutes, until crisp-tender. Stir in pasta, beef and teriyaki baste and glaze; toss until well blended.
  • Serve in bowls; sprinkle with onions and peanuts.

2 packages (3 ounces each) Oriental ramen noodles, crumbled
2-1/2 cups water
2 cups frozen broccoli stir-fry vegetable blend
1/4 teaspoon ground ginger
2 tablespoons thinly sliced green onion

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink, breaking it into crumbles; drain. Add the contents of 1 ramen noodle flavoring packet; stir until dissolved. Remove beef and set aside. , In the same skillet, combine the water, vegetables, ginger, noodles and contents of remaining flavoring packet. Bring to a boil. Reduce heat; cover and simmer for 3-4 minutes or until noodles are tender, stirring occasionally. Return beef to the pan and heat through. Stir in onion.
