BRUSCHETTA WITH PROSCIUTTO, RICOTTA AND ARUGULA



Bruschetta with Prosciutto, Ricotta and Arugula image

15 or so 1/2-inch slices from a baguette, cut on the diagonal
Extra-virgin olive oil, for brushing
1 whole clove garlic, peeled, halved
1 cup fresh ricotta cheese
15 arugula leaves
4 ounces prosciutto or other salty, cured pork such as coppa, lomo or speck
Best quality extra-virgin olive oil, for drizzling

Steps:

  • Heat a grill or grill pan to medium-high heat. Place the bread on a baking sheet and brush both sides with olive oil. Grill the bread until golden all over, 2 to 3 minutes per side. Rub one side of each with the garlic clove.
  • Spread a tablespoon or two of the ricotta on each bread slice, then press an arugula leaf into the cheese. Place a slice of the prosciutto on top, drizzle with the best quality olive oil, and serve.

Cornmeal, for dusting
1/2 cup ricotta cheese
2 cloves garlic, crushed
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 cups (8 ounces) shredded smoked mozzarella cheese
1 packed cup (1-ounce) arugula
Flour, for dusting
1 (13 to 16-ounce) ball pizza dough
Extra-virgin olive oil, for drizzling
2 Roma tomatoes, sliced into 1/4-inch thick slices

Steps:

  • Put an oven rack in the center of the oven. Preheat the oven to 475 degrees F. Sprinkle a heavy baking sheet (without sides) with cornmeal. Set aside.
  • In a food processor, blend the ricotta, garlic, salt, and pepper until smooth. Add the smoked mozzarella and arugula. Pulse until just combined but still chunky. On a lightly floured work surface, roll out the dough into a 14-inch diameter circle, about 1/4 to 1/16-inch thick. Transfer the dough to the prepared baking sheet and drizzle with olive oil. Spread the ricotta mixture on top leaving a 1-inch border. Arrange the tomato slices on top. Drizzle with olive oil and bake until the crust is golden, about 15 to 16 minutes. Remove from the oven, cut into wedges and serve.

For the smoked marzipan:
1 cup (about 4 ounces) smoked Marcona or smoked regular almonds
3 tablespoons grapeseed oil
2 tablespoons confectioners' sugar
1 teaspoon kosher salt
For the crispy prosciutto:
1/2 cup canola oil
6 ounces thinly sliced prosciutto, trimmed of excess fat
For the ricotta cream:
3/4 cup heavy cream, well chilled
1 cup (about 9 ounces) fresh ricotta*
1/4 teaspoon kosher salt
For the brûléed figs:
16 fresh figs
1/2 cup turbinado sugar**
1 tablespoon fleur de sel
To serve:
1/2 cup extra-virgin olive oil
Juice of 1 lemon
10 cups baby arugula
*If your fresh ricotta is very wet, you'll need to drain it before using. Line a colander with a double layer of cheesecloth and set it over a small bowl. Place the ricotta inside, cover with plastic wrap, and refrigerate overnight. Discard the drained liquid.
**Turbinado sugar is raw sugar that has been steam-cleaned. The coarse crystals are blond in color with a delicate molasses flavor. Demerara sugar, light brown sugar, or raw sugar can be substituted.

2 large baking sheets; parchment paper; aluminum foil

Steps:

  • Make the smoked marzipan:
  • Arrange a rack in the center of the oven and preheat to 350°F. Line a baking sheet with parchment paper.
  • In a medium bowl, combine the almonds, grapeseed oil, confectioners' sugar, and salt and stir to combine. Spread the mixture on the prepared baking sheet and bake until golden brown and aromatic, 12 to 15 minutes. Transfer to a cutting board to cool then coarsely chop. DO AHEAD: The smoked marzipan can be made in advance and stored, in an airtight container at room temperature, up to 5 days.
  • Fry the prosciutto:
  • Line a large plate with paper towels.
  • In a large heavy skillet over moderately high heat, heat the oil until shimmering. Working in batches, fry the prosciutto, flipping occasionally, until golden brown and crispy, about 30 seconds per side. Transfer as done to the paper-towel-lined plate. DO AHEAD: The prosciutto can be made in advance and stored, in an airtight container at room temperature, up to 4 hours.
  • Make the ricotta cream:
  • In a medium bowl, beat the heavy cream until soft peaks form.
  • In a second medium bowl, combine the ricotta and salt. Whisk about 1/3 of the whipped cream into the ricotta to lighten it. Gently fold the remaining 2/3 of the whipped cream into the mixture until fully incorporated but still light. DO AHEAD: The ricotta cream can be made in advance and refrigerated, covered, up to 1 hour.
  • Make the brûléed figs:
  • Preheat the broiler and line a baking sheet or broiler pan with aluminum foil.
  • Trim the tops off each fig then cut them in half lengthwise. Gently open each fig half to expose its flesh and place, skin-side-down, on the prepared baking sheet or broiler pan. Sprinkle with sugar and broil, about 6 inches from the flame, until the sugar bubbles, about 90 seconds. Just before serving, sprinkle with fleur de sel.
  • To serve:
  • In a small bowl, whisk together the olive oil and lemon juice. Place the arugula in a large serving bowl or platter, drizzle with vinaigrette, and toss to coat. Season with salt and pepper then top with the smoked marzipan, crispy prosciutto, dollops of ricotta cream, and brûléed figs. Serve immediately.

GRILLED PIZZA WITH PROSCIUTTO, RICOTTA AND ARUGULA



Grilled Pizza with Prosciutto, Ricotta and Arugula image

Store-bought pizza dough is the basis for this super-fast and pretty pizza. It takes just minutes to grill the dough, and then all you have to do is pile on the no-cook toppings. Serve slices as an appetizer or first course, or add a platter of ripe sliced tomatoes to make a light summer meal.

1 lemon
8 ounces ricotta, at room temperature
Kosher salt and freshly ground black pepper
1 pound frozen pizza dough, thawed
All-purpose flour, for sprinkling
5 tablespoons extra-virgin olive oil, plus more for oiling the grill grates
6 ounces prosciutto
2 cups baby arugula (about 2 ounces)

Steps:

  • Prepare a grill for medium-high heat. Line a baking sheet with parchment paper.
  • Finely grate the zest of the lemon; cut the lemon in half and reserve. Stir together the ricotta, lemon zest, 1/4 teaspoon salt and a few grinds of black pepper. Set aside.
  • Divide the pizza dough into 2 balls. Sprinkle the flour on a clean flat surface and roll each ball into an oval about 14 inches long, 6 or 7 inches across and between 1/8 and 1/4 inch thick. Transfer the crusts to the prepared baking sheet. Brush both sides of each crust with olive oil, about 1 tablespoon per side, and lightly sprinkle with salt.
  • Lightly oil the grill grates. Grill the crusts until they start to puff and distinct grill marks appear, about 1 minute. Flip and cook until just cooked through, an additional 1 to 2 minutes. Discard the used parchment paper and put the finished crusts on the baking sheet.
  • Immediately top each crust evenly with prosciutto. Place small dollops of the ricotta mixture over the prosciutto. Toss the arugula in a bowl with the remaining 1 tablespoon olive oil and the juice of one of the lemon halves (reserve the other half for another use). Season with salt and pepper. Divide the arugula between the pizzas and serve.
